Tonight's dinner is breakfast!
Don't ask me why, but Sunday dinners often are breakfast...for me that will mean /12 wholewheat bagel, egg white scramble with mushrooms, and fresh fruit.

Last night was a yummy stuffed portabella mushroom. Whole mushroom stuffed with Kale, garlic and red onion cooked down in balsamic vinegar with a little blue cheese sprinkled on top.

I use a Mandolin for both. Regular flat blade for thin strips (lasagna) and with the serrated blade to make the "spaghetti."

I love that! I've made it a couple of times...so much nicer than pasta. I've also made zucchini "spaghetti" to have as a raw dish with a chilled tomato sauce.

Adding zucchini "spaghetti" to regular, whole-wheat spaghetti (I like the Bionaturae, organic, Italian brand) makes a larger plate of spaghetti for a fraction of the calories. Filling for the tummy, and great foolery for the eye!

Zu-sagna. Lasagna-inspired but with cooked zucchini in place of noodles, herb-seasoned cottage cheese/greek yogurt blended for one layer, homemade tomato sauce with onion, green pepper and lots of herbs, natural cheese.

I'm simmering quinoa, chicken breast and broccoli in some low sodium v-8. I added some garlic and cilantro and a little cracked pepper.
I'm fixing it now so it will be ready after my beach walk.

I'm working through supper (group home), and I'm making homemade pizza with the clients. The crust is based on a recipe I found here on SparkPeople, and it's whole grain. It's a big hit, and Friday night is often pizza night!
