Savory Pumpkin Soufflés

This savory side dish has a bit of protein in the eggs, but not enough to count as your entire protein portion. So be sure to add additional protein to your meal.

Phase 3
Serves 4
Prep time: 20 minutes
Total time: 40 minutes

Raw coconut oil
1/2 cup onion, chopped
1 Tbls. olive oil
1/2 tsp. dried sage
1/2 tsp. sea salt
1/4 tsp. black pepper
1 Tbls. arrowroot powder
1/2 cup almond or coconut milk
1 cup mashed or canned pumpkin
3 eggs, separated

Preheat the oven to 375 degrees F. Coat the inside of four 1-cup ramekins with coconut oil and set aside.

In a medium saucepan, sauté the onion in olive oil over medium heat until it is translucent, about 4 minutes. Remove from the heat, add the sage, salt, pepper, and arrowroot and mix well. Stir in the milk and pumpkin. Return the pan to the heat and cook, stirring constantly, until the mixture thickens, about 5 minutes. Remove the pan from the heat and let the mixture cool for just a few minutes. Add the egg yolks one at a time, stirring well after each addition.

In a separate clean bowl, beat the egg whites until they are stiff. Fold 1/3 of the egg whites into the pumpkin mixture, and then fold in the remaining egg whites. Spoon the mixture into the prepared ramekins. Bake for 20 minutes, or until the soufflés are puffed and their middles are set. Serve immediately.

my bad, looked in the wrong phase...doesn't matter though, since we're not having spaghetti until tonight (phase 1)

Can we have brown rice pasta in Phase 3? I thought only in Phase 1, but then I am probably confused.

I saw a recipe for Shrimp and Asparagus. I am going to try it. Tried it with Langostino lobster instead of shrimp. Added garlic, leek, onion. It was tasty.

we are going to have "Spaghetti" tonight. I have some lean ground beef, fresh tomatoes and zucchini to add in, and a a can of organic crushed tomatoes, along with brown rice spaghetti, and a nice mixed green salad. really looking forward to it.

Last week, I tried the tomato & Olive salad and the white bean hummus. Both were great and I will be making them again tonight.

I think Haylie has grapefruit with caramelized cinnamon. When I am in a hurry (most of the time - especially since I peel & section it) I like to just sprinkle cinnamon on it and eat it.

I use to hate grapefruit. But I was eating too much of the white pith and the inner membranes. I really looked forward to this in Phase 3, so I havent had any in phase 1, instead eating the others that aren't allowed in Phase 3. Saving this for a P3 treat emoticon
