This is another catch up step.....going to try the tuna melt tomorrow, as I already have today's menu planned out. Might "tweak" it a bit to suit me. No swiss in the house but I have some provolone and may use pickles instead of the relish. And maybe whole wheat toast since I have no english muffins, but might try it that way after grocery day. LOL

Sorry I'm late with this posting but I'm still trying to catch up with myself. I downloaded and tried "NOT Fried Eggplant". I love breaded and fried eggplant but it drinks up the oil as it fries. This recipe solves that problem and it's good, but not quite as good as fried eggplant.

Just learned about the SparkRecipes. Especially enjoyed that there was a variety of ethnic recipes that had been adjusted (i.e. lower fat, low sodium). Will try some Thai foods.

I'm going to try the "Healthy Chicken Vegetable Casserole" with gluten free pasta and either rice flour or tapioca starch, instead of the whole wheat noodles and wheat flour.

I have a binder full of spark recipes that I have tried and would like to try. We really like the slow cooker BBQ pulled pork roast. I made it for my FIL when he had cancer and could still eat. He loved it--our whole family loved it. It is in my regular rotation. I make a huge batch and freeze meals for later. This last time I got a boston butt on sale and cleaned as much fat as I could get off of it and cooked it up. Yummm!

I like the Cinnamon Almond Raisin Balls recipe but at 220 calories each, I think I would make 12 from the recipe and cut it down to 110 each. Also might add some of the apples I dried last fall. A fun place to search.

I found a low-carb recipe for chicken and broccoli which I will try. I have a regular recipe that also uses stove top stuffing which adds plenty of calories and carbs that I don't need.

I want to try the chicken creole recipe, only with fresh tomatoes.

ETA: I'll try that another day. Today I am making a pot of navy beans. We always try to have a bean soup on hand and I found an easy recipe for navy beans.

I really like smoothies and I found several recipes for different fruits on Sparkrecipe. I am going to make a fruit smoothie for lunch with strawberries, blueberries, some fat free yogurt and 1 tbsp of peanut butter. The recipe I looked at called for 7-8 pks of Splenda but I'm going to omit that as I don't like the taste of that.

This is a great challenge. Looking forward to the rest of the month.

well, I have looked at a number of presented recipees before through e-mail and that will usually get you into a group, but I have never done a search before. I found out that I need to open it in another window. I did a search for pasta to get me into a group since I have some grape tomatoes and broccoli (I have to use it fast or the plants are trying to go into bloom) I need to use soon. I have some frozen snow peas too and I always keep around frozen broccolIi, cauliflower and carrots to add into meals. I also have dried and fresh herbs I have grown that I use. (My brother's mother-in-law is also using some herbs from plants I gave her). I also have some whole wheat pasta so I could use a variation of several recipes like
the featured garlic asparagus and pasta with lemon cream from fitness magazine.
