This is the same problem that I am having. I have seen people recommend that I eat a boiled egg or add it to my salad. As well as almonds.

Some weeks I don't even go to the grocery store, just go to my produce place and stock up. I do find with eating more veggies I am under on the recommended protein several days a wk.

The Stability Ball is great for the core muscles also-I am a big fan. It took me a while to become comfortable on it. As a matter of fact when I first got one, I had an arm chair on either side to hold on to until I got the hang of balance. I know it has helped. There are numerous ball routines on the Spark Fitness site too and once you get the balance those exercises are easy on the body.

Stability ball - I've seen in several articles where that makes a great desk chair. Hhhmmm, wonder if I could do that at work. It's a great thought. If nothing else, I could do it at home.

Fitbit Zip has helped me with energy. Funny how everything I've read and everything I've 'known' throughout the years but have ignored is so very true. The more you move the more energy you have. I feel so much better.

I have been eating a lot of veggies and I really do feel better. This way of eating also helps with energy. I'm such a carb addict.

Good luck to everyone.

Hey Babs,

My fitbit has encouraged me to take more steps as well :)! I am also making extra steps up my stairs. But probably the biggest change and or challenge for me has been trying to get into bed a little earlier. It is so amazing to see my sleep pattern. I wish you the best!

I find the Stability Ball helps me immensely in keeping moving. Could you replace your desk chair with the ball? I had started using mine in the evening due to Restless Leg Syndrome, and it has helped in more ways than one.

Another day . . . I am more convinced than ever that changing my lifestyle is something that I have got to get right 'in my head' first. Once I finally 'get it' I do believe it will become a matter of habit and life will be so much easier - at least as far as healthy living goes.

I'm wearing my Fitbit Zip and that keeps me motivated to move more. My job is sedentary. But I am working hard to think: Get up!! Move it, girl!! It's working just knowing that little gadget is in my pocket or waistband. Funny how things like that work.

This morning while I drank my coffee before coming to work I prepared a list for the grocery store. I know this Challenge is working for me because half the list is veggies!! And I'm lovin it.

It's time to begin week 4. I've done well with the exception of the weekend. It was very busy and I didn't plan like I should have. I didn't eat poorly, but I didn't get as many veggies in as I should have. I can't dwell on that though. This is a new day. If I dwell on what I didn't do well, I certainly can't move forward and make today a terrific day.

Without Spark, I could easily have fallen off the wagon this week. I was real busy and could not log for 3 days. When i went back in on Monday-could not just avoid those days. I went back to the days and actually filled in and ran the reports. Back on track now. One step at a time for all of us. I am still finding it very time consuming. Thanks for all the encouragement.

Thanks for your response Gloria! I will try to come up with a better way to get more calories into my diet. I was so discouraged to learned that even though I'm burning major calories during my exercise routine, it could all be in vain if I don't eat more calories. I thought the goal was to burn more and eat less. I guess eventually, I'll figure this old body out smh! I will keep you in prayer. It's nice to see that you have learned to adjust to your new way of eating. Take care and God bless!

Hi DCCOOK3, can you increase your calories? It is not good to eat too few calories too often or you might start losing muscle instead of fat. If you cannot increase your calorie count for some reason, you will have to improvise. I have this problem as I have special dietary concerns (difficulty swallowing due to esophagus surgery) and I can only eat a little bit at a time. I find it best to eat several mini meals each day (I eat six or seven times a day, about every three hours) and the way that I get my veggies in is by putting some in everything that I eat. I cannot eat enough calories because of my situation so I also drink V8 Fusion with at least a couple of my meals to amp up my veggie intake and get my calories up. This is not really a recommended way of eating especially for long term so if you can boost your food intake, that is much more healthy and desirable.

I am eating a lot more fruits and vegetables during the course of a day, but now as a result, my calorie intake is much to low because I have also stepped up my exercise routine. Any suggestions on how I can balance this?

Eating more vegetables and fruits did help me feel generally well. I was able to add more into my diet over the past challenge weeks, but will have to keep working on fitting in the recommended servings each day. It's not been easy, due to a lifetime diet of mostly meat, potatoes, and bread! Just something to work on...

Expect problems and eat them for breakfast.

Hard to believe that this challenge is almost over! I have done a fair job of it and will continue to work on it, especially the veggie consumption. I add veggies to everything and I have veggies or a side instead of something starchy. It is a work in progress. I just put a fruit bowl out for us to snack on instead of reaching for junk. I have eaten out a couple of times lately and I ordered broccoli for my side one time and salad the other time. I've been adding fruit to my Greek yogurt in the morning. Little steps make a huge difference!

I really noticed the payoff of "lots of vegetable servings" during the weekend I had to do without (on the road at the mercy of fast food/restaurant food, where even if you do try to consciously order veggies, you do NOT get the massive salad and giant stir fry and unlimited fridge full of fresh food that you might be inclined to whip up at home). I had a very VERY difficult time sticking to my calorie ranges on my two low/almost-no veggie days and was so happy to get back home to my overflowing crisper and MUCH MORE SATISFYING meals. I have been doing very well with my calorie ranges AND veggie consumption since Jan 5/13, EXCEPT for the two days-on-the-road, which were my hungriest and hardest by far.

Hurrah for veggies! I am a believer!

This is the last week of the challenge but I have learned things that I can do for the long term. Eating veggies has not been that difficult yet totally different from the past. I am extremely excited about eating fruits and veggies all the time. It is very true when you eat healthy you can eat a whole lot more and don't have the extra baggage

I will continue this lifestyle change!!!!

Although, I've gained 4 lbs in 4 weeks, I think this challenge has been very good for me.
emoticon It has made me more aware of getting those 5+ servings of veggies.
emoticon It has helped me figure out which veggies will help me fill up and which will help me 'stay regular'.
emoticon I've never been one to be shy about trying new veggies, but it has helped me be more mindful to change-up my standard salad so it is more interesting.
I think since I have insulin resistance, I just need more individualized help so my carbs aren't too high.

Blessings,
Heidi

This challenge had me try red prickly pear for the first time and dragon fruit. I also made my first vegetarian Chilli. Usually I have always added meat. I did a mexican chilli with no meat and cooked it in the crock pot it can out great and my husband loved it.

AWESOME! It's wonderful to see others, too, are seeing this challenge as another step on the Journey. I understand your feeling about the flavor of eggplant. On it's own, I'm not a fan either. However, I (and my husband) LOVE Eggplant Parmesan with low fat marinara and there are some recipes on SparkRecipes.com. Although I will also say, I only make this dish by dipping in beaten egg whites only before baking. So .. CONGRATULATIONS andI'm wishing you the best! Spark On!

This challenge has been great....it has opened my eyes to try new things and even veggies that once were a no no I have at least tried. I didn't care for eggplant but I truly enjoyed asparagus and Brussels sprouts were good also. Change is whats necessary to make it through this journey. I also realized that veggies are filling and I don't have that overstuffed feeling which comes from all the wrong foods

What a great way to finish March! This challenge has been interesting as I've hit a few 'bumps in the road'. However, they didn't last long (only a few days) and I stayed withing my calorie range through all the 'bumps'. Changing how 'I SEE' all of the process (including eating healthy and daily exercise) is an incredible journey in self-awareness. But the rewards .. I measured myself yesterday and have lost another 1 1/2 inches on my waist and am down another 2 pounds. It's good to know and this is a JOURNEY and the destination is a healthy and fulfilled life. This challenge was great .. a reinforcement of all that I've learned about eating healthy and making 'The Journey' a continuous life event. Thank you all!

Looking forward to week 4 of this challenge- I have pretty good habits formed on keeping a food journal , proper "plating" of food, packing protein into my meals and snacks , and eating breakfast. I have gotten better about pre packaging serving size snack foods and putting the large bag away. I need to work on mindful eating and figuring our strategies to avoid my "pitfalls". I love eating fruits and veggies so it was not a challenge for me to get the six in every day . Hope you all are doing well !! emoticon we are all further along the way to establishing better health and eating habits!!

I, too, am going to work on slowing down when I eat, and to not eat mindlessly. I have switched to a smaller plate.. filling it half with veggies, half with protein and grains. Simple to follow.

Stated week 4 with a healthy plate of various veggies sauté in 4 ml of olive oil and the vegetable stock trick ... Only I had no stock on hand so I used water .
Today I added a serving of beans ( pinto and Great northern mix) with about 3 oz of already baked chicken breast. I flavored with light soy sauce and wasabi sauce.
It was delicious.
I timed my eating so as to slow down a bit.
I'm very happy that this challenge exists, and that I joined. It has been enlightening.
I look forward to the completion, and then popping in on the team to continue to learn from the members as well as share some positive experiences with ones that may struggle.
The old standards of carrots and celery have been like finding a long lost friend. Sometimes for me keeping it simple and basic works. I have also enjoyed trying new veggies like chopped Kale. I think I will be more open and willing to try some frozen veggies for the first time. It dawned on me that many times I avoid trying new veggies, I will use leeks as an example, because I'm not sure what parts are edible, how to prepare or even how to determine a good fresh produce from the shelf. With frozen, I can read the package directions and experiment.
Very positive things are coming to me related to this challenge.

Time really flies by! I just realized that I am now in week four! I am happy with this challenge. It is still a work in progress but little steps make big differences. We eat our meals at the table for the most part and I try to eat slowly and enjoy the time that we are eating. I eat about six tiny meals each day and I try to incorporate veggies however I can. I eat a tiny breakfast as soon as I get up in the morning at 5:00 a.m. and then I eat a larger breakfast at around 8:00 a.m. when I am more hungry. It works really well for me - I am never hungry!

I have increase the distance I walk and have added some strength training, The strength training is a hit miss thing, I am trying but I just don't seem to be able to fit it in.
I have been eating 3 meals plus two planned snacks, I have steadily lost weight every week.

I'm just starting week 4...a change I'm going to incorporate is to savour every bite of food.
I usually eat too fast, or mindless while watching TV.

I've really liked this challenge. I'm incorporating 5 servings of fruits and veggies per day and eating more home cooked meals. I've had to be creative about getting in all the servings (i.e. low sodium v8, veggie packs at work). I'm going to continue to work to substitue healthier items and incorporate more veggies into meals. I think once you take some small steps its easier to create lasting change in the long run.

This has been a great challenge for me. I just love the increased veggies in my diet and a lot of the digestive issues I had been experiencing before starting this challenge have disappeared. It is getting so much easier to eat 6 servings of veggies a day and the portions don't look as large as they did at first. I will be looking to increasing the servings even more. Also, the increased veggies at each meal make me slow down when I eat and now I actually savour and enjoy my food! I am so glad I did this challenge!

I really enjoyed this challenge. 4 weeks have just flown by. I am happy to say I have tried some new veggies and learned some new recipes for making old favorites. I am going to look for a timer today so I can slow down and enjoy my food.....I eat too fast!!

Changing me one day at a time!

Well it certainly seems like we are getting this! I for one, have made a lot of changes for the better in regard to veggies and exercise! Now if only my bursitis would lay off I might be able to do more! Congratualtions to everyone who is continuing this challenge - and for those who are struggling - please don't give up on YOU - your life depends on it!!

Have a great day everyone!

Hugz, Sharon

I am definitely added more vegetables to every meal. I look for good recipes with great health benefits. Spark recipes is a great place to find some great recipes. The inches and the pounds have been coming off steadily. I am really liking this challenge.

I found the challenge a great reminder for healthier eating and I have definitely used more veggies for snacks and added more in at meals, too, like adding spinach to morning egg and cherry tomatoes for nibbling on, etc. Lots of great ideas and inspiration for following a healthy lifestyle -- Thank-you!
