For my phase 2 last week I knew I needed something to get through. I made the Beef, Kale & Leek soup. I'll tell you what it was terrific. I didn't have vegetable stock, so I substituted organic chicken stock instead.
I was so afraid it had so many greens & onions in it, that it was going to taste like grass soup. It didn't. I was everything I love about properly cooked greens. I was so surprised I ate it for 3 meals of P2.
Also, the first week I tried FMD I sauteed a bunch of ground turkey with onions, garlic and a load of spices. Then I just used this on lettuce wraps, salads, whatever. It was super handy to have in the house and it fit for many meals, especially in phase 2. I think I'll do this again, when I start a new month on Sunday.
