I just like them baked with a sprinkle of cinnamon or pumpkin spice on it. Also, baked sweet potato fries are the bomb! Thanks for sharing the recipes and olive oil lesson. Annie, you are full of resources! I LOVE this team! :)

You might think about switching out that olive oil for coconut oil unless you are using a refined olive oil. If that's the case then you aren't going to get the wonderful benefits that cold pressed, natural olive oil has. Here's a web page that explains why:

I love sweet potatoes...they're so yummy, and they make eating clean much easier!

I just had some for dinner tonight: I sliced some, steamed it in the microwave, and sprinkled a LITTLE BIT seasoned salt. Soo satisfying!

Too funny - I am eating sweet potatoes right now with turkey, cranberries, walnuts, and field greens - with a little balsamic vinegar.

Can't you make sweet potato chips by slicing them real thin - laying them on a baking dish, spray with a little olive oil (like Pam), and then bake?

I like the Terra Sweet Potato Chips. They just have sweet potatoes and oil, or some salt if you get the salted kind. Plus, they actually LOOK like someone cut a sweet potato.

I've tried those sweet potato chips and they were pretty tasty. I assume you are talking about the kind that you buy in a bag from the store. I'm wondering though, if they are really any better ("cleaner") for us than plain ol' potato chips. I haven't looked at a package for a long time so I don't know what's in them at this point.

Yeah...thank God I wrote it down in my kitchen journal so I could make it...8 lg. carrots, 4 med. white potatoes,2 lbs, sweet potatoes, 1 lg. onion, 6Cs. chicken stock, 2 tsp. cumin, 1/4 tsp. nutmeg, 3 bay leaves, 1/4C. half & half (low-fat), salt & black pepper! I altered some of this a bit...More carrots, less white potato, canned organic sweet potatoes, no milk, and I added 1 1/2 Tbs. grated fresh ginger. Came out awesome!

I made Carrot/Sweet Potato Soup for Thanksgiving Day from a recipe here on sparks...but now I can't find it again!!! I never added it to my favs! It came out wonderful and depending on how much stock you add to it, it can be a thick and creamy side dish as well!!!

So BrightB, how do you put together that cottage cheese/sweet potato thing. do you just mix cooked sweet potatoes and cottange cheese into a mass? Or do you put them side by side on the plate with the red pepper sprinkled over?

Mmmm!! I just had to subscribe to this topic cuz I loooooove sweet potatoes!! I eat mine anyway, but the way i seem to eat it the most is with cottage cheese and red crushed pepper!!! DELISH!! I love cottage cheese with just about EVERYTHING!!!

Okay guys, I just have to shout about that Cooks Illustrated Roasted Sweet Potatoes recipe. I made it tonight following the directions exactly and I tell you, it was so good that I'll just always do them that way. OMG!! They were like little sweet potato-flavored marshmallows with crispy, sugary sides. But all they are is sweet potatoes, a little oil, salt & pepper. Talk about "CLEAN"!! Yum; soft, fluffy on the inside and crispy sweet on the surface.

I'm going to make a big batch for Thanksgiving and more for Christmas.

You've gotta try it!

PS: I used "Garnet Yams" (really sweet potatoes but we won't make a big deal of that).

LOL, I definitely am giving props for the colorful cheesy potatoes!

Yeah, I think the purple potatoes were a little moister than regular white potatoes, but other than that, the real benefit was the pleasing color on my plate. I never knew color was so appetizing for me!

Purple potatoes are so pretty!

I remember many years ago the first dish I brought to Thanksgiving dinner was purple potatoes. Except my version was cheesy potatoes from a box with blue and red food dyes mixed in.

Yeah, people didn't go for it, and I have NO idea what I was thinking... But for those of us brave enough to try them, they tasted really good.

Definitely won't be doing that again!

I used to think the lighter-colored one was one and the orange one was the other (though I could never decide which was which -- was the orange one the sweet potato or the yam?) until I became enlightened. Sweet potatoes come in all kinds of colors, same way as regular potatoes.

We had Peruvian Purple Potatoes served at our wedding. They are potatoes. In the most shocking shade of violet you'll ever eat.

Anyway, I like my sweet potatoes cut up like fries, skin on, coated in a little oil, sea salt, and pepper, and baked. The recipe I have called for a hot oven (500F) for 25 minutes, but anything 350F or over will work if you have patience. They have become one my favorite side dishes for... homemade burgers, of course!

There is so much confusion with the names that even grocery stores don't always label their stuff right. If you live in the US or Canada or Europe chances are everything there was a sweet potato of some kind. Did you watch the little video that THESKINNY100 posted? In the video it shows yellow-fleshed sweet potatoes and orange-fleshed ones. Go look at the links I posted and you will see what a true yam looks like. But really, what does it matter? Just know that the lighter colored ones are more starchy and don't cook up the same as the "crispier" ones. All of it is good!! Experiment.

Hmmm now I'm confused! Because the veggie marked sweet potato at my grocery store had orange flesh and was way too sweet. What was marked as a yam had a mild yellow color and wasn't as sweet.

Yes, that's the video that came with the roasted sweet potato recipe that I posted. I subscribe to their email newsletters and got there through that. I don't know if you have to subscribe to be able to get the recipe. I know you have to pay money to be able to look at most all their recipes; I did that for a few months and then canceled because I couldn't afford it anymore. It was fun while it lasted!

Maybe if you click on the upper right side of the video you can get to the recipe. That way you'll get a good look at the photo.

Did you know that the veggie marketed here in the states (and Canada too) as "yam" isn't really a yam. It's just another type of sweet potato. There's the garnet ones, the jewel ones and the lighter, starchier yellow fleshed ones.

Real yams are grown somewhere else and are really huge!

I like those orange-fleshed sweet potatoes ("yams" to us) just about any way you want to serve them except I don't like a bunch of marshmallows on top. If they want sweetening I like a little drizzle of maple syrup...and lots of butter!

I just saw a cool way to roast sweet potatoes on the Cooks Illustrated website that is so plain, simple and brings out the sweetness.


Roasted Sweet Potatoes
Published November 1, 2008. From Cook's Illustrated.

Serves 4 to 6.
Note that this recipe calls for starting the potatoes in a cold oven. Choose potatoes that are as even in width as possible; trimming the small ends prevents them from burning. If you prefer not to peel the potatoes, just scrub them well before cutting.

3 pounds sweet potatoes (about 6 medium), ends trimmed, peeled, rinsed, and cut into 3/4-inch thick rounds (see note)
2 tablespoons vegetable oil
1 teaspoon table salt
Ground black pepper

1. Toss potatoes in large bowl with oil, salt, and pepper to taste until evenly coated. Line 18- by 13-inch heavy-duty rimmed baking sheet with aluminum foil and coat with nonstick cooking spray. Arrange potatoes in single layer on baking sheet and cover tightly with aluminum foil. Adjust oven rack to middle position and place potatoes in cold oven. Turn oven to 425 degrees and cook potatoes 30 minutes.

2. Remove baking sheet from oven and carefully remove top layer of foil. Return potatoes to oven and cook until bottom edges of potatoes are golden brown, 15 to 25 minutes.

3. Remove baking sheet from oven and, using thin metal spatula, flip slices over. Continue to roast until bottom edges of potatoes are golden brown, 18 to 22 minutes longer. Remove from oven; let potatoes cool 5 to 10 minutes; transfer to platter and serve.

I'm with Nancy :) taste first. I usually bake one and put a little cinnamon on it. I love them and have them once or twice a week.

I always taste the potato first. Sometimes it is sweet and moist enough that just a little salt will do. Othertimes I need to add a touch of butter and cinnamon, maybe a little sweetner.

I like to bake them and then halve them, scoop them out, mash them a bit with some cinnamon, put them back in, top with cranberry relish and cubed roasted turkey breast, then reheat - it's like a mini Thanksgiving dinner!

I like to hand them over to someone else and go on a hunt for "real" potatoes. Just kidding! I find them way too sweet (potatoes should be savory in my opinion). But I have tried yams mixed up in a bean mash, and they weren't too bad!

love the sweet potatoes have one most days. Pancakes sound yoummy. I like to bake mine and then sauted alittle olive oil sea salkt and pepper. emoticon

So it is sweet potato season (nummy!) and I wanted to know what YOU like to do with yours?

I like mine baked, with a little butter, salt and pepper.

I've also started eating sweet potato pancakes. I'm still modifying the recipe but so far it is a VERY felling meal.
