A cup of any bean would work. They would already be cooked if you used canned. Just drain and rinse first. I'd mash them a little, not leave them whole.

If I were going to substitute for the soy granules, I'd use cooked lentils. I've come to really enjoy red lentils. Nice flavor.

What could you substitute for Soy? Will need to check Oncologist before using the Soy.

I mixed up some things, divided it 4 ways and baked 1/4 as a loaf. very tasty.
Today I plan to bake another fourth and crumble it up on a salad.

Reciped: 1 cup reconstituted soy granules, 1 cup grated carrots, 1 chopped onion, 1/2 cup chopped walnuts, 1 cup cooked oat groats, 1 egg.

I baked at 350 for about 30 minutes.

1 cup = 250 ml


You could really put in any chopped AA veggies you wanted. Next time, I plan to add mini bell peppers and broccoli for color. Perhaps some chopped spinach or kale or cabbage.
