I have no issue with fruits and veggies. I pack baby carrots each day for my lunch. I buy prewashed salad mix to make it easier. I spurge on fresh berries and those bags of veggies that I just throw in the microwave.

Tip: Marinara sauce makes any veggie taste better. I use it on broccoli and cabbage that has been in the fridge too long.

So I really don't like many veggies, but l like corn on cob or cream corn and I will eat salads sometimes otherwise I seem to eat more fruit than anything. I'm losing weight with my exercise and food choices this time at least.

I made a LOT of progress with week 1. I think I found my calorie range. That was helpful to adjust it on SP nutrition tracker so I always thought that I was under range when I really was not. I like this week 2 challenge already. I make a lot of fruit smoothies (going to look into protein shakes/supplements because I am a vegetarian).

We've been buying salads from Costco and have a salad with every meal topped with cucumbers, onions, tomatoes which has really increased our veggie intake as a family. Baked potatoes are a favorite with my family and we use greek yogurt (fage is the brand we use) instead of sour cream and we can't tell a difference. Switched to smartbalance butter.

We used egg whites now and mix it with salsa.

We keep baby carrots on hand for road trips and for snacks. It is working well!

Well this will be my week 2 and I must admit I will have to work at this. Eating my veggies. I do at times but I need to be consistent. I am learning to use or prepare veggies in another way beside sauteing them. Forward............... emoticon .

This is a great site. I am thrilled to be back tracking my nutrition and fitness regularly - it makes a big difference. I have been following the meal plans and substituting where necessary and it is working. I feel better and I know that I am making the right choices! Getting all the veggies is a conscious workout for me! I can get fruits okay. My husband doesn't eat a lot of veggies so don't like to fuss with cooking for just me; going to change that outlook this week. Last week I quickly looked over the meal planner but didn't go back to it; today I spent more time really looking at the suggestions for week 1 and 2 and was blown away by the variety and tasty looking suggestions. This week I will incorporate some of those suggestions. I love this website. For the first time in my MANY years and attempts at losing and keeping off weight I truly believe I will be successful this time thanks to SP.

Veggies and fruit are never a problem for me, meat is my problem. You can only eat so much beans and tofu. This week is easy peasy.

Hurray for all of us starting Week 2 and/or continuing Week 2. Conscious eating is what I am working on - enjoying each food and not just inhaling it and wondering if I liked anything I just ate. It seems to be working - simple meals for me and eating more slowly! Yea us! emoticon

Started Week 2 today - I love all kinds of fruits and veggies. I am using the Spark People meal plans and that really helps me get my fruits and veggies in - even if I trade out for other than what is on the plan - just depends on what I have on hand. Week 1 went very well for me - it is good to be back on Spark and tracking. Now, to track my fitness - although this past week sort of biffed - tomorrow starts a new week of mileage for me toward my Niagara Falls 1/2 Marathon the beginning of June! I want to feel more fit and this is helping me get there. I was browsing the comments and was reminded of a smoothie I like - kale, cucumber, celery, banana and blueberries - I add almond milk or coconut water - YUM! emoticon emoticon

Columbine2: I feel the same way about spinach. I'm eating a bundle of spinach every day. It's all good for me so I don't complain. A serving can vary depending on what vegetable you are eating. I enter the vegetable I plan to eat into my tracker and it lets me know how much I need to eat to equal one serving. To help me get enough vegetables I make an avocado or chick pea (humus) puree with some garlic and onion powder (using fresh is better though) and fresh herb if I have some and spread that on a thin cracker for planned snacks with a carrot or celery stick. I put kale and spinach into almost every casserole or stew or soup I make to give it added nutrients. If you are having problems finding ways to get enough vegetables I find making up a batch of vegetable soup helps me control the salt and fat and the flavors are more enjoyable than canned soups. If I'm lacking protein I can just add some leftover chicken or beef to my soup. I practically live on soups and salads now and you can change the flavor profile by adding different spices (I experiment a lot with this item recently discovering ground Sumac), for an Italian, South American, Indonesian or an Indian flavor. I recently watched a documentary where they compared two army companies with one group eating a regularly cooked meal of meat, potatoes, and vegetables, while a second ate the same food containing all the same nutrients and calories but prepared into a soup form. After eating both teams went out for drill and training as normal. The team that ate the food cooked the normal regular way mentioned that around 3 pm. they began to feel hungry. The team that ate the soup reported that at 5 pm. they still did not feel the need to eat. Kind of makes you think how much better our diets would be if we all would take the time to prepare (from scratch ourselves) at least one soup for lunch each day.

I wonder if I misunderstood the assignment. My interpretation was that we should attempt to include 5 servings of veggies (1 serving of carrots is a cup, etc. or a cup of lettuce or a small apple). Cooked veggies would be smaller (1/2 cup of broccoli, etc.)

Could someone clarify this for me? It seems I'm eating carrots, celery, etc. all day! I think I feel rabbit ears growing on my head, but if it'll help me lose weight..I'll do it!

like a lot of vegetables so this one isn't too hard for me. I just use at lest 3 in my morning omelette. usually lettuce with lunch and one veg at dinner. I works for me to get 5 in a day. keep trying you can do it.

I find smoothies are a great way to get in the vegetables. I make smoothies with kale, cucumber, celery, spinach (4 vegs); and frozen blueberries and 1/2 banana (2 fruits). So that's already 6 servings. Smoothies are a great way to try different vegetables. I also make a lot of vegetarian soups.

I'm sticking with this week's challenge again to get the 5 veggies. V-8 plugs up my G-I system, so can't just load up on that. It's a challenge for me...but I know itll be an improvement once I get the hang of it!

I have been doing great getting at least 5 veggies and 2 fruit a day (up from 4 or 5 total). I have been having stomach aches since I made this change. Anyone else having a tummy reaction to extra veggies or is it just me?

No legumes are legumes.
This week will be the easiest for me!! It's a small challenge to eat 5 servings a day so I stock up on v8 and get 2 servings in one cup. Easy! I love veggies!!

Can we count beans or lentils as a veggie? Since they are legumes I have never added them to my veggie list. To get my veggies in I have added a serving to my eggs in the morning (yuck!) and a serving to my wrap at lunch (yum). In the afternoon I was going to have a serving as a snack but I was sidetracked by hungry children and had something less healthy.

Found a great recipe for spicy lentil soup.

25 oz bag of red split lentils (green will do but red is better) washed and drained.
1 1/2 pints water
1/2 tsp ground Turmeric
salt to taste
1 inch fresh ginger peeled and chopped
1 tbsp. fennel seeds
1/2 tbsp. Cardoman
3 bay leaves
1 Tsp mace1 tbsp. Coreandor
2 mild green chilies seeded and chopped
Add any fresh veggies you prefer. I added the following.
1 turnip chopped
1 Rutabaga chopped
Carrots, celery, onions, cabbage, red bell peppers all chopped
I even added a 1/2 bag of left over romaine lettuce
Place in large crock pot and cook on med all day
I have been eating 1 bowl a day. This will also act as a cleanse be careful of the amount you eat.

Golfmomma, I am glad that you posted that point! I didn't notice that it was 5 veggies (not fruit and veggies), That is going to be difficult this week. I have managed to get 6 fruit and veggies a day for the last three days but probably no more than 3 a day were veggies.

It has been a little difficult for me to get in the 5 fruits/veggies. I have found that what works for me is to make sure I am eating a fruit or veggie with each meal/snack. I finally am on track with that!!

Whether I think I can or I think I can't, I am right.

I am half way through the second week and ate very little on Sunday due to a migraine. I think I will sign myself an excuse for that day. LOL Anyway, I find it difficult to try new fresh vegetables in the rural area where we live. So, I think the new recipe thing would be a better thing for me to try. I made the chicken salsa for the first time on Saturday. I know it is mostly chicken, but it called for four different kinds of vegetables and it was new to me. Thinking about doing a baked carrot dish for supper. Have you noticed that some veggies have a half cup for a serving and some have a cup? Sometimes a little hard to keep track of.

I made it though week two with the help of green giant single servings. I love eating them with lunch and dinner. I like to grab a bag of veggies on my way out the door and while watching TV. I prepare them after heading to the store.

Veggie week! emoticon You'd think this would be easy now that I'm retired and no longer brown bagging lunch.Getting my veggies was easier when I packed my lunch every day. Fresh, crunchy veggies were standard fair for lunch and snack. Now that I eat every meal at home with a hubby who avoids vegetables unless they are part of the main dish, it's more of a challenge. I'll do a little of both -- stash some pre-sliced veggie bags in the fridge for my snacks and find some new, exciting ways to include veggies with the entrees for dinner.

just starting week 2 after a high of losing 3lb in my first week back on spark (and this team) - and no I didn't do week 1 100% I fell off track for 1.5 days but I'm still mega happy to have made some progress.

Week 2 has been a work in progress for my family for some time - I'm trying to make sure we all eat healthier so have been gradually upping the fruit and veggies - so I am going to do this. For me its going to be 5 veggies and fruit are bonus on top of that (I could eat fruit all day so that's not really a challenge).

We can do this !! keep sparking :D

I have also been buying Green Giant single service veggies, they are pretty good. My favorite is broccoli and rice. I have been eating carrots it helps that my dog likes carrots too.

It says 5 veggies, so I took that literally and have been trying to get 5 vegetables plus some fruit. My norm is to get 2-3 fruits and 1 or 2 veggies. If I have to add extra, I usually add fruit. so I'm really having to plan with the veggies.

If you follow the spark meal plans at all, mine come with 3 veggies and 3 fruits on each days menus.

LNSYLVSDOGS, I'm not sure but I think its 5 serving total...If we ate 5 servings of fruit each day it might be to much sugar even though its natural sugars.. I just eat 5 total...
My goals for week to are going to be easy:
I cook with vegetables and love to eat fruit with my lunch and supper.

This feels like a stupid question. But, I'm wondering if we are supposed to be getting 5 servings of vegetables PLUS 5 servings of fruit a day, which REALLY means 10 servings total? OR, do we divide it up and say we're aiming for 5 servings of fruits & veggies, which really equals 5 servings total????

I have been getting in more veggies by making/buying vegetable smoothies ! I did not think I would like them but you can sweeten then up w/ some fruit and have 5 servings in one drink ! ( and they keep the hunger away) emoticon emoticon

I feel I did really well this past week. My favorite meal so far has been taking a Tastefully Simple soup (potato cheddar, 160 calories per 1 cup serving) and adding kale and leeks to it. It was very filling and the kale really boosted it's nutritional value.

The article included with Week 2 really hit home with me. It is absolutely true that we learn to love vegetables if we begin eating them. I started out with only two vegetables that I loved, broccoli and asparagus (I try to avoid corn due to the starch and increased calories in comparison with green veggies), and I now find myself eating vegetables that I used to turn my nose up at. Even better, I actually like them! What I have discovered is that I don't hate vegetables - I hate canned vegetables. As long as I buy fresh or frozen, I have no trouble at all eating them. If you don't care for veggies, I encourage you to check out recipes and other resources that will help you incorporate them into your day. You will be amazed at how your taste buds wake up!

try making a smoothie and use fresh or frozen fruit, use unsweetned fruit juice in the smoothie and greek yogurt. You would be surprised at how veggies taste when incorporated this way! one of my faves is kale, spinach, carrots, green apple, banana, and cranberry juice or pink grapefruit juice.. Blend away and enjoy! Thats at least three servings in a glass

I had the same problem with getting more fruits and veggies into my diet; what helped me was purchasing a nutribullet. Even before the purchase I would use my blender to make veggie/fruit smoothies in the morning.

I have been trying to incorporate veggies and fruits more. I even set it as one of my goals on my start page. And my Sparkpage is COVERED in them for inspiration! I love cucumbers all by themselves, but I just had a cucumber and cream cheese sandwich for lunch. I have been packing snap peas and celery as munchie foods when I go to work. And I keep bags of steamer veggies in the fridge to add to my protein with my meals. I find I need to feel full and veggies do that! Fruits are my downfall. I am super picky and it's winter. But I also identified that I lack in calcium, so I have been making non-fat greek yogurt, with that less than stellar fruit mixed in, as smoothies . And as a bonus, my teenage daughter loves them! We both need more protein and I buy a yogurt with 22g/1cup serving. (so it's 11g/smoothie!).

I find it easy to get my veggies in. With all my meals, I look for how to sneak in 1-2 vegetables. It bulks up what I'm eating (helping my eyes and my belly), and it makes me feel good that I'm doing it :)

I am unclear about what is wanted. I already do 5 servings of fruits and vegetables in combination. Are you asking us to eat 5 servings of vegetables in addition to any fruit we are eating, or some fruit servings and some vegetable servings to total 5 servings of fruits/vegetables?

I'm trying to add a salad in every night before my meal & a fruit a day but it is hard to get the fruit & vegetables in but I have more trouble with protein. I will try extra hard this week for the fruit & vegetable.

I am with you, ACWOMAN. It's difficult to get those 5 serv's of fruits & veggies in! If it helps, a serving is about 1/2 C. SO, if you're eating an orange, for instance, you may be getting 2 serv's with just that 1 orange. I'm lucky if I get 2 servings of these a day. DD just asked me to get fresh (baby) carrots & broccoli, to go with dip. I have dip mixes that I buy from a local person & I usually mix them up with Greek yogurt (instead of mayo & sour cream). I generally don't go for the fruit juices, but maybe some of the V8 versions would be good? Idk. Awhile back, DH & I decided that we would ALWAYS have a veggie with dinner, no matter what. I think this should also be our goal for lunch, as well. As a kid, my mom would never make a PB sandwich without a piece of lettuce in it. LOL. My fam used to always have a salad with dinner, plus a veggie. So, maybe I need to go back to those old stand bys & then some.... Ideas welcomed!

I don't know why, but I'm having great difficulty getting in fruits andveggies. You all seem to do great. Can anyone give me some idea how to get so many servings in? I have glass of orange juice in the morning and sometimes a fruit cup and an individual serving frozen veggies during day. But I have problem chewing and digesting fresh fruits and veggies.
Oh, I did lose 1 pound this week! And did two days of walking, but only for 10-15 minutes each day.

I'm lucky because I love fruits and vegetables and have had fun thinking of ways to increase them. I've bumped my intake up to 7 or more servings a day most days.

I always have fruit of some kind at breakfast, topping my yogurt or after I finish the rest of the meal.

For lunch, I've been adding petite diced tomatoes to soups like the Progresso Light varieties, or ha.ving pumpkin or squash soup. I add fresh kale to my sandwiches and wraps instead of lettuce or I'll get baby spinach and use that. I put celery sticks on my sandwiches and wraps to add crunch. Cherry tomatoes, baby carrots and mini red peppers are extras and I use at least 2 of these as sides with lunch.

I add the above petite diced tomatoes to casseroles and buy frozen chopped onions, mushrooms, carrots, celery, peppers so I always have some on hand to add to the things I cook.

I also keep little cans of V8 juice so I can carry them with me to have with a planned snack if I'm out and about.

I usually have no problem eating veggies, and incorporating them into meals. I eat veggies usually with lunch AND dinner. My problem is incorporating fruits. I'd like to eat fruit for breakfast, or incorporate it somehow, and maybe even as snacks. Does anybody have any creative ideas for eating fruits?? emoticon

I usually eat a lot of vegies without thinking too much about it. This challenge has made me think more about the variety as well as the number of vegies. I need to start planning snacks with vegies. I've been more likely to have fruit as snacks but find that vegies usually keep me satisfied longer.

I really see the point of this veggie challenge. One day this week, I ate so much and still never reached my calorie range. I know this is a no no, but after that I made sure to hit it. It blows my mind how full and satisfied it makes me feel. I also found some new recipes. This week's actions items match our group name to a tee! I almost forgot I lost 3 lbs. this week!

I'm excited to start week two. I am feeling better physically being back on watching my calories and exercising regularly. This turned out to be a good beginning challenge for me. It took me back through the basics and I really needed a reminder on portion sizes. I am making a big pot of chicken tortilla soup today which has several veggies. Hope everyone is doing well!

5 a day. Wow. This doesn't sound like a lot but trying it and it is HARD for me!

Today,
Post Raisin bran cereal with a banana cut up in it. (1)
Subway 6" Turkey breast sandwich (I am assuming that the lettuce, tomato, olives, and green peppers will count as 1? ) (1)
Snack: 3 oz of baby carrots (1)
Supper: Vegetable Medley, bbq shredded pork, baked potato (1)

That is only 4 and this is a "good" veggie day for me. This will definitely be a goal to strive for. I downloaded the September Veggie Calendar. Hopefully that will help!

I found that veggies and fruits from Farmer's Markets wonderful and I actually crave them. They have so much flavor, a tomato from the market tastes like a tomato I remember as a kid.
