I find the term "clean" relative. Nothing we eat is 100% clean since our world is full of pollution/toxic chemicals that find their way everywhere.
I think what you describe is probably cleaner than commercial cocoa mix so you did great. .

Could you improve on it? Probably. You could use organic, non-dutched cocoa powder, you could use the leaves from a stevia plant or small amount of raw honey, you could use real vanilla. But it would still not be 100% clean.
My daughter made a lovely chocolate cheesecake tonight. We used ground organic raw almonds and pasture butter for the crust, cream cheese and pure baking chocolate with some Xylitol for sweetening for the topping. It was way better and healthier than most commercial cheesecakes and not nearly as sweet. The part that was the least perfect about it was the way I ate it: I could not resist a second piece.

To me it's all about learning more about food every day and doing better than I did the week before. I want to enjoy this process, not worry about when I'll be perfect.
