I am cooking my way to better eating with lots of Spark Recipes! I made a bunch of healthy meals this week that I am enjoying daily! I am taking leftovers to work for lunch. I am working on healthy snacking in the evenings!

Congrats to all for your accomplishments at the end of this challenge! I know for myself it has made a big difference on how I make choices for snacks and adding more vegetables to my meals as well as being more aware of just how many veggies and fruits I am getting every day. I like knowing more than when I started on how to make this new found knowledge a part of my healthy lifestyle. I have found that having a great snack of veggies and protein during the day helps my mood and makes me able to make a sensible choice for dinner. I have very much enjoyed this challenge and am looking forward to incorporating this new info into my daily menus. Thanks for putting this challenge out there and making it so much fun to learn! emoticon every one!

Today I reached a huge goal - I've lost 61 lbs since Oct. 15, 2012. Though I still have over a hundred pounds to go to reaching my goal weight, I'm on track. Here are some things that I have done to change my lifestyle and eating habits:

1. I found out I was allergic to wheat and have removed all products containing wheat from my diet.
2. I changed to a pescetarian diet (no meats, only fish, eggs, dairy and vegetables)
3. Made substitutions in recipes. SP gives you great tips on how to do this.
4. Drink 8-12 cups of water a day
5. Eat lots of veggies
6. Mix it up by eating a variety of foods and trying new foods

Also, I have learned to average my calories within my range over the week. It is ok to go over one or two days on my calorie range, as long as I keep to the low end of my range the rest of the week. If my average calorie for the week fall within the range, I'm good.

The main change is that I have become more active. Even though my exercise routine needs work to become consistent, I'm on track. At least I feel like I have healthy eating now under control.

I have been able to keep my calories up to 1000+!! emoticon

I do have to laugh though when I have to eat my oncology diet now..I don't have a problem with cholesterol so I have to eat 3 eggs every other day! What a treat to have this favorite and its real eggs not egg beaters. Getting ready fro chemo maybe next week I have to do more protein.. But boy does the SP Tracker give me grief!!!

On a more serious note though and as my week 4 winds down, I have accomplished a great deal! I have increased my caloric count by approx 200/day! I now eat about 9 veggie servings a day...still lack in fruit although I am getting some in now that I wouldn't have b/4.

So I know we can eat healthier!

I have participated in recipes that make GF and lighter by subbing fat with healthier products and I have done so w/e buying chemicals which are rampart in fat-free foods!

I have worked on portions and have gained but from days in the barn now gone by...I still have to cut some more. I have been a easy during this challenge because I am trying increase my daily calorie intake. I also have measured and will continue to do so.

I have been trying to meet calorie requirements and I did eat 1200 one day and I was miserable...I know that the I have mindset of over-eating maybe to the point it could hinder me but about a 1000 calories is what I can realistically handle. I made 1037 yesterday including all the bad oncology news so I am counting this a victory! I have long been making wheat recipes into gluten free recipes so I understand food ingredients and have learned lighter ways without eating all the chemicals that go with fat free! This is the problem that I have had all along...I hate eating chemicals and forget the taste! So I can take that away from this challenge too! We have learned to use Greek yogurt in many ways and I now make my "meat loaf" out of low-fat cottage cheese as an example!

Just read the challenges for week 4 and cannot wait to put all I have learned so far to extend into this week. I have found that I really look for ways to add veggies when before it was just an after thought. If they were there then okay but now I find myself looking at my plate at each meal and asking if I could add a vegetable somewhere. I feel like I'm making progress with being more aware of what I am eating and what I need to meet my daily requirements. Let's go, week 4! emoticon

Getting in enough veggies has always been a challenge, but I actually like a lot of veggies so fruit is more of an issue with me as I like very few fruits. I'm adding some of the fruits I won't eat whole into protein shakes, and that's been pretty successful

Since I am a vegetarian I don't have any problems with veggies. I don't care for fruit though so really have to watch.

Marcie, can you share some of what you are thinking about on protein as I have that problem too!

This challenge made me realize that I was not eating enough fruit and vegetables. Incorporating the fruit was easy. Getting in those veggies is the real challenge that I am working on thanks to this "Eat Better, Feel Fitter" Challenge.

This challenge has helped me to add more fruits and veggies to my day and to look for other alternatives instead of giving in to sugary and high calorie snacks. The recipes on SparkPeople provides ideas for better recipes and makeovers without sacrificing taste. I think I still have to work on adding more protein to my diet.

Today is my first day in week 4. I have been having success getting my calories up to my recommended value (haven't since 2009) but I am just very uncomfortable when I eat that much so there is still plenty of work needed. I have been holding and not losing on the lower calories and my oncologist wants protein and salt above required but he is not concerned with calories as long as his "indicators" are as accurate as can be. He would be feel better with more consumption though because of chemo. Look forward to talking with you in the coming week..

My week 4 is finished. It helped me get more veggies in my diet. I now average at least 6 servings a day. I've replaced the cravings for chips and sweets with veggie and fruit snacks. My family is finding ways to add more vegetables and cook healthier too. Thanks for this challenge!

I'm doing well with a healthy switch, I've actually made a game of it. Now my family even makes suggestions of things they think would be healthier. I still need to incorporate more whole grains and water to my diet. I now include veggies and or fruit in every meal and have become quite creative of sliding them in. I needed this challenge and learned a lot in four weeks. I hate seeing it end :(

So sorry to hear about your dad Spietzy. We went through that last year when my boyfriends mother and stepmother both passed away. I know it can be very difficult

This past week has been very difficult and I have not been on SP. My Dad passed away on Sunday, February 17, 2013, after a brief illness. Before he died he made me promise him that I would take off the weight and keep it off. He doesn't want to see me have a heart attack because of my obesity. Today I am back to SP and will begin again. I will keep my promise to him.

I have not been eating well for the last week. I did not leave the hospital from Wednesday through Sunday. I didn't have much of an appetite, didn't exercise and didn't sleep. I still don't feel much like eating, but will force myself to get back on track. I lost another two lbs, but will probably put the weight back on once I start eating again. In the past when I was stressed out I would eat everything in sight. This time it was different. Today I plan to exercise for at least 30 minutes and will try to rest. I have to return to work tomorrow. My mind is still in a blur and I am just trying to get through one day at a time. I will have to start the challenge over again, but that is ok. At least I'm back and not giving up on changing my life to be healthier.

I am still in week 4, (almost finished) and I have learned so much. I have had more trouble getting in my veggies than I have with fruit. However, I have learned to use combinations I would not have thought of before and found that I really like them. I had not put bell peppers, onions and mushrooms in my spinach egg scramble before, but that has become my way of fixing this. The addition of more veggies is absoultely delicious. I will continue to work in more vegggies, to keep a food journal, try new recipes, focus more on what I am eating and not eating while distracted. I will also continue measuring portions. Eyeballing does not work for me. Thanks for this challenge, and the many things I have learned. emoticon

Finished Week 4 emoticon That went by fast.

While I was eating my dinner tonight, at the table, no TV, I started thinking about other things I stopped doing while eating and realized I didn't think to share these things on any of my team forums. One thing, being use to distractions while eating, I noticed I was getting up from the table to take my plate to the kitchen and I was still chewing the last bite. I now make myself sit and relax and enjoy that last bite. This has been good for my body especially my digestion and shows me I need to concentrate on relaxing when I sit down to eat.. There are others that to me is a Woo Hoo moment. When I get or remember them I will share it SparkPeople forums.

This is my last day of week Four. Can't believe it is over so soon.
Yet, I did enjoy my time here in the group. I have been eating more veggies.
Mom made a crusant stuffed with spinach, sun dried tomatoes, and cream cheese.
It was really good. I hope that we can make it again sometime!

I find that now I start planning meals around the veggies instead of around a meat dish. Also, I am always on the lookout for new ones to try. My salads have also become more interesting.

Being focused on servings per day helped me make eating more fruits and veggies a more automatic thing. My kids even look for the containers of raw veges when they want to snack and notice if there aren't any!

I feel like taking this challenge really brought it all together for me, reminding me just how important the role of the various foods are to our bodies...and how to make it all more interesting. Viva Veggies and Fruits and Proteins and Carbs..they all play their part ....the key is balance and moderation.

Day 2 of week 4 and have gone from a couple servings of freggies to atleast 6 a day. I have discovered the celery and carrots cure my craving for pretzels and fruit takes away the cravings for sweets. Have the family eating more too. This challenge offered lots of ideas which I am very grateful for. I have a family of meat eaters, not big on veggies.

It's a work in progress, and a learning curve. Staying active on SP, learning from challenges like this one, all help me stay focused and determined to reach my goal. I've learned some new tricks and even some new treats, or at least was reminded of some old ones.

An apple with peanut butter is just as fine for lunch as bread with peanut butter, and actually is more tasty and satisfying for me.

Decreasing carbs and increasing freggies and lean proteins seems to work well for me. I think I wouldn't have realized that without working through this challenge.

Ahhh... the Holy Grail! I have been going through this challenge feeling disappointed. The first 3 weeks were all things that I already do and do well and consistently... knowing my calorie range, doing mini-meals, loving and eating lots of veggies, eating whole foods and limited restaurant or processed foods... But... I just started week 4... portion control! That is my achilles heel! This week I will be leaving motivational notes on my dinner table, eating AT the table!, measuring again! I think I need a reminder about serving sizes, And doing a food journal. I avoid this most of the time because it is sooo time consuming! Especially when you cook 90% of your own food and so figuring out calories, fat, carbs, protein, etc. is a pain! But... this article gave me the DUH! revelation that I can just LIST what I eat and portions! Don't worry about calories, etc. THIS, I can do. And I am, beginning today!

This challenge has been great for me! I've been adding veggies to my morning staple (brown rice & lentils). The result has been unbelievable! I finally feel full for hours after breakfast and that hasn't happened ever before. I'm excited!

This has been a great challenge and has really helped me up my freggies to my goal of 5-9 daily. I've learned so much from the additional resources as well and appreciate the tips and ways to stay fuller longer, and about getting the right fiber etc. I've been maintaining for 3 years, and I've learned so much on Sparkpeople, but you can always grow and improve.

I find that starting the day with a healthy breakfast, and keeping freggies on hand always, keep me on track. I keep cuties's or an apple on my desk as well, where I always see them. When I need something, I grab one, or I'm reminded to get a veggie, if fruit isn't what I desire right then.

My continued goal: Mindful eating, and maintaining freggies.

Dear Lord, set my sights on You and Your great attributes. Help me to live in Your presence, dependent on Your guidance each day. In Jesus’ name, Amen.

I have lost 7 pounds since I joined this challenge. I love this challenge because I truly believe that veggies and fruits are the secret to weight loss. Snacking throughout the day is the other secret weapon. Usually when I leave work I am starving. I go out with friends or go home and immediately inhale any and all food in sight. But when I snack throughout the day I feel full and happy. I'm not focusing or panicking about when my next meal is. Snacking on veggies and fruits fill you up and give you energy to get through the whole day. I have been consistently consuming calories at the lower end of my daily range. This is while I'm increasing my workout schedule. I am looking forward to finishing up the last week of this challenge. I am currently sitting at my desk with a bell pepper and tangerine to snack on later today.

Its a lifestyle NOT a diet.

I really liked this challenge.....and even though I usually do get my freggies in, this challenge was helpful in reminding me just how important they are to my health.....I especially liked the various articles which got to the heart of the matter and made me think a lot. Yes, I do feel better when I get my freggies in.....Yes, I do feel healthier ....and Yes, I do intend on continuing to eat my freggies....: Thank You.

I'm feeling really good about this challenge. It caused me to be more aware of not eating veggies and fruits like I should and could. So that made me put more effort into doing it and it's been working out. So thank you for a good challenge! I will continue to remember them now in the future.

I'm starting my ticker over with going low carb.
