I love pumpkin.
Mix with cinnamon, ground sprouted flax and stevia for a lovely little snack!

I can't have gluten either, so I'm constantly trying different flours. Try sorghum, rice, coconut, or even nut flours if you can have those.

I actually have changed the pancakes, using coconut milk instead of water and adding more pumpkin. So good topped with grilled banana!

Mmm....the pumpkin pancakes sound great! I have a recipe for Pumpkin Pie Oatmeal but haven't tried it yet either.

I can't have oats or gluten (and while I'm at it, casein, whey, and yeast), could I substitute for a different flour, Amber?

Pumpkin Pancakes!

1/2 cup oat flour
1/2 cup cold water
3 tbsp pumpkin
1/4 tsp cinnamon
1/8 tsp ginger

Mix until combined but still lumpy. Spray griddle and heat on medium. 1/4 cup batter per pancake makes 4 pancakes. Cook for two minutes or until bubbles start to form, flip and cook for an additional two minutes.

I seem to be adding pumpkin to everything as of late. Pumpkin, almond milk and 1 tbl added flax meal with a dash of salt and agave make me a happy girl. What's your fav pumpkin recipe?
