The green ones may ripen, depending on how far along they are. You can leave them on your kitchen counter if there are just a few, or wrap loosely in newspaper and keep in a box in a cool, not cold place. (Advice from Organic Gardening magazine many years ago.)
The Roma's were amazing and at first I thought the grapes were too powerful but they work great in salads and wraps. Also, I am so popular at work for my efforts! I'm going to try the Italian roasting but have never done it before.
Great idea! I watched Giada de Laurentiis taken some dried tomatoes out of a big jar (half gallon). She said tomatoes are preserved in Italy that way and housewives take them out them as needed. They can be reconstituted.
