It's getting easier to add more veggies and this challenge is helping a lot. The month is almost over and by taking part in this challenge and having recently rejoined Weight Watchers, I am definitely seeing some progress.

My aunt came to visit last week. she brought lots of fresh veggies.
I am starting to really love the little red tomatoes. (Getting addictive).lol
Its is a good thing really, I am liking veggies more now then I used to.
Started week 4 today but will keep experimenting with recipes.
(Will be making my roasted acorn squash and sweet potato dish this week).
Hope that the rest of you are having a good time and succeeding with this challenge.

I, too, have to work harder on the veggies. I was in the habit of eating 2-3 servings per day prior to starting up again with SparkPeople. This old habit is hard to change.

Salad with a slice of pizza the base made with wholewheat flour so much nicer than garlic bread with the pizza.

Whole wheat pasta and whole grain rice are used and I find them more filling than the white varieties.

Pasta bakes filled with vegetables and a turkey meatloaf made with lots of veggies added all make for healthy meals loaded with vegetables.

Snacks are apples cut into chunks or pears, figs and prunes make a nice change as do nuts and for when I want an extra sweet treat yogurt coated nuts are just the thing.

I have only two more days left of my 3rd week and I just realized I started it on Tuesday. I have been on SparkCoach every morning and just concentrating on that and planning my meals I forgot to check this out. I will be reading tomorrow as it is late now. emoticon

I will check in again tomorrow. I Think I am going to enjoy this week.

Because of this time, I've been trying to eat alot more veggies and I'm doing it. It is possible for a not-so-great veggie eater, to eat veggies again and really like them. emoticon

I liked the articles we were to read this week.
I am really cognizant of the veggies I am eating now, and I tend to grab them before something else. Also, I am finding that more and more I am refraining from processed foods (other than bread.) If I feel a need (?) to snack, I just cut up a bunch of celery and nosh on it.

I LOVE Ezekial bread. Its loaded with good things and makes me feel guilt-free when eating a sandwhich. Toasting it longer than usual is the secret! I can't seem to find it the Netherlands but I keep looking everywhere.

still finding I want something with alittle salt...instead of reaching for a bag of chips...I go for the triscuit...whole wheat and the salt i crave..
Also...Bob Harper always suggests Ezekial Bread...this took alittle getting used to...its wheat sprouts and whole wheat...I learned if I toast it alittle longer than regular bread...not to bad!

I continue to add veggies and fruits to my meals. I am pleased that I am more aware of what is going into my mouth. I continue to drink my water and exercise. I have been writing my food down in my log but have to catch up logging it on sparkpeople. My life has been hectic with many things happening at work and at home. I am proud that I am staying on track through all of the craziness. emoticon

Veggies! I have really been getting into veggies this week. For snacks I am choosing celery and carrots instead of just fruit and nuts or worse. Tonight I am making black bean burgers loaded with vegetables. This challenge is a great reminder me to get those veggies in. Its so easy to avoid them.

Its a lifestyle NOT a diet.

Week 3 on this Challenge...DONE! I'm feeling better everyday. I had a 2.8 lb. loss at my weigh-in this week. My goal is to lose 2 lbs./week. So anything over a 2 lb. loss, I'm thrilled with! This year's goal is to lose 100 lbs. I've lost 13 so far...the snow is falling (see my blog "Pounds are like Snowflakes").

Good luck to everyone as you start week 4 of this Challenge!!

I bought some lovely fruit from the market and some veggies as well. Cheaper and plenty to chose from unlike the supermarket which charges for the packaging.
I am making a lovely cottage pie tomorrow and will add plenty of vegetables to it and use sweet potoato to the mash for the topping.

I am actually pleased with my progress in including more veggies in my daily meals. My snacks are now celery stalks; I always like them but recently discovered just how much fiber it adds to my daily meals.

I'm taking fresh vege snacks to work now and also adding the occasional piece of fresh fruit. Am finding I will eat dried fruit and nuts more readily than fresh fruit though as it doesn't cause as much mess.

Enjoying getting more veggies back into my day! Impressed my grandma with the way we add veggies to things like our chili recipe :) and she was also surprised that we eat such a variety of veggies. Grateful to her for helping us buy the weeks groceries while we pull out if a rough spot. Thank you grandma!

Week 3 I didn't realize there were so many veggies out there! And who would have thunk I could sneak pureed cauliflower into delicious places like fruit smoothies and no one was the wiser! (except me of course) I couldn't keep the secret though and ended up telling my family. But they finished their smoothie just the same, only quieter!!

Saturday will be the end of my third week in the Challenge. Tonight is my weekly weigh-in. I'm hoping for at least a 3 lb. loss for the week, maybe more! I'm down 12 lbs. for 2013!

I spend Sunday afternoons to prepare most of my meals for the week. I have found it so much easier to come in from work with my meals prepared. It's less clean up during the week in the kitchen too, can't beat that!

Really feeling so much better about this challenge. Took the time last night after dinner to prepare extra lettuce, celery and peppers for the week. My daughter has been so supportive and I absolutely love her for helping me right now. Lots of extra hugs and words of encouragement from my 18 year old.

I agree with the prepping! If it's ready to grab, I will grab it.

I think half of eating healthy is being willing to take the time to prepare things from scratch. A little bit of forethought saves a whole lot of calories!

I'm making a point alot more to eating my veggies and fruit. With prepping the veggies up especially more, it's working. So much easier to stay within ranges, especially fat, when I remember the carrots, celery and radishes in the fridge! I try to include them in our meals more too.

I'm starting my ticker over with going low carb.

I am still working on adding more veggies and fruits to my diet. And I was already trying to cut out some processed stuff. This week I'm back on track! I find myself consciously planning to center my meals around vegetables. I try to be a little creative--like adding cooked veggies to a salad---to keep things interesting.

Still working on the fruits and veggies -- I like them a lot, but have learned not to assume I've had enough of them throughout the day without actually checking the numbers.

Week 3's challenge is not as difficult for me, since I'm doing most of those things already, but I'm still concentrating on good nutrition!

I'm doing great on the veggie consumption, reaching my goals up to 9 svgs most days. I look forward to the next phase, and concentrating on trying some new ones, and/or, preparing them differently. I'm love the articles for this week, and have a particular interest in beans, and learning more about them, and different ideas for recipes.

I have been doing really good at eating my full servings of veggies/fruits daily! My goal is to try super hard to remember to track my foods online. I have been writing them in a journal however. My goal is to make sure I am eating the correct amount of fats, protein and fiber daily as well as to keep exercising!

I am doing really well with fruits and veggies....which I like. I do need to broaden my choices though....I am in a rut.

One of my friends suggested Chia Seeds. His nutritionist suggested them....good for Omega 3's...and it helps the filling of fullness. It has helped me stay on task.

I have not been "perfect" but I have been pretty good.

I do ok eating fruits and vegies, but I tend to eat the same things. My goal this week is to retry veggies that I have tried in the past, but didn't really like too much. This week is brussel sprouts and maybe rutabagas. Have a great week everyone!

Soups is easy for me I love them and I make my own good and thick so they are filling.

Salad is added to meals or with a sandwich the leafy salads are great as they are full of flavour.

Fibre is easy to add as I like whole wheat pasta and brown rice along with wholegrain bread.

So far not doing too bad with this and finding new ways of adding foods that satify me.

After reading through the articles, I can easily add salads to my meals, not so much soups. There is just too much sodium in processed soups for me and I really don't care for my homemade attempts.

I am just starting out in making protein smoothies from fruit, nonfat yogurt, almond milk, and protein powder. They taste great, which is why I have been hesitant about adding spinach to them. One really can't notice the difference with, say, a cup of spinach thrown in there?

Fruit is not my favorite food group. I'd much rather eat my veggies. I've been making smoothies with fruit and yogurt but also throwing in a handful of spinach to get an extra veggie in. The smoothies are kind of ugly but they taste fine.

Good thing I have turkey bone broth in the freezer and took out a jar last night to defrost! Good timing. Plan is to bring more veggie filled broth based soups and green leafy salads into my menus. I can do that. It'll probably help me increase my fiber intake, which is always a problem. I already add chia seeds to my lunchtime yogurt, but need to add beans to my salads, maybe? That would increase protein, too. This could work... I'm also planning to use a recipe from Chef Meg to make a vegetable broth tomorrow, to use up some veggies before they are no longer useable.

Here we go for week 3! emoticon

Strawberries were on sale at my grocery store this week. Although they are not in season here, which means I shouldn't buy them, I did anyway. I thought that if I made smoothies with them, that would hide the bland, "off-season" taste.

I doubled my cardio kickboxing over the weekend, knowing I would be eating Chinese food at the Super Bowl. I guess I was too enthusiastic, because my left knee is protesting. I thought I was in shape enough to amp up my workout.
