I discovered kale about a year ago--took a while to get used to the taste, but now that it's in season (in Oregon, anyway), I'm eating a cup of steamed kale a day. I think I'll try these kale "chips."

Yes! The kale needs to be dried before you spray the oil on the leaves...I know it sounds kinda counterintuitive to dry something only to moisten with oil, but it works!

I've tried these in te oven and some were lovely and crispy while others were a little soggy. Next time I will be more diligent about drying the kale. I have heard that the dehydrator really helps.

Yum!

Ingredients
1 bunch fresh kale
Canola oil spray
Seasoning of choice (Herbs de Provence works well)

You will need
Dehydrator (or oven set to 115F)
Paring knife
Large bowl (for washing kale)
Paper towel (for drying kale)

Method
Remove "spines" from kale, place leaves into large bowl of cold water.
Rinse Kale well. Dry with paper towel
Place kale back into rinsed and dried bowl
Spray lightly with Canola oil enough so that seasoning adheres to leaves.
Spread leaves on mesh tray (two)
Place into dehydrator or oven and dry until leaves are crispy.
Serve in place of chips.
