U - Urban Gardening. Even if you don't have access to large areas of land, you can still garden, and garden organically, using containers, roof top gardens, etc., and using intensive gardening methods like square foot gardening, interplanting, and compact varieties of your favorite plants to maximize your available space and amount of produce.

If you are stuck coming up with an answer for a particular letter (Q, U, and X are difficult in my opinion), then just put "skipping (whatever letter is next)" and proceed with the next letter in the alphabet after that one.

T - Toads. Toads eat lots of bugs that are harmful to your garden, such as cutworms, crickets, rose chafers, grubs, rose beetles, caterpillars, squash bugs, ants sow bugs, potato beetles, mosquitoes, and flies. One toad can eat up to 10,000 bugs in 3 months.

Nematodes. Some are beneficial and some are not. Beneficial ones are found on bean and other legume roots and are responsible for adding nitrogen into the soil. Other nematodes are used to kill grubs from japanese beetles and masked chafer bugs in the soil.
The bad kind is inhibited by marigolds, but you need to grow these for more than one year - interplanting them among susceptible crops or planting them in borders around those crops every year helps to decrease the harmful nematode population.

G - Greenhouse. If you're lucky enough to have one, you can start all those heirloom plants from seed, since it isn't easy to find them at the stores (though the ones near me are stocking more lately).

Bok Choy - Braised Sesame Soy Bok Choy

1 Head Bok Choy
2Tbls. organic soy sauce or Tamari
2 Tbls peanut oil
2 tsp. rice vinegar
1 Tbls. grated fresh ginger
1 tsp. sugar
1 Tbls. minced garlic
2 Tbls sesame seeds
1/2 c organic chicken (or vegetable stock)
salt and pepper to taste
1Tbls. toasted sesame oil

Trim the root end off the bok choy head . Slice the leafy portions of the plant from the stalks. Cut both the leaves and the stalks into large matchstick size pieces (Juliennes). Keeping the two piles separate. Heat a very large skillet or wok until it looks hazy on the surface, 2-4 minutes. Add peanut oil and swirl to coat pan. Add Bok Choy stems and stir fry about 5 mn. Add ginger and garlic and stir fry briefly. Add bok choy greens, chicken stock, sesame oil, soy sauce, rice vinegar, sugar, salt and pepper. Cover, reduce heat to med/low and cook until bok choy is tender and glazed with sauce 5-8 mn. Remove cover, sprinkle with sesame seeds, increase heat to med/high and cook until excess liquid evaporates 2-3 mn. Adjust seasonings to taste.
Makes 4 servings

I just bought 2 cookbooks just on cooking garden fresh vegetables. This one was "From Asparagus to Zucchini".
I plan on using a bunch of baby bok choy for this and keeping them whole or cuting them just in half.

Thought it might be fun to start a game here where you come up with ANYTHING to do with organic gardening (not just fruit or vegetable names). Start with A, next person names something with B, etc. Once we get to Z, we just start over again with A. Along the way we just might learn about some new produce, organic gardening methods, etc.

If you want to include an organic gardening tip about your item, that's great too.
