My husband stocked up on pork chops which we don't eat very often so I have been looking for creative recipes for those. We usually stock up on skinless chicken breasts when they are on sale because there are so many ways to prepare them. Now pork chops are... emoticon challenging!

Okay so our cupboards and pantries are in great shape now. Hopefully we've used up or planned to use up the leftovers in the fridge. If you found through this that you needed to do some shopping to stock up on some things, how did you do in the shopping? Did you save any money? Use up some coupons you had? Did you have a grocery shopping list and stick to it or did you buy some extras? Sometimes those extras are really not necessary and are budget busters. But sometimes, you run across a great sale that you just can't pass up. Did you find any great sales? Where?

Since Valentine's day is tomorrow, take a few minutes to pamper yourself. Deep condition your hair, soak your cuticles, put your feet up for a few minutes and read some of a book! Do something for you!

Whoohoo! Got the majority of the leftovers in the fridge used up. Only have 2 containers left. 1 will be my lunch today and the other will be used for dinner tonight. Saturday morning I'll be able to take out everything in the refridgerator and give it a thorough cleaning. Then I'll get my meals planned for the rest of the month and do my monthly grocery shopping, not too much to buy but I need to get it done before it gets out of hand and we're running to the grocery store every night on the way home. I notice that we tend to overspend if we do that. I'm sure it's the extras that we pick up while we're there!

FYI: I got in a bunch of extra steps yesterday! I made 3 walking trips, not strolling but really walking right along, to my bosses office which is halfway across campus!

Sounds like we're all doing pretty well here. I have meals for at least 2 weeks. Probably longer if I throw in some vegetarian meals too.

How are the leftovers in the refrigerator looking?? Is it time to get creative and use some up before they're too old?? I know I have some cellary and carrots in there that I need to use up. I think I'll start a crock pot of stew tonight for tomorrow night. I also think that there is at least one left over dish in there that I need to incorporate into something new for dinner tonight rather than let it go to waste.

My freezer and pantry is in decent shape. I do need to buy salt - how did we run out of salt! - fresh veggies and fruit.

I'm all for this challenge. I've just been through all my cupboards and I actually have enough there for a month's menus. I do need a few fresh veggie items from the grocery store but other than that - I am very well stocked.

I'm up for the challenge, too. Last night I went through the pantry thinking of making vegetable soup and saw a can of chili beans, I put that in the soup pot and we had the extra beans and some meat in the soup. Everybody enjoyed the 'new soup' mix and it was very tasty with the cornbread mix I also found in the pantry! Pantry is all organized now!

So I'm thinking that we need a few challenges to keep this group moving and thinking. So the discussions don't get stale we'll change them every few days. I realize that not everyone's situation is the same but we all ought to be able to come up with something to share with the others and who knows what we might learn from each other. I like the idea of coming up with menus since groceries take a big chunk out of our pay checks. So here is the first challenge.

Go through your cupboards, refrigerator and freezer and see how many meals you can come up with using just stuff from those areas. Without having to go to the store and buy anything else! While your going through the cupboards, fridge and freezer, take a moment and organize it, if it's not organized. There is nothing more frustrating or wasteful than buying stuff that you already have but can't find. So I'm off to start sorting through what I have, making a list of it all and seeing what I can come up with for meals. I only shop once a month and haven't had the chance to go yet this month so I'm going to see how much longer I can go before I HAVE to shop. Who knows, I may find that I have enough to get us almost through the rest of the month! Here's hoping!! I'll report back later this evening on what I've found.
