I used this recipe for a cookie exchange last week because it filled my basic exchange requirements: It's a high yield recipe, relatively easy, without any nuts (there's a nut allergy in my cookie exchange group).

The cookies received lots of compliments. I liked the ginger taste and the soft, chewy texture. My cookies were much flatter than the picture - possibly b/c I used butter instead of margarine (the recipe calls for either).
I especially like the circle of orange marmalade and crystallized ginger in the center.
I found this recipe on the "Live Better America" site (formerly "Eat Better America"). It's an interesting site - free to join & full of recipes. You don't *need* to join to view the recipes, but you do need to join to download the sometimes useful coupons.
