Pork Roast n Kraut in a Crock

Here's a favorite that a friend in Alaska shared with me many years ago. Hen

1 qt Claussen Sauerkraut - drained, rinsed & drained
1 med. Onion, chopped fine
1 med. Green Pepper, chopped
1-2 Cloves Garlic, chopped fine
3-4 lb. Pork Loin
6 oz. Apple Juice
Salt and Pepper to taste


Brown the Pork, then slice in thirds (not all the way through).

Blend Onion, Kraut, Pepper and Garlic.

Place Pork in crock pot.

Stuff Pork slices with Onion mixture, and put the extra over the top.

Pour Apple Juice over the top.

Cook on high for 4-6 hours.

Here's another favorite chicken recipe... I take it to all the soup supper pot lucks at church, and I've never brought any home yet.

Chicken Noodle Soup
Happy Hen
3 - 14oz cans Swanson's Low Sodium Chicken Broth (or 1 box and 1 can)
3 cans Water (adjust to desired consistency)

1 Rotisserie Chicken (or 4 Cups meat), deboned & rough chop
1 Cup Celery, chopped
1 Cup Carrot, chopped
1 Med. Onion, chopped
2 tsp. Minced Garlic (I use the jarred stuff)
4 TBS Rotisserie Chicken Broth concentrate
12 oz bag Egg Noodles
3 Bay Leaves (keep track, cause you'll pull them out before serving)
Pinch Parsley
Pinch Tarragon
Pinch Thyme
To Taste Salt & Pepper
To Taste Low Sodium House Blend Seasoning (see recipe below)

Bring broth and water to a boil before adding remaining ingredients.
Cover and simmer 30 - 45 minutes

Or... If you've got the time, through the whole shootin' match in the crock pot and let 'er rip!!!

Low Sodium House Blend Seasoning
Equal parts:
Garlic Powder
Onion Powder
Smoked Paprika
Tony Chachere's Creole Seasoning

Chicken Fake & Bake by Happy Hen

I came up with this recipe to help me cut down on the carbs... You don't even miss the flour, and the BBQ pork rinds really add a neat flavor.


6 - 8 Drumsticks - Or pieces of your choice

Breading:

1- 4 oz bag BBQ Pork Rinds (Turkey Creek is the best)
1 ½ tsp Garlic Powder
1 ½ tsp Onion Power
1 tsp Cayenne Pepper
To taste Light Salt

Crush the pork rinds - Add the cayenne, garlic and onion powders to taste.

Mix well (you’ll only use half this mixture, so save the other half in a Ziploc bag, so as to not contaminate the whole mixture with raw chicken.)

Remove the skin from the drumsticks (a dry paper towel helps grip the skin)

Coat with breading.

Place in baking pan and sprinkle with the light salt.

Bake @ 350° for 1 hour 20 minutes, turning halfway through.

My Cabbage Stew Recipe...

The night before take a nice size ham and put it in the crock pot with 1 cup of water. Let it cook on low all night.
The next morning, take the ham while it is still in the crock pot and take the fat off it but do not throw it away. Chop the ham into chunks. leave in the crock pot.
In a large pan, fill with water and bring to a boil. Take a large head of cabbage and slice it into large chunks. Add to the boiling water. only cook the cabbage until it just starts to get tender. Take another pan, fill with water, and add a 1lb bag of Northern beans , the fat from the ham and a large onion, garlic powder, salt, pepper, and any other seasoning that you like and bring to a boil. Turn the fire to low/med and cook just until the beans start to get tender. In the mean time, take a large stock pot and add the ham with all juices and the cabbage with al[ the water and add it to the stock pot. Turn the fire on med until it starts to boil and turn it to low.
Wait for the beans and add them to the stock pot. Take your large pan again and fill with water and bring to a boil and add brocolli, califlower, carrots, mushrooms, greenbeans, and corn to the pan and cook just untill the veggies are getting tender.Drain. Add to the stock pot. When th beans are ready, add to the stock pot and then make sure that all is covered with water and cook until done ! Enjoy ! From my home to yours, Rose

emoticon emoticon Rose, it gets pretty cold up here in the Northern Parts. I think the plant could easily freeze when in single digits. Where I live it gets below zero. However, I do keep a few container in the house--our back room. It's my all season garden. I am now thinking of trying to grow oranges & lemons.

My gardens are outdoors as I am from Florida and we do not have to worry about the cold. because you have the cold and snow, you can take 5 gal. buckets, put holes along the bottom for air and drainage and plant anything that you want in them !

Lucky You!!! I'll have to wait until the new crop comes in, and it's gonna be awhile before I can even think about getting in the garden... ARRRRRRRRRRRRRRGH!!!! Mom's Pickled Beets - Martha Turner

3 Gal. Small, young Beets (or larger cut into 1 ½ inch (radish sized) chunks)
2 C. Sugar
2 C. Beet Juice (saved from cooked beets)
2 C. Vinegar
1 tsp. Salt
2 TBS Pickling Spice w/ cinnamon

Cut tops off, leaving ½ inch of top and the root on, to retain color. Wash, and place in kettle, with the larger ones on the bottom. Add Water and cook until tender. (approx. 20-30 minutes from the boil) Pour juice into cloth and strain. Let beets cool to handle. Peel off skins, and cut into 1 ½ inch pieces. (radish size)

Make the following syrup:

2 C. Sugar
2 C. Beet Juice (saved from cooked beets and strained)
2 C. Vinegar
1 tsp. Salt

In a thin cloth pouch, tie up:
2 TBS Pickling Spice w/ cinnamon

Cook syrup and spices 5-10 minutes.

Add syrup and spices to beets and bring to rolling boil. Remove spice bag.

Pack beets into sterilized jars, adding enough juice to bring up to within ¼ inch from the top, and seal at once. Turn up side down on towel or cutting board for 10 minutes or so, while they seal.

This sounds like fun!!! I'll have to look through my binders and find some... I put all my recipes on the computer in a Word document and then print them out to keep in 3 ring binders... Been doing it like that for years... Makes for easy recipe sharing, when friends ask for one.
