I only ate those few calories that one day ... I was trying to see if that would help me lose weight, it didn't. I am now try to stay within the calories I'm suppose to. Hopefully that will help me lose weight because nothing else has.

Hello, ENGLISHGIRL~ If you don't consume enough food your body will go into starvation mode. Your body will burn calories trying to digest food. For me, that's what I understand about this challenge is to eat more veggies and fruit along with other healthy food choice. It's frustrating when you follow your plan and the scale doesn't cooperate. It will happen, just not as quickly as we'd like. Hang in there. You're on the right track.

SPEDED2. I don't always track what I eat, but I did yesterday, I ate a ham and Swiss cheese sandwich for lunch yesterday (4 slices of thin sliced ham and 2 slices of Swiss cheese with two leaves of lettuce on whole wheat bread) and a all glass of iced tea. My calorie count for the day, 584 calories. I did not eat breakfast of dinner. This is why I get so frustrated, I don't eat a lot, but my weight goes up anyhow. Any suggestions, I'm sure open to them! I forgot, I ate an apple later in the day.

What articles are you referring to? I'm completely lost! Whoops, should have gone through all of todays emails before asking this question ... sorry!

I have tried so hard to eat more veggies and fruits and I have, but darn it, my weight still went up, what in the dickens am I doing wrong?

Due to my heart, my exercise is limited!

I have enjoyed reading how other people have increased their fruit and vegetable intake in different ways. I have learned to like vegetables a lot - and I also find that a funsize (small) apple can fill me up as a snack or after a meal. Like another recent commenter, I have begun making vegetable soups several times during the week. They are easy to make, very filling. If you use bread with them you don't need butter the bread, and they are such a good way to use up the bits of vegetables in your fridge.

I have been really messed up on what a serving of veggies and fruits are. Last week I read a few articles and discovered frozen veggies are just as healthy for you as fresh ones which I was so happy about. I hate can ones and I like the veggie trays but I'm not quit sure what to do with raw ones. I went to the store and tried 3 new single servings of stemmed veggies and I loved them. Unsure if I can get in 5 a day! I did 2 last week!

I don't really have to difficult of a time eating 5 servings of vegetable a day. Fruit is a bit harder for me as I have certain times of years that I have no problem eating fruit but other times of year I don't care for what is in season. Also, it is harder to eat fruit because they seem to have more calories that veggies and the sugar in them makes me want more than I want to spend calories on. But veggies, I love them all the time!

I'm adding a salad to every lunch and dinner meal to get my daily dose of veggies. If you know me then you know this is a big step because I don't like salads.

Got my asparagus and swiss chards & kale mix. Tonight I am doing a stirfry with the swiss chards & kale mix and using sliced boneless pork loin in it. Decided to reach my goal for week 2 I needed to stick with doing veggies and fruits. I am more apt to grab a fruit as a snack and eat veggies with a meal. Proud of myself since I've been spring cleaning and de-cluttering 1 room at a time, meaning I don't really want to cook by the end of the day. I did go to McD's last night but I opted for chicken nuggets and a side salad. Let the guys eat Big Macs, fries, and apple pies. I was satisfied with the salad and nuggets, which is emoticon Saw I was still under in calories for the range so, I had a yoplait light yogurt and del monte lite peaches for a nighttime snack. Focus on the veggies & fruits and staying active, watching in my tracking so when I feel hungry I can see where exactly I am lacking: is it fiber, folates, protein, fat- action plan after find a healthy food to fill the void.

Hi, I got the official link that I am now in week 2. Here is my question- Do I have to focus on getting 5 servings of just Veggies or is it Veggies and Fruit? emoticon emoticon
I already have that set as one of my daily goal if its veggies & fruits so this is going to be a great week. I plan on adding some new fresh veggie varieties to my family's menu this week- asparagus, snap peas, and whatever else I can currently see that looks good at SAMS club. Maybe I will try the swiss chard and kale mix to saute in olive oil? Has anyone done this?
Still sticking to my calorie range and aiming for 2000 calories burned in exercise per week or above. This keeps me pushing forward, being active, and not plopping down after work.
Think I might post around the house-
EAT VEGGIES NOT BE A VEGETABLE SITTING DOWN, something along those lines.

I have embraced my local produce co-op opportunities. I love getting my basket and learning what to do with the veggies. Most of them are the usual suspects, but every once in a while I get thrown a curve ball. Vegetable soups are my newest toy. Three interesting soups last week. Loved them all.

Just finished week two. My main new vegetable that I experimented with was kale. My daughter had made kale chips before, but I found the taste to be kind of strong. I made this Creamy Kale Mexican Salad which I loved: http://ifoodreal.com/healthy-creamy-mexica

Just pinned a Light Broccoli Pasta Salad recipe on Pinterest. Right now all my recipes are just under Fabulous Foods. Think I need to start a board just for vegetables and one for main dishes with vegetables. If I go through and sort my recipes into these boards, they'll be easy to find when I need to plan for the week. Something to work on this evening:)

Just starting week 2 of the challenge. One idea I liked from the articles was to put the vegetables in with other foods. Today I am making a chicken pot pie and will use frozen mixed vegetables in it. Tomorrow night I am making sausage patties. I have never tried adding grated carrots, but I am going to try it this time. My daughter often sautes onions, garlic, yellow summer squash, zucchini, and mushrooms and adds them to spaghetti sauce. Right now I am avoiding tomato because of a problem with LPR (acid reflux) so I am thinking maybe I could saute the veggies and cook some ground beef, sausage, or even chicken with them and serve over rice or pasta without the tomato sauce.

Another idea was to mix the vegetables. I especially like this Black Bean and Corn Salad by Rachel Ray.http://www.foodnetwork.com/recipes/rac

ipe.html The lime in it makes it delicious. Perhaps I could use lime on some other vegetables? Also I have found I can use hummus instead of mayonaise to make some vegetable salads. (Mix peas, chopped onion, chopped dill pickle, crumbled bacon and a little cheddar cheese with hummus)

I think preparation time has been what keeps me from using more veggies. I am going to prepare some carrots, celery, broccoli, and cauliflower today so I have it ready to use throughout the week. I have stocked up on frozen vegetables, so that will help too. The more I think about it, the more excited I get about using more vegetables this week!

The Endodontist could find Nothing wrong with My teeth....So She gave Me a script for Antibiotics to see IF, it is a Sinus infection that's causing My problems....

Teeth problems can really set us back! I was a Registered Dental Assistant for over 20 years... and I've seen them all. Good luck finding the problem. I hope you feel better soon.

SO....I'm STILL on Week 2 ( Veggies) about My 3rd try...Anyway I am having Tooth/Teeth Problems ...My Dentist could Not find the problem so on Tuesday I'm seeing an
Endodontist....So I'm waiting until I'm better to continue with the Week 2 part of the Challenge............

I am a food freak. I hate preservatives, so I finally learned how to make my own dressings so that I could avoid all the chemicals in the bottled kind. I found the best "ranch" had a nice greek yogurt base fresh dill parsley and cilantro along with some salt and garlic. Mix with a bit of vinegar and you have a better bang for your calorie buck, I actually like it a little on the tart side! But my new favorite is to take the leftover cilantro and parsley from a recent recipe and make a chimichurri, with a spicy pepper and lemon juice a little goes a very long way. emoticon

Big salads are great! When I was working I used to take a salad of romaine lettuce, grape tomatoes, cucumber, some red onion, with a small can of tuna packed in water. I would dress it with EVO and wine vinegar. It was easy and filling. I would always keep some good broth type soup in my desk drawer for a warm nutritious break and drink it from my coffee cup!

I love a good big salad at lunch. Lite-ranch dressing, lots of variety of vegetables, cottage cheese, maybe some sunflower seeds, and croutons, a few extra calories but they make it good to me. Broth-based veggie soups are great, but I tend to oversalt them and then get super bloated. I do have one on hand most times though.

Packing salads for lunch is a great idea. Even now that I'm home 24/7 I still love a salad for lunch. My favorite is to add a small can of tuna (packed in water) on romaine, with tomatoes, and kidney or garbanzo beans. Add a little bit of olive oil with wine vinegar ... and delish!

Swiss chard tasted alot like spinach, but maybe a bit sweeter. I also bought a mixed greens combo called "Olivia's Organic Cooking Greens" I have used it as a salad base as well as sauted. It contains spinach, chard, collards, kale, chicory, and mustard greens.

Bought mixed baby salad greens and spinach last night, broccoli, and mushrooms and will use up the last of my sweet peppers and tomatoes from my garden this week.

Bananas (tried smashed mixed with nonfat, plain Greek yogurt, protein powder, and PB2--both fresh and frozen--mixed the frozen to stretch some ice cream in a healthier way) and applesauce (no sugar, but with strawberries) help with my fruits and I can mix in rice bran or flax seed to up fiber and protein.

Starting weight 219 November 1, 2014
Out of 200s by March 15, 2015
Enter my 40s no longer obese forever (184 pounds) by August 17, 2015.
Greet 2016 under 165 pounds.
No longer overweight (154) by May 31, 2016.
Reach my goal weight of 150 (and maintain) by August 17, 2016.

I like to add the basic greens mix, some radish and green or red onion, tomatoes, in the fall I add sundries tomatoes, cucumbers and olives. If I have them I also add pickled jalepenos and pepperoncinis. Sometimes I find a mix of roasted peppers and capers. These often are packed in oil, so I only use lemon juice or a vinegar to top the salad. We must remember that the nutrients packed in veggies often require a bit of fat to break them down to their full potential. Do no fear the oil, fear too much of it! I also like to top off a salad with flax or sunflower seeds. If I am in a fruit mood I will switch out some of those veggies for a pear or apple. You can always add fish or chicken to a salad or a hard boiled egg to add protein.

I also have been known to adds beans or lentils to my salad. Artichoke hearts are good for texture, I know not everything I add is a veggie, but my salads are never boring. I even love to make a raw kale salad that people who do not like kale love. (I use curly kale, molest the kale with 2 tbs of vinegar or lemon juice. Let it sit overnight, add a spicy pepper finely chopped, or red pepper flakes, toss 1 tbs olive oil, just before you serve it add 2 tbs of toasted pine nuts, some nice crystalline sea salt, and 2 tbsp of fresh grated parmesan.) Even the most negative kale hater will probably at least try it!

I like adding any leftover vegetables to my salad, but I can't say I've ever had 10 different vegetables!

I bought Swiss Red Chard for the first time yesterday. I plan to quickly blanch it, then saute it in a bit of olive oil and add a T of pine nuts. Anyone have any other suggestions?

That's one new vegetable, need to find a second one in a few days.

Try romanesca or roasted cauliflower! I hear both are some of the most nutrient packed foods out there. Also I loathe fresh green beans. I have found that if I lightly saut them in sesame oil and with shallots and mushrooms, then finish them off with a drizzle of tamarin and sesame seeds, I love them. You can also add veggies into any pasta or rice dish or even pile them onto a salad. I once had a friend that said the key to a fabulous salad is to have at least 10 different textures and colors to keep your mouth excited. It really is true!

I am taking the challenge to try 2 new vegetables this week. I love vegetables, but tend to stick to the same old thing, zucchini, butternut squash, green beans, carrots, lettuce, onions, and tomatoes. Will let you know what I find at the grocery store today.

I too get my veggies in Shakeology. I am busy busy busy, so making a shake and drinking my food is great for me. YES there are times I cook. haha Like today I made leftover turkey, veggies omelet.
However I have not worked out in 4 days.......I am now stressed. I HAVE to workout.
But the Christmas tree is up, Gifts/Black Friday is done, Thanksgiving is over....... Monday is coming and I am doing a Eating Clean group on Facebook. If anyone wants to join us feel free. I normally keep them to 5 - 10 people.....but this one is OPEN.

Getting in my veggies is easy. First I drink Shakeology. It has 7 serving of veggies.
I snack all day on asparagus, carrots, snap peas, cherry tomatoes...... depending on the season. I have these sitting on my desk w/in easy reach. this keeps me out of the candy bowl sitting around.

Try making a veggie soup with cabbage, carrots, tomatoes, kidney beans, and anything else you can think of to throw in! That is a really good way to get in veggies!

Remember to check your serving size. The serving sizes vary according to what you are eating, so you might be reaching your quota in by serving size!

starting week 2. i forgot about my challenge and gave up. i looked at week 1 again and found that i'm not eating within my calories. now i have to get in fruits and veggies. that's going to be hard for me. i am not really good at eating healthy anymore lol.

What you eat in private will show up in public.
Impossible=I'm possible :)

I love fruit and veggies so that part is easy. I'm having a craving for greens and tobasco so I'm adding that to my dinner tonight!

Today is the start of Week 2. All is going well. Getting number of calories in is still a challenge that I am working on each day.
