First of all, let me extend my condolences on the loss of your wife.
When following a recipe for four, just think of it as an opportunity... I love leftovers!!! It means I can cook once, and eat twice or even three times!!! A lot of recipes freeze well, so you can put meal size portions in the freezer for later use, when you don't feel like cooking.

Since my wife passed away I need some recipes just for me. I have been following the Virgin diet since 2-9-14 and have lost 20 lbs. This is my last week of introduction (dairy) and I will need some simple recipes for the next phase. I'm 84 and am doing just fine and plan on losing another10 or 15 lbs.
