Having just read the week two challenge before preparing dinner I decided to try to put it into practice immediately. I had picked corn and beans and we had those for dinner along with leftover potato salad from yesterday (carefully refrigerated). I had a large helping of green beans and about one and a half medium cobs of corn and was unable to finish my serving of potato salad. I also had served myself a baked chicken drumstick for protein. I ate the vegetables. I had to save the rest of my dinner and come back to it because otherwise I was under 900 calories for the day! The vegetables really do fill you up and of course corn is a starchy vegetable.

This challenge is at a good time for me because I have about every kind of vegetable you can think of growing in my garden and because we live in the south they are all ready to harvest to some extent already! Nothing tastes better than produce straight from the garden. Failing that try a farmers market.

JULIACOLLINS62: If you increase your fiber intake too quickly, you will get "stopped up." Keep up with it on your nutrition tracker. Beans are very high in fiber. I've read that things will eventually return to normal, but the wait can be uncomfortable. back off on the beans!

My mystery food is lightly salted Almonds - it is a mystery to me why I never tried this before as a late night snack while watching TV. A 1/2 oz works for me - low in carbs, gives me chewing and satisfying....I'se happy!!!

I grated fennel, I have never had it raw before and it is delicious. I love my veggies!

Wow - I tried a seaweed salad at Costco. The only think I have ever tried that I had to spit out! It was not nice! Too funny. I'm not saying I wouldn't try it in another form though.

To eat more veggies, I substituted mushrooms, red bell pepper, and tofu to fill my enchiladas instead of cheese & onions. They were yummy and we didn't even miss all the cheese.

In addition to pushing water, you might want to also make sure you're eating some veggies like carrots, broccoli and lettuce that will give you roughage but not absorb a lot of water.

It is amazing how much our bodies do react to the fuel we give them.

The mystery food is veggies. The official goals for week one were to find your range, consider mini-meals, and find out how to get your trophy. I think the whole idea is to eat more veggies, so that is how it got a bit conflated, I think.
As for the beans question - if you don't drink enough water, it can cause you to get stopped up - push the water - beans are a great source of fiber, but like all fiber sources, they require water to, um, "move things along!"

So I'm confused along with Heidi. I also thought week 1 was 5 servings of veggies. Week 1 I went some days with 2 and other days with 12 emoticon
Is this a type of "yo-yo diet" or what emoticon .
I bought some frozen Kale, and I'm trying to incorporate that this week.
I get plenty of fruit. I have counted beans ( like Navy, pinto & black) as veggies. I hope I understand right.
Ever since week 1 my "body internal pipes" have been stopped up so to speak. I would have thought just the opposite would be the case. I also gained 2# since starting the challenge trying my best to met the calorie range of 1250.
But, I'm going to continue doing as prescribe by the challenge and food tracker and hope things let loose ... Literally.
Question ... Can beans stop a person up? I get 8+ cups of water intake each day besides other liquids.
Nothing else has changed in my life over the past week. I'm just going to go forward on faith.

You are correct. There is no mystery. It says regarding getting in your 5 veggies: "Vegetables are low in calories, high in water and fiber (which fill you up), and rich in nutrients. They are your weight-loss ally! The more vegetables you can eat during your meals and snacks, the higher the volume of food you can consume without overeating on calories."

Then the articles tell you to try a variety of veggies, to find those you like. This goes for fruits too. emoticon
