I tried Irene's Meatballs (sp recipe) and they were great! I had some ground meat, then made the simple sauce to go with, angel hair pasta then some parm cheese. YUM! Will definitely make them again!

I haven't made the rice yet, I am going to try to make it in the next few days. Everything else was good although I used too much basil in the soup so it wasn't quite as good as I had hoped.

I bought some rhubarb on a whim yesterday so I am trying a few different recipes this weekend...

Chilled Strawberry Rhubarb Soup
Rhubarb Muffins (although mine will actually be a "cake bread" since I don't have muffin tins)
Rhubarb Porridge/Oatmeal
Rhubarb Spinach Salad

I just made a simple dish in my crock pot the other day by browning some hamburger, onions, mushrooms, celery, carrots and tomatoes. Tossed it all in the crock pot and added just a partial packet of Rice-A-Roni with just a part of the seasonings that come with it. Then enough water to let everything simmer and it turned out great. By adding only a portion of the Rice A Roni, I was able to lower the amount of carbs. I used the Spanish Rice version, but you can use which ever one you like depending on what kind of flavor you enjoy. You could even tweak the veggies used and go with broccoli and then use a broccoli type seasoning mix.
The dish turned out great and my hubby loved it! emoticon

Tuna Parmesan patties! Found recipe on SP & they were fabulous :) & I bet everyone has the ingredients in their pantry - tuna, egg, parm cheese, mayo, seasoning, and lil oil to cook em! I add sauted green peppers & onions.

Yes...I enjoy going through cookbooks too...but what I love to now is find a recipe and "Tweak" it so it is a little healthier...and or tastier. I know a lot of the older cook books were filled with recipes that use a lot of butter...sugar...heavy on gravies...etc.
Now I like to find a recipe...use it like a base recipe...but I put my own spin on it.
It's great fun and it's amazing how much better the recipe can turn out!
Today I will be looking into making a dish using "Lemon Cucumbers"! Ummmmm! emoticon

do you read cook books . I do . I love to look at them . in fact i collect them . I found an copy of lost recipes from the fifty's . boy we sure did cook different back then . I have my old betty crocker cookbook and i used it in the fifties . different now .

Here is a nice change from regular sandwiches...and especially if you are doing "Low Carb".
I have started using "Low Carb" Tortillas. There are only about 6 net carbs in one tortilla and they are great with tuna salad, chicken salad or what ever kind of filling you want to put in.
Healthy...and very yummy! Give them a try. Your kids may even enjoy them! emoticon

I made this yesterday . they where very good . i did not have any cherry totomes so i cut two small tomatoes in their place .so all i could think of was should have added some form of pasta with it . but did not . do not eat pasta anymore .

green beans and tomatoes thing . 1 1/2lbs of green beans . cut into 2 inch piecers .. 1 1/2 cups water.1/2 cup butter 1 tablespoon sugar 3/4 teaspoon of garlic salt or kosher salt
1/4 teaspoon fresh pepper. 1 tablespoon of fresh basil 2 cups of cherry tomato halved

place beansin a large saucepan with waterr. cover bring to boil and simmer on low until tender .2. melt butter in large skillet over medium heat stir in sugar garlic or kosher salt pour the tomotoes mixture over the green beans and toss gently to blend adjust salt and pepper to taste .enjoy dinner tonight with salad no dressing . emoticon emoticon emoticon emoticon

My new recipe to try this week was "Low Carb Peanut Butter Cookies". They were easy to fix and turned out pretty good. There are all kinds of good recipes out there. Don't be afraid to try them. You may surprise yourself! emoticon

I like the portabellas. There is a recipe on SP to use the mushrooms as the base for mini pizzas, basically using the 'shrooms as the bread with the sauce and cheese on top. Delicious!

Ok...Ok...Don't laugh...I'm going to try "Portabello Mushrooms" for the first time. I plan on fixing it tomorrow. I love mushrooms and usually fix the little white button mushrooms, but decided to give these big ones a go.

I tried eggplant for the first time. A friend made a batch of ratatoulle (sp) and I liked it...was a little surprised actually. he had recently made a quinoa (sp) salad for me and i wasn't as crazy about that one, just not enough flavor to it.

When I get home this weekend I plan to try making tortilla soup from the PureWow recipe I got in my inbox last week. Of course, I am also in Mexico this week so by the weekend I may have hit my quoota of Mexican food and decide to try something else instead.

Since I have been on SP I have tried kale (did not like), mustard greens (OK, use in place of spinach) and have added beans to my food a lot more often.

Nice topic!

My husband recently declared that he wants to go vegetarian. I'm not opposed to meatless meals. Unfortunately, I like to eat too much.......everything. So I think it will be a challenge for me. But I will be happy to pass along (or receive) any recipes along those lines that are keepers if anyone is interested.

It will at least help me lose the 30 lb I/m looking to shed.

I would say that everyone of us started with Sparkpeople because we were looking for support and ways to lose weight/get healthy. Well...I thought it would be nice to expand on that a little by sharing thoughts on what "New Foods" have you tried lately and how did you prepare them?
I think that it is really easy to get stuck in a rut and fix the same thing over and over and over.
Why not try and think outside the box and try something new? Then let us know what new food item you prepared and how did it turn out? My husband and I just recently tried Bok Choy and wow...I want it more often now. It's not only easy to prepare, but it's delicious and healthy. We did a nice light stir fry in "Rice Bran Oil"...added some Bean sprouts and a touch of Soy Sauce and a little BBQ Pork. Yum Yum....and if you haven't heard of Rice Bran Oil...Please look it up. You will be amazed what this healthy oil can do for you and your cholesterol numbers. I'm using it for everything now.
So everyone...let's get brave and try something new and let's see what happens.
Together...We can do it and all get healthy and in an affordable manner! Oh Yeah!
