Love, love, love them!
I make pesto with them, its very strong. I use leftovers as a spread for sandwiches, baked chips, pitas, veggies, etc. I also put leftovers into homemade mac and cheese and other baked dishes. Love it mixed into the cheese between eggplant parm layers.
Google Garlic Scape Pesto for a ton of recipes. I usually just dump a bunch of scapes into my food processor, add some Parmesan, some walnuts, then olive oil. Salt and pepper to taste. No big recipes at my house. If its too strong, I'll add some fresh parsley.
I also put it into veggie stir fry. It is so yummy!
