Sometimes I forget how much I love a salad! I think when I forget what is in the fridge I tend to desire going out for a meal instead. Today I had kale that I just remembered I had in the fridge. I also added red onions and mushrooms and tossed on some tofu. It was a pretty well rounded meal. I do think I ate too much bread with it, but otherwise I think it was pretty tasty and healthy. I had a big salad for lunch, and for dinner I am looking at leftovers and another salad. emoticon

Last night had the most amazing salad! I used Lemon juice instead of dressing since there was so much going on in the salad! I should have just had the salad and skipped the pasta!

I will likely never get my partner to ever love new grains or veggies. I have been able to figure out a few ways to get him to eat veggies he hates. That to me is a major victory. I am hoping to get him in the kitchen over the next few months, I leave for 2 years in March and I want him to continue to eat real food.

My second goal was to find my peace and groove in my kitchen, I have. I did have to cancel my CSA since they seemed to deliver to the wrong apartment and I can go to the local farmer's market without someone getting screwed. I think moving to a new apartment has helped. Also knowing how long I am stateside has helped as well. Just knowing that a job would be silly has put me back into focusing on clean healthy food.

My goal for this week is to keep eating more veges and good Vit c fruits. Increase my selenium education and B vitamin intake. I am also 2.2 units away on the BMI index to move from my original point of obese, to unhealthy, to healthy range. My original goal of 148LB was to get me out of the obese BMI index. I am sooooooo tired of reading my medical check-up summaries as obese. I "get" to go to the doctor today and show off my weight loss. I can't wait to get my hands on his report. I would not have gotten close to where I want to be without this challenge!
I eat more vegetables, variety in fruits and a LOT more of white fish in parchment with a teaspoon of Mayo and Parmesan on each side and a good dose of fish spices. Its made all the difference. emoticon

Even as the Leader I am in Week 4 with the rest of you! I've come a long way. I've made many changes in my eating habits such as;
1. measuring out snacks
2. being a conscious eater
3. drinking more water
4. gave up diet drinks
5. drinking more black tea
6. getting in 5-6 veggies and fruits a day
7. less red meats
8. eating more fish
9 recognizing when I'm full
10. drinking less alcohol

What I need to work on is slowing down when I eat. I think as mothers we tend to eat fast because so many depend on us and we need to 'get it over and done quickly!" That has created a monster! I see now that I eat way too fast! I've become a 'conscious eater... but it still isn't good enough. I really need to just put the fork down and really SLOW DOWN! I think I do pretty well when we have guests because I get engaged in conversations, but with just DH and I now it's a little hard. I need to try.

think i am keeping good track of my food between 1200 and top 1500. i think only one day i went over but only because i worked so hard that day i really felt hungry. and i didnt go over what sparks said i could have for the day. i keep moving as much as possible. scale stuck but not letting it get me down.

Week 4:

I liked this challenge. I often don't eat all my calories as I don't get hungry. I was at a plateau in the weight loss. I learned to eat my calories so body doesn't go into saving calorie mode; I am now losing again. I am also broadening my snack options thanks to the recipe suggestions. I have been making good choices when I'm doing errands and not slipping back into bad old habits (like fast food or bakery items). And it isn't hard to do anymore. I'm really motivated and I thank SP and this challenge for that.

Set yourself up for success.

I got a hold of my calorie range! I can do IT!!! I am doing 1200 calorie diet: I have a range of 1200-1350 calories per day. I don't want to go under 1200 calories a day, because it will hurt my metabolism.

300 calories for breakfast
100 calories for AM snack
300 calories for lunch
100 calories for PM snack
400 calories for dinner

Learn how to lighten up any recipe.

I did the Official Healthy Cooking Challenge and I printed off the smart substitutes and put them in my cookbook. I have quit putting ranch dressing on my salads and switched to balsamic vinegar for my daily salad. Those calories add up so fast!

I'll have to check that cereal out. I usually have either an egg or shreddies with a milk protien drink called Milk to Go Sport. The milk contains extra protien but I still don't seem to be getting enough protien even with my checking out the labels and buying foods that have higher protien in them.

To me HEALTH means Energy. Stamina. Flexibilty. A relatively pain free body. Enjoying healthy food. You are your body, and your weight loss efforts will succeed exactly to the extent that you mange to do the work on behalf of your embodied self. You’ll do much better when you focus on making positive changes to improve your health and well-being, rather than on fighting your bad habits.

The last couple of days I discovered I am not meeting the required daily protien amount I have been so focused on making foods with vegetables and beans and rice and I thought the beans and rice would make enough protien. I'm only tracking half the amount as when I was eating a meat with every meal. Anyone have any suggestions how I can fix this problem.

Just completed my fourth week. Finally learned to eat more to stay in the higher end of my range a.couple of times and even to go to an almost maintenance range twice during the week and lost 3 lbs. emoticon

We went shopping last Friday which was a mistake because it was a payday Friday and the stores were packed. I didn't get half of what I needed so the following Monday we went back again to get what I couldn't find or forgot the previous shop. We ended up doubling what we usually spent because we did more impulse buying. Monday there were more fresh fruits and vegetables since it was the beginning of the month and food trucks had arrived that Sunday. My poor husband is afraid I over did the fruit and it will spoil before I get it eaten. Not to worry I told him, I can live on just fruit if I had my choice. He's not a big fruit eater. Lost of fresh vegetables and fruit is more costly than frozen. I had really been missing the freshness of spring fruits which still are not on sale prices here yet, but I splurged because I felt I needed them to help me through my upcomming week. The flowers should be popping up but they can't because it won't quit snowing this year. The weather is hard on my health and I have to fight depression with healthy fruits and vegetables.

Just completed week four and realized I had to learn to eat slower 'again.' A long time ago. I did eat slower but one job moved me into eating faster. It was a rush! I am trying to do better with that and it was good to have the challenge remind me.

I just completed this challenge. I learned a lot about eating a better diet:
I've narrowed down my ideal calorie intake that keeps me satisfied and losing weight.
I've incorporated more soups and salads.
I'm eating 5+ veggies each day PLUS 2 - 3 fruit servings! I never thought I could do it =)
I'm trying to eat more slowly and mindfully.
These habits are just that! Habits. I plan to continue eating this way...I've still got a few months to go to get to my ultimate goal, then I'll have to maintain.
Now to get the rest of my family to join me =)

I do not know what happened to my challenge - just stopped getting anything .. but did the calender - and read the articles .. eating on my plan again.. was out of food and only got veggies from the food bank as they tried to give me a plastic groc bag of cakes and cookies - another of 3 loafs of bread- spam- vienna sausage etc... horrid things not food... I did get a bag of fresh and can veggies .. so it was something .. I made my own bread - just flour water and yeast - made my blood sugars sky rocket --ugh .. granted I love breads - cakes- cookies etc.. but I can not have them ..................I want to live !!!!!!!!!!!!

This is my fourth week and I have done fairly well. There were a couple of days where I almost got all of the veggies in. I, too, was having a problem with illness. I think I could do those couple of days before I check out on week four. This has been an interesting challenge and some of the things I have already done, so it was not as hard as some of the other ones I have done. Hope everyone is having a good challenge!

periodically reviewing the info in this challenge would be a good thing for me to do every few months. Knowledge is power....but sometimes it takes awhile for things to sink in!

I've been enjoying this challenge.
Common sense and realistic. YAY!
I certainly find that if I eat what I should, I don't tend to eat what I shouldn't! Even on SparkPeople there are some folks who think that NOT eating is the way to lose weight. This challenge would help them see the error of their ways.

I like to try diff recipes for our meals, so we don't get sick of the same old same old. This week, I found a very simple recipe that called for adding frozen sugar snap peas to the beef stew meat. First time I'd ever purchased them frozen. I like how many veggie choices there are in the froz food section. This is necessary for us who live in the frozen north, LOL.

I also am starting week 4. I have been doing most of these things but it is always good to take a refresher course ! I am learning how to put more flavor into my food w/o adding sooo many cals. My downfall has been trying to eat healthy AND enjoy the food. I have been trying different things I found on SP but it is an on going practice ! Wish Me Luck !! ( I lost 2 pounds in the 3 weeks which is about how I been doing for awhile now.)

Just starting week 4 , I've relearned a lot of information that I knew and forgot about.
Planning my meals and pre portioning my snacks, so there ready for when I want one and
I don't over do. My snacks are now healthy. I'll let you know how it is going. emoticon

So I finished this program; yippee! I weighed myself as of today i'm at 169, I hate when fluctuates as some days goes up a couple pounds higher, but feels good i'm progressing as I started out from 173-176 all the time. I cut out most carbs which helped and eating scrambled eggs 1-2 times a day for a meal with 1 slice of cheese helps with lower calories in my meals. Then fruits and yogurt and 1 snack i make can be high in fat if eat a lot at once, but good for low carb, high protein diet - deviled eggs; finally got a good recipe down to taste right way and using mayo vs. miracle whip makes it taste way better. At least 45 min. exercise 5 days a wk helps as when was at 30 min. didn't feel like helped as much, but at that time i ate more carbs too. Iike doing different spark people exercises and challenges along with wii challenge for biggest loser i am doing for 3 months, 1 month down so far and then doing air climber stepper for 10 mn. on exercise days

I have a pedometer, I worked out last night, I brought my lunch in today (tomato soup), and I had a good breakfast this morning. Let's hope some of the small changes will make a huge difference!

Oh yeah, and i joined weight watchers at work (just a little something extra to hold me accountable)
