Ive tried a few different things for the crust and liked them all:
use chicken breast and pound it thin
big mushroom caps, (take out the stem)
brown up a pound of ground turkey and then mix it with a cup of ff cheese and spead the mix out on a cookie sheet like a crust,
half of a whole wheat english muffin and baked
not stoping til I see 144!!!
We like to use the whole wheat pita breads. We spray them with butter spray toast on the stove each side, add toppings then toast in toaster oven for like 10-15 mins. YUM!
Hubby makes us pizzas using the Flatout brand flat breads. I like lots of veggies on mine which can make them kind of drippy, so I roll it up and let it sit a bit before cutting in to it.

I make home made whole wheat crust and it's really good! Find a recipe and then break off a bit for your crust and make your first pizza. With the rest of the dough, put it in a large ziplock bag and press it out to the sides, top and bottom so it's flat and freeze it. Now, when you want to make a small pizza for yourself, break off a piece of dough and defrost it. Easy and it makes about 5-6 single serving pizzas if you roll it real thin.
When I did south beach 4 years ago I would make my own pizzas in phase 2. I would use either low carb or whole grain tortillas as the crust, tomato paste as the sauce with garlic powder and italian seasoning sprinkled on top, then I'd add cheese and toppings to it. I won't lie, it's no papa johns or pizza hut, but it wasn't bad for a healthier version.
