I think I may make a Quinoa-Black Bean casserole, sweet carmalized onion dip (w carrots) and bake an eggplant

We are doing ham, mock potato salad (ie made with cauliflower), cole slaw, baked beans and some kind of fruit/green salad. All beachy and eaten by picky kids.
You can also add bread to that for folks to make sandwiches. .
Quiche is also nice.
