I have worked really hard this week to add veggies into my day. I have upped my veggies to at least 5 servings a day. My dinner plate has been at least half full of stacked high veggies. I am so proud of myself!

I love love veggies, so finding and enjoying them is no problem. Week one was an eye opener for me though, I'm an evening snacker and that's when I'd consume the worst food and the most quantities. Working on the emotional eating this week, while continuing to plan meals and snacks!

I have been eating a lot of cake the last few days because of my Birthday. I was surprised to see that I maintained my weight and not gained. I need to eat better this week. Started day with veggies for breakfast.

The first week of this challenge I ate over eight servings of vegetables a day plus four more servings of fruit. A number of days, I ate ten. I doubt I could eat more. I think I have this vegetable thing down, but I might try to add more types of vegetables since most of my vegetables have been salad ones.

Today was my Birthday and my daughter bought me a very fattening cake from Dillon's. It was a marble layered cake with Chocolate filling in between the layers. It also had whipping cream, Cookies and very large strawberries as decoration on the cake. I ate a thin piece and gave my 2 son's and grandson big pieces so not much left. My son made enchiladas and cheesecake. I did eat a big piece and I am still hungry so will go get some veggies.

I'm doing better eating more veggies. I always take some to work in baggies for an afternoon snack, but I am adding some to my eggs for breakfast and trying to add more to the rest of my meals.

My office brought in a fresh fruit and veggie tray the other day so I had no excuses! emoticon

I'm doing fine incorporating veggies to my meals. I love salads.
Long, long, time ago, I followed the WW diet. I had to eat a lot of veggies in soups and salads. After a while, I started to look forward to have a salad. It was unbelievable that I craved for salads instead of junk food.

Last weeks challenge of eating more veggie, was fun! I added them as snacks! I ALWAYS have a quart sized bag of chopped veggies ready to go! I grab them as I run out the door. I keep them cold in my nifty 'lunch pail' from Trader Joes. Frozen water, too!

I'm feeling SO much better! I also made Green lenonaid, last week, see my Blog!

Am finding veggies surprisingly easy to incorporate, especially with the previously-mentioned use of V8. I'm hoping to get a chance to try a few new ones this week, too. The go-to carrots/salsa/mushrooms/etc. are good for now, but I don't want to get bored! Anyone have more Spark Recipes or other suggestions for things to try? Might give kale chips a go once I'm able to stop by the grocery store....

Vegies is never a problem for me, it's fruit. I'm not a big fruit lover. But I believe fruit is a large part of how my mother has lived to be 93. She loves fruit. But the rest of her diet and lifestyle are not so good. But she thrives on fruits.

I think I can. I know I can. I will.

I've been having a green smoothie everyday for breakfast - 3 servings of fruits and 4 of veggies. I usually have a soup with at least 2 servings of veggies. Also, I always use side dishes of veggies like Brussels sprouts or cauliflower sprinkled with vinaigrette with fish or meat. And of course, salads count for at least 3 servings of veggies.
I started easy, including little by little more veggies to my meals. My first change was to have the green smoothies.

I need to buy more vegs so they are available when I go to eat. An entree salad (preferably home-made) can have 3 or more servings of vegetables... e.g. chicken caesar or taco salad made with low fat % meat or TVP. For caesar I like the yogurt dressings... Marie's or Bolthouse Farms. For taco salad I make a dressing of 1/2 Greek yogurt and 1/2 salsa.

I really like veggies and have started making ginormous salads and saving half (or more) so I don't have to spend all my time chopping. I eat salad for lunch and with dinner -- chopped small and with lots and lots of color. And I make an oil-free, tomato-based balsamic vinegar dressing. So, eating enough veggies has been no problem this week.

Week 2: Doing good with my low carb eating. Veggies are - salad with peppers, carrots, onion, tomato and light dressing. Late night snack is Almonds 1/2 oz and Atkins Chocolate Shake if needed...working for me as I am Diabetic and my sugar reading have really improved...

Workdays are easy for me because I pack a snack and lunch that contains
celery and light laughing cow cheese (snack)
mini carrots
a large mixed greens salad with about 20 grape tomatoes
a piece of fruit (although this isn't part of the 5 veggies)

I think the salad counts as at least two servings, so that would be 4. So I only need a serving of veggies at supper and I have 5. I like most veggies so I often have two servings at supper.

Weekends are tougher since they're less structured.

My two new veggies this week are baby bok choy and a bag of kale salad that I got at costco.

So far week 2 has been an utter failure for me. I will be repeating this week. The changes I will be making:

1. HAVE A PLAN

If I write down the vegetables I will try to incorporate each day, and have them on hand straight away - it should me an easier time for me. I feel poorly seeing how easy it seems for so many others, but. I hope having a plan will put me on the path to success.

I think I'm going to dwell on week 2 for another week. I had a few days where I did get in a lot of veggies, but I still have some work to do. I definitely notice that when I make a point to have vegetables that I eat a lot less of other food.

I think it helps to remember how much a serving of veggies is. If you fill half your plate with nice roasted broccoli, cauliflower and carrots, that is far more than just one serving.

Starting out with a smoothie with kale and spinach this morning. Have plans for snacks with celery and red bell peppers. More veggies at lunch and dinner. No problems getting my veggies today.

DEFINITELY a challange. 5 vegetables and fruits no big deal, but 5 veg? yeah. I started eating hopefully 2 servings with breakfast (spinach and peppers or broccoli or whatev. with an egg and a little sprinkle of cheese), then salad with lunch. maybe enough salad to count for 2 servings. Or some cooked frozen veg... and then hopefully a cooked veg and a salad with dinner. But on days when i have a breakfast meeting or am in a hurry and need to just grab cereal it lowers the count and it's hard to catch up! plus salad is only interesting for so long. We put some fruit in it these days -- apples, strawberries, citrus. whatever's around.

What's also complicated is i'm working to avoid all products that are sweetened (either with sugar or artificial stuff) for lent. So most all salad dressings are out. amazing how many have HFCS in them, or sugar! I'm down to plain balsamic vinegar (love the flavored aged ones from specialty cooking stores!).

Enjoyed reading everyone's ideas for how to include more veg. I'd forgotten about the v8 juice! that's a good idea.

This is going to be hard for me. I really like veggies, but 5 servings is a lot compared to what I'm eating now. I usually track fruits and veggies together, and I eat quite a bit of fruit. I'll probably prepare this weekend by stocking up on more veggies when I go grocery shopping and do Week 2 of this challenge next week. I'm totally excited about the challenge now that I'm thinking about it.

winding down from week 2-can't wait to see what week 3 will present to me as a challenge! While I did not hit 5 veggies everyday-I looked back and saw that I averaged 5 a day-hope that is a step in the right direction-while I might be short one day, I like that I didn't just stop my veggies because I hit the goal of 5. Not too many veggies I don't like or haven't tried so except for lima beans (yuck!) the second part of week 2 challenge emoticon was a breeze. I have been fortunate to have lived all over the United States as well as Japan and Germany while visiting Canada, Mexico, and the Caribbean in my travels so have had the wonderful experience of the local fares of different regions including the presentation of vegetables in many different ways.

okay-so today did not go as planned. Because of the weather, my schedule needed to be doubled up in places-no, this is not an excuse-just trying to figure out how to avoid not meeting my calorie range or veggies as I did today. I am a dog walker-cat caregiver and today was so cold in the AM that my clients that would regularly be fed, walked, and put out in their play area until late afternoon was not doable. So I found myself retracing my AM route to be sure that when it got a little warmer with full sunshine I could let them out to play. My break between clients was diminished. Got to the gym, which was a good thing-really helped to let me take a deep breath and restructure my day, unfortunately not so much in the right direction for the nutrition part of my day. Tomorrow will be better. Every day is a another chance to get it to work better. emoticon

Crazy last two days! It is really a challenge to stay on track with my goals and still keep my schedule for work. Will have to try a new approach tomorrow-don't want to keep doing the same thing and expect a different result at the end of the day. @Slachetka-So sorry to hear about the cancer and chemo-glad you're staying on track. I think any steps to maintain a healthy schedule will be an advantage in the weeks ahead. You are in my prayers.
Got my shopping done today and kept in mind the menu and remembered to add extra veggies to the buggy for the upcoming meals. I have a pretty hectic schedule for the next 2 weeks so wanted to make a point of being sure to have all the good stuff on hand. Want to be sure that I have good choices to throw in the travel bag for the road. No excuses! emoticon

I do feel like i have more energy, but weight wise, i went up a pund, maybe because im not used to eating this much... but i am working out 5 days a week now too... i just have to try everything and finish this challange before switching to anything else :D

Feel funny replying to myself..oh well!

I am on track and holding my own....Eating my veggies and working on fruit!

Did get some bad info as the results are in and the cancer is back...will start chemo in the next 2-6 weeks. So thanks for all of your support. I wrote my blog on how I will be handling so feel free to drop by!

I will finish this challenge!!!

Had about 6.5 servings veggies stayed under calories and exercised!

I have already tried both new recipes and a new cook method, but one thing that I learned long ago is that I don't tire of food when I am creative...I have been able to get my meat eating hubby on meatless days at least 4 days a week and he enjoys every meal!

All in all, I think that I can say that I am on target! My mood is improving with a total program that is for sure!

good for you...i did okay yesterday and planning on getting them all in today.. wed. i plan on cooking a big pot of corned beef and cabbage... i do get my fill of it each year... i love steamed cabbage any time... but corned beef is once year..

Day 3 of Week 2 met veggie quota! wound up eating 7.5 veggie servings and stayed under my caloric level. I also completed my fitness exercises and maintained my weight! I love veggies and eat them many many ways! I am surprised at how quickly my mood is changing! Being able to exercise has really been a boost!

hey everyone.... i didn't do so well on my veggies yesterday.... got off 7 am and had to be back to work 6pm...... second shift is hard to get any food in.. only couple of applesauce cups... making up for it... after work i went to walmart and got a few premade salads.. eating one as i am catching up on mail...

I am getting much better with my veggies - I still do not like them, but I have a healthy respect for them, and what they do for my body. My biggest struggle seems to be getting enough fiber.

I like fruit best but it's so hard to find good stuff in the winterso then it's apples clementines and frozen fruit. I am not good at snacking with veggies. I generally eat most at lunch and dinner. Need to be careful with my snacks tho. This week has been tough at work and find myself eating extra. Since I'm at a desk I can't get up and walk it off whenever I need to!

Listening to all the comments of snow in New England. Portland got 29 inches!!! Saw a reporter standing out in the wind last night almost getting blown over. The snow was blowing sideways then. Hope all stay safe and warm.

Doing ok but need to do better. Fruit and veggies are good, I eat plenty of those. It is the bordom muchies that get me. Must find something to keep my hands busy! emoticon

I am on week two also. Beginning of the week was rather hard. We lost our dog who was 13 yrs old. but I think I am back on track. Never have a problem with the fruit as I can usually get about 2-3 of those in a day. for me it's the veggies. Especially at night at the beginning of the week due to my son's crazy after school activities which don't end until after 9pm. So we do a lot of eat on the run. Hoping this will improve in week three.

Doing really good getting in my veggies. Got in at least 12 servings today. Normally it has been 5-8. I start with veggies in my eggs. I easily get 3 servings with breakfast. Since I love veggies and fruit it is not hard to get them in. My problem with weight is more because of emotional eating. Not that I don't know how to eat healthy.

Even though the temps are still in the freeze zone, make gazpacho.

On the "Warm-me-up" side make veggie lasagna. Instead of pasta use finely sliced egg-plant, butternut squash, or protabello mushrooms. Better yet for each layer use some of each. emoticon

Its great to see so many of us are using V8 juice to get us started on the Veggie trail
instead of buying a cabbage and chopping it up for stir fry i bought a package of coleslaw so got a few other veggies in as well. going to make some lentils tomorrow funny i live in one of the areas that grows them and have not fixed them but maybe one time found a soup recipe in the Spark cook book i want to try.. week two is go fair but I am learning so that helps

Week 2 - so far so good. I am so thankful for V8 fusion and it counting as 1 fruit and 1 veggie. Being the veggie disliker (not hater) that I am....these really help bridge the gap!

I've been trying so hard to get my 5 veggies in each day and with working harder at it, it's been working! I can hardly believe it, because I'm not as much of a veggie eater as I am with fruit. But with making a point to buy them and prep them right away and then remembering them, I've been doing it. So it is possible and I need to remember my low-sodium V-8 that I have, in little cans in the fridge yet. I'm so glad that they don't spoil as fast as fresh veggies! emoticon

I'm starting my ticker over with going low carb.

. This has been a real kick start for me after a very long time in Mt. Plateau. I have dropped a couple of pounds so far and can't wait to get on the scale this week. Thank you so much. I am working out at the y 3 days a week now and swimming twice a week. I'm back to drinking my fluid amount every day. I never had a hard time with veggies and I feel like I'm eating more than I have in a very long time. Maggie

I am still taking my fruit and vegetable supplements which help a lot

I love V8 Juice. If you have to watch sodium be sure to check out the salt content. Even the low-sodium. If that is not a problem for you, the go for it and enjoy it for me too!

This may not be hard for some Sparkers but getting that many veggies in for me is hard
I was talking to friend and she told to use V 8 juice and make veggie soup in place of plain tomato juice. Drink a glass for snack some days and to remember how good Peanut butter and celery is for a snack. I will be checking out the V8 juice label next time I go shopping. Enjoying the two DASH books I checked out from the library
