This has been a difficult week so far. Doing fine with the veggies and fruits, but need to cut down on the breads again. It seems I have a thing for bread when I am hungry. Need to
get some more whole grains into the meals instead of the processed ones.
One suggestions for getting more whole grains such as rice...cook some of the white rice with the brown rice together. It makes it a bit more palatable, and as you get used to the taste you can go to complete whole grains.
I had a problem with this when I tried switching many years ago. My hubby balked at all the whole grain foods. So take it one at a time and little by little. That way your body will get used to it better.

Awwwww this made me smile a little bit, remembering my own first forays into Eggplant Territory. I think it is partly "acquired taste" and partly how you prepare it. Straight-up eggplant is not so nice (even with a shake of parmesan cheese) but it works very well when combined with other ingredients (i.e. as one of several veggies in a curry, or as a layer in a lasagne, or roasted and pureed with tahini and lemon juice into a dip). Don't rule it out forever! I used to hate it, but now it is one of my staples!

Goal 1 - break 200 (46 pounds lost)**DONE**
Goal 2 - leave obesity behind (BMI 29.9, at 185#) **DONE**
Goal 3 - BMI = Normal (154# or less)

I surprised myself tonight....After my supper of a hummus and pea sprout wrap.. I decided to have some organic unsweetened applesauce for dessert and as I was enjoying every bite ....I could almost taste the apple as it was freshly picked off the tree.....I suddenly realized that I really didn't miss that dish of ice cream that I would probably have had if I was "up" to my old dietary habits. I felt very full and quite content. emoticon I feel like I have had a major break through because ice cream has ALWAYS been one of my "comfort " foods!!

I am just starting week three. I still need to work on the veggies but I think that last week went okay. I just started adding veggies into everything that I cooked. Filling foods for this week...this one should be easier for me than veggies. I love to cook with beans and lentils, and I eat nuts frequently. I always measure the nuts out though because a little goes a long way! We've been having more soups and stews and in the article I just read, it seems like these types of foods are good because of their high water content. I am adding lots of veggies to them too! I do need to change to brown rice and whole grains rather than refined...last night I fixed brown rice for our dinner. I like cooking with barley too. My hubby just doesn't like it as well but we need to get away from that bad stuff!

Eating healthy has become easier and making choices outside the home has become easier because now I know I have a choice to eat the right thing or accept consequence of eating the wrong thing.
Restaurant food though may seen healthy but because they add things to their foods like oils to make it taste better a veggie burger could be a bad choice instead of if you make it at home

Cooking was very difficult for me in the beginning but thanks to the George forman grill it has become easier also

If you keep doing what you've always done you will keep getting what you have always gotten

I can relate to you Heidi. I'm very confused, but I keep going on faith. I just hope one day I will show a drop in the emoticon . I don't measure, so I don't have that as a non emoticon victory.
For my constipation I decide to go with a daily probiotic. I sure hope this helps.
I think this challenge is good, so I will continue forward.

As I begin week 3, my weight is up (regained the 3 I lost in week 1) to when I wasn't measuring and counting carbs and doing portion control and I'm constipated, but I'm willing to keep going.

The article with the photos of restaurant meals vs. home cooking was amazing! it made me realize that many items I order in restaurants are not as healthy as I think they are....I am trying to make a healthy soup each week at home.

Lunch was delicious: fat free refried beans and a little sharp cheddar in 2 small tortillas with a salad of kale and guacamole . emoticon Chris

GOAL: Reduce A1C,BP,tryglicerides,and weight. HOW? By not eating added sugar, using Omega3s, base meals on veggies, water aerobics at least 3X week and using NuStep when I can't get to the pool.

Eating healthier is so much easier now. I love veggies and fruit so that is no problem. I do have to watch that I keep bread to a minimum....but so far, I'm happy with the choices I am making. This challenge has helped me learn more about different choices.

I have been so much more hungry seen starting this challenge. Seems strange, but that's the case. I have waited to make sure it is real hunger, and I'm very certain it is. It might just be the phase I'm in right now. Enjoying this healthy way of eating. Thanks for the challenge.

Week 3. Eating more veggies makes a big difference and I really don't miss the rice and potatoes becausd there are so many kinds to choose from. I actually fill my plate with half veggkes first then handful of meat. Having more veggies really does keep me full longer and not sluggish they also help me stay regulas after each meal

I don't think wine is considered a fruit but good try

Way to go! that is a hard cycle to break! I've been doing the same since New Year's because I couldn't ever just have one glass of wine, it had to be two, and that is just too many calories! I talk to people all the time who say " I quit drinking and lost 20 lbs" and it's amazing how those extra calories add up! But I wonder if my glass of wine can count as a serving of fruit?
We had a great family party over the weekend where we hosted a salad bar! it was great to have for lunch, and I was full through dinner with salad, shrimp, chicken breast, bacon and lots of pine nuts and sunflower seeds! plus left overs gives me great salads all week!

After two weeks of eating way more veggies and fruits I feel so much better. On days when I eat a little less I am actually missing the veggies - especially the fresh, raw veggies. I also love how I can fill my plate with such a colorful variety and it doesn't add a whole lot of calories but it does keep me full and gives me more energy - which I desperately need. I am hooked emoticon

i have restarted a goal of not having any alcohol from sunday night through thursday night. I was drinking too often for quite a while due to some uncontrollable home issues. those issues aren't solved, but i realized that what i was doing to myself wasn't helping. so, i am limiting that stuff to one or two nights a week. i hope to get to the point in the future where i don't drink alcohol at all unless it's a special occassion out or DH and i are having company over.

Just an update. I finished week 3 up yesterday and was able to meet my caloric intake for the first time since 2009 (1252). I did it with vegetable and fruits too. I hit 86% of my recommended daily needs! Good luck to those here and see you in week 4!

GAYLSMITH, I am with you eating veggies! I met all of my goals yesterday and actually consumed 1147 calories with veggies (8 servings). Best day I have had since Chemo last summer!

Fruit still a challenge but am eating some! What an improvement! Overall another good day! maybe I should say great because I was able to consume and additional 100 calories (in veggies and protein).

Met my quota of veggies able to add calories and added some fruit....trying to eat more! Worked on meal proportions! Exercise is going well too 85 min on cycle and .8 mile daily! Keeping track of everything! Still under on most requirements but I am gaining! DR OKed me eating eggs daily as many as 3 to help with protein...I do not have any kind of cholesterol problem in fact it is good!

My biggest challenge with eating more produce is getting to the grocery store. Luckily, my honey likes vegetables and he agreed to do the shopping, if I do the laundry. Yesterday I was lucky to find him making a big batch of vegetables in a kind-a stir fry. It had cauliflower, eggplant, onions, brussel sprouts, and jalapeno. It is tasty because he let the vegetables brown, so they are as good as the oven roasted ones we usually do. It is enough for a few days. I am so lucky.

@ Wtg, Slachetka! Always great when a day goes well!
Just read the challenge for week 3 and the articles to get me started. I like building on what I have learned in weeks 1 and 2. Keeping all goals of the challenge in mind as I move forward. I like that my week's challenge begins the day before I go to the store-I may have printed out my list from the on-line weekly ad but that is what is so great-I can go right back in and see what specials will help me meet the challenge for this week and make the necessary adjustments. Toss the old list and use the new and improved one tomorrow. emoticon

Week 3 complete. Went over on calories today, but still feel good. That really doesn't happen often. Still exercising and keeping track of everything.

Just one more week for this challenge and it's been going well. I am more aware of trying to get the veggies and fruits in vs. just filling up with a sweet snack. The article "Tips to Stay Full Longer" was very helpful.

Week 3 went great. Eating veggies is now first nature. This week my entire family benefited by my being in this group. We ate veggies and fruits at every meal this week. I find that I am now gravitating to fruits and veggies first. When eating fruits and veggies I find that we ate far less of processed or boxed foods.

Just moving in today. I am a vegetarian and am on a weight maintenance program. Because of health issues (cancer), I have to somewhat limit fiber as I am "fighting" getting my calorie intake up! I will commit to try though as that is why I am in this challenge..I also do need to throw out some of my ideas on proportions so will work on that! I am not a snacker. I do struggle with eating fruit!

Glad to be half way through this challenge! I have been able to complete the first 2 levels and will strive to meet the food challenges though they may differ somewhat.

Look forward to working together over the next week!

Having high fiber cereal and fruit in the morning gets me started. Soup and salad at lunch, Vegetable and salad at dinner and fruit for dessert. That way I get all my fiber and fruits and vegetables.

This week was good for lunch. I made a whole chicken in the crock pot with broccoli for the week. So lunch was chicken and broccoli and I added an extra serving of mixed veggies on the side. I placed strawberries in a snack bag and had that when I was hungry.

My big discovery was that the V8 Fusion counts as a fruit and as a vegetable (1 serving each) but the V8 Splash does not. Naturally, the regular V8 is the healthiest.

finding that V 8 juice is good for a snack and is so much better than having i diet soda when i started the challenge i could easily drink two cans a day. when I started the journey on this challenge i was drinking up to three a day. enjoying reading the two DASH books i checked out of the library the diet is very Sparky and talks about watching for the hidden salt. having fun trying new veggie roasted Cauliflower has become a favorite and much putter then eating it cold like i did if i had it. hard to believe I am in week three . sounds like i need to try Bessel spots from the message board . now just have to find a way to fix them.have to check Chef Megs cook book

Birds Eye Brussels Sprouts are good, too. Tried them in their 4-individual serving packages.

It is still really a challenge to get those veggies in as part of my regular meal. I am improving on it but not quite there yet. I may be relying too much on the V8 fusions but I am staying within my ranges and if that is what it takes to get a couple of servings down - then that is what it takes.

I just started week 3 yesterday. I am eating more fruit for snacks. I added a 3rd snack to my tracker,however I was doing great first week but lately I have fallen back to the 2 snack a day. And those are carbs, I need to go shopping for more fruit and veggies, however I need to get a ride and $ and food stamps are gone until the 3rd of March. Just fact! That's the way it is. On with week 3 and learning how to keep the empty feeling away and still eat healthy.

It's getting easier to make better choices. I'm eating more vegetables and meatless meals. I have loss a total of 6 lbs and it feels great. I WILL emoticon
