Cheddar Ranch Fondue
INGREDIENTS
3 cups white Cheddar cheese (finely grated)(I would do half of it low fat and other half full fat due to the melting factor)
4 tablespoons unsalted butter (use beachy)
1 tablespoon corn starch
2 tomatoes (peeled, seeded, and diced)
1/2 cup dry white wine
1 (1 ounce) package Ranch dressing/seasoning mix

DIRECTIONS
1. In a heavy saucepan over medium-low heat, melt the butter. Add tomatoes and saute until the tomatoes begin to soften (about 2 minutes). Add the package of ranch mix and stir gently to dissolve.

2. Toss corn starch and cheese. Stir the wine into the tomato mix and slowly stir in handfuls of cheese until it is completely melted.

3. Transfer to a cheese fondue pot and keep warm with burner. Serve right away.

Mexican Fondue

1 (2 pound) lean rump steak
1 tablespoon vegetable oil
1/2 Spanish onion, finely chopped
1 clove garlic, crushed
1 (14 ounce) can tomatoes, undrained
2 tablespoons tomato paste
1/2 teaspoon chili powder
1 fresh green chile, seeded and finely chopped
Salt and pepper

Cut meat into 1-inch cubes and put onto a serving plate.

To make the Mexican sauce, heat the oil in a saucepan; add onion and garlic and cook gently until softened. Stir in tomatoes and their juice, tomato paste and chili powder. Simmer uncovered for 10 minutes.

Remove the sauce from the heat and pur e in a blender or food processor until smooth or press through a sieve to give a smooth sauce. Return to the heat. Add the chopped chile and simmer for 15 minutes more. Season with salt and pepper. Serve with the meat cooked in the hot oil.

Serves 4 to 6.

Middle Eastern Fondue

1 (1 1/2 pound) lean leg of lamb, cubed

3 tablespoons olive oil
1 tablespoon lemon juice
1 clove garlic, crushed
1 tablespoon chopped fresh mint
1 teaspoon ground cinnamon
Salt and pepper

Apricot Sauce:
1 tablespoon oil
1 shallot, finely chopped
1 (14 ounce) can apricots in natural juice
Salt and pepper
1 tablespoon chopped fresh parsley

Mix olive oil, lemon juice, garlic, mint, cinnamon, salt and pepper together and pour over cubed lamb. Cover lamb mixture and leave to marinate for at least 2 hours, or preferably overnight.

To make apricot sauce, heat oil in a saucepan, add shallot and cook over a low heat until soft. Add apricots and the juice and simmer for 5 minutes. Pur e sauce in a blender or food processor, then season with salt and pepper and stir in parsley. Reheat before serving.

Remove lamb from marinade and arrange on a serving plate when ready to serve and cook in the hot oil.

Serves 4.

Peanut Butter Fondue

2 cups peanut butter
1 (5 1/3 ounce) can evaporated milk (use fat free evap milk)
1 cup light brown sugar (use splenda brown sugar blend)
1/4 cup margarine (beachy)
1/8 teaspoon salt


Apple wedges
Sliced bananas
Cherries
Seedless grapes

Mix first 5 ingredients well in heavy saucepan. Cook over low heat until well blended and hot. Pour into fondue pot. Use remaining ingredients to dip.

Chocolate-Sour Cream Fondue

12 ounces milk chocolate, semisweet
chocolate or sweet cooking chocolate (use dark)
1/4 cup half-and-half (use fat free)
1/2 cup sour cream (use lowfat/ff)
2 to 3 tablespoons orange-flavored liqueur, Kirsch, brandy, white
cr me de menthe, 2 teaspoons dry instant coffee or
1/4 teaspoon ground cinnamon (use extract or sf flavoring?)


Dippers*

Heat chocolate and half-and-half in heavy saucepan over low heat, stirring constantly, until chocolate is melted and mixture is smooth. Remove from heat; stir in liqueur or other flavoring. Pour into fondue pot or chafing dish with water bath; keep warm over very low heat. (NOTE: A crock pot set on low does a great job of keeping the fondue warm.) Stir in a small amount of cream if fondue becomes too thick while guests are dipping.

Dippers:
Strawberries, banana slices*, pineapple chunks, mandarin orange segments, fresh orange slices, apple wedges*, grapes, melon balls, papaya wedges*, fresh pitted Bing cherries, kiwifruit slices, fresh coconut chunks, pound cake cubes, ladyfingers, miniature cream puff. All the fruits followed by a * should be dipped in lemon juice after cutting to prevent oxidation.

Blue Cheese Fondue

4 ounces blue cheese, crumbled (use reduced fat)
1/2 cup dry white wine
8 ounces cream cheese, cubed (use low fat)
8 ounces Monterey jack cheese, cubed
1 tablespoon kirsch (cherry brandy)(would leave out)

Heat wine and cream cheese, stirring until cheese melts. Add Monterey Jack cheese, a little at a time, stirring constantly. Blend in blue cheese. When smooth, add kirsch.

Serve with dippers of French bread, fresh fruit or vegetables.

Yields 5 cups.

Fondue Cheese Sauce recipe
Fondue Cheese Sauce ingredients list:

1/2 cup of dry white wine.
1/2 cup of grated mozzarella.
1/2 cup of grated medium cheddar.
1 teaspoon of flour. (use ww flour)
Pinch of garlic salt.
Pinch of white pepper.
Instructions for Fondue Cheese Sauce:

Mix the grated cheeses and flour together.

Heat up the white wine until nearly boiling, then and add garlic salt and white pepper.

Add the cheese/flour mixture gradually, stirring between addition. Allow all cheese to melt before making the next addition.

When all cheese has been added and is melted, the sauce is ready!

Chicken Fondue recipe
Chicken Fondue ingredients list:

4 skinless, boneless chicken breast halves.
40 oz of chicken broth.
12 oz of chili sauce.
½ cup of mayonnaise.
1 tablespoon of onion, chopped finely.
¼ clove of garlic, minced.
Salt and black pepper, to taste.
Instructions for Chicken Fondue:

Dice each chicken breast in one-inch cubes.

Season the cubes of chicken with salt and black pepper.

Bring the broth to boiling in a fondue pot, then maintain that temperature.

In a small bowl, combine the chili sauce, mayonnaise and onion.

Cook chicken cubes by skewing them on a fondue fork and dipping in the boiling broth for about 60 seconds. Use the chili/mayo/onion mixture for dipping in.
