In honor of this tomato focus, I made a sauce with a cup of red lentils, olive oil, onions, garlic, parsley, basil, a can of no sodium fire-roasted tomatoes and a can of tomato paste. (couldn't find no sodium paste) . I used it as a meal itself, and then did various things with the leftovers.

1. meal with bread baked with garlic slivers in the dough (bread wasn't AA, but the garlic in it was. I was wishing the bakery had included some herbs)
2. cooked mushrooms, spinach and added to one serving.
3. broccoli, jarlsberg light cheese
4. meal on Lundberg golden rose brown rice (rice isn't AA)

I think I had some pretty good synnergy going on with some cheap ingredients. Healthy doesn't always mean expensive.

CSA stands for Community Supported Agriculture. People pre purchase shares of a farm's produce and get a box or basket of veggies every week. It is a great way to get in season veggies.

When I volunteer at the CSA in the summer I get to pick as many tomatoes as I want to take. Yum!

This week's food is the tomato. I learned a lot I didn't know about tomatoes and the studies that have shown the benefits of eating them.

Do you know where most of the vitamin C is found in a tomato?

How do you release more of the lycopene in tomatoes (angiogenesis inhibitor)?

But as a resident of the sunshine state, I found the link to the article about Tomato Paste and the prevention of sun damage to the skin to be very interesting.
