I am trying several new recipes lately since I got the Spark Solution book. There are some great recipes in that - filling, tasty and worth doing again and again.
My new favourite snack is one gala apple cored and cut into eight sections. I spread a bit of peanut butter on each section of apple and enjoy every single bite. Yummy.

Another one I've used a few times that I like is

Add 2 cups of baby spinach to a large fry pan, cover with about 3 tablespoons of water and cook spinach just long enough to wilt it a bit. \meanwhile cook 1 slice of bacon until crisp, cool and crumble.
Now to the spinach add one egg and stir it until egg is mostly cooked. Then add the crumbled bacon and 1/3 cup of low fat Kraft Tex Mex shredded cheese. Heat only until cheese is melted then serve. I add fresh red peppers and tomatoes as a side with this. I find this dish so filling and the Tex Mex cheese really adds to the flavor of it.

I'm not sure of the calorie count but the bacon is about 50 cals; the tex mex cheese is 80 cals for 1/3 cup and egg is 70cals. The calorie count would change depending on brands used.

me too! I didn't miss the crust one bit. I was thinking a nice brown sugar and oatmeal topping would be great like an apple crisp - but not until I lose more weight!

a friend gave me a simple healthy recipe to try yesterday. I had it for dessert last night and really enjoyed it:

BAKED APPLES - LOW CAL, NO FAT,
NO SODIUM

1 med. Gala apple (peeled optional) cored and cut into wedges,
1 tsp cinnamon (or to taste), 1 packet of Steevia (or to taste)

1. Peel, core and cut apple into wedges and place in a glass
custard cup (or any small container that is microwave safe).
2. Sprinkle cinnamon over apple to taste.
3. Sprinkle one packet of Steevia (plant-based sugar substitute)
over apple.
4. Place custard cup in microwave and bake on high for 2-3
minutes until apple pieces are soft and juicy.
5. Allow to cool somewhat and serve warm.

A small apple would be better for Diabetics like me but this is pretty much as low as it gets!
87 cals, 0 gr fat, .5 mg sodium, 24 carbs, 4 gr fibre, and 0 gr protein

For an additional
60 cals, .2 gr fat, 40 mg sodium, 0 fibre, and .5 gr protein,
a tbsp of Smucker's Butterscotch Topping would be great!

Baked Cheese Balls

Cut up string cheese, dip in skim milk, then Italian bread crumbs.
Bake at 425 for 7-10 minutes.
Yummy Dipped in Marinara Sauce!!!
