I checked out the site as well, and signed up. Great website! Love the slow cooker white chicken chili.

Time waits for no one. Do it while your still young. It DOES get harder as you age, things don't snap back like it used to.

I think the coconut version is probably the better of the two versions: traditional vs. coconut. I'm sure it is healthier. Coconut based foods are good for you. As far as the coconut sugar--I don't know much about the processing methods and have never tried it, but it is probably better than white sugar. I'd say to research the individual ingredients a bit more--growing, harvesting, processing methods, etc. to determine how 'clean' it is.

If you are watching calories I'd say to watch this one . . . not to overdue it.

P.S. BTW, I visited the web site and signed up for the newsletter.

Update! NO MORE Wiggle room on my weight! Still figuring out how to keep balance and stay in charge. Staying active but could step it up again.

Too much processing for me, especially the coconut sugar.

Just wondering if you guys consider this recipe "clean eating"? I need input before I start consuming this stuff (in moderation ofcourse..haha)

Clean Eating Coconut Dulche De Leche ( From The Gracious Pantry www.thegraciouspantry.com/clean-eati

Ingredients:
1 (15 ounce) can light coconut milk
1 (15 ounce) can full-fat coconut milk
3/4 cups coconut sugar
1/2 teaspoon baking soda
1/2 teaspoon vanilla extract

Directions:

1.Put all ingredients in a medium pot. You donít want a small pot as you donít want the milk to cook over. Coconut milk foams just like regular milk, maybe even more so.

2.Stir to combine in the pot, and then turn on the stove to medium heat (not high heat!)

3.Keep an eye on this. The second the milk starts to boil, reduce the heat to your lowest setting. You want a VERY gentle simmer, if that.

4.Skim the foam off the top.

5.Cook for about 1 to 1 1/2 hours, stirring every 10 minutes or so and skimming the foam off the top as needed.

6.After about an hour or so, you will notice that the mixture has greatly reduced and gotten considerably darker and thicker. At this point, you can turn it off.

7.Allow to cool for a bit and then transfer to a glass jar.

8.Chill overnight in the fridge. (It will thicken as it cools)
