1 beet 1/2 c golden raisins 1 leek - chopped white part only Your favorite oil and vinegar or balsamic vinaigrette salad dressing 2 cups vegetable broth 1 tsp flour in 1/4 c water Salt and pepper and other of your favorite seasonings to taste.
Cook beet in water until tender and drain. Mix all other ingredients except salad dressing in pot and boil, and once the liquid reduces to just enough to simmer, stir in flour/water mixture to thicken. Stir in beet. Top with dressing and your favorite seasonings, let cool to room temperature and serve.
