In honor of this tomato focus, I made a sauce with a cup of red lentils, olive oil, onions, garlic, parsley, basil, a can of no sodium fire-roasted tomatoes and a can of tomato paste. (couldn't find no sodium paste) . I used it as a meal itself, and then did various things with the leftovers.
1. meal with bread baked with garlic slivers in the dough (bread wasn't AA, but the garlic in it was. I was wishing the bakery had included some herbs) 2. cooked mushrooms, spinach and added to one serving. 3. broccoli, jarlsberg light cheese 4. meal on Lundberg golden rose brown rice (rice isn't AA)
I think I had some pretty good synnergy going on with some cheap ingredients. Healthy doesn't always mean expensive.
