Primal Biscuits

INGREDIENTS:

1/2 cup almond flour.
1/4 cup coconut flour.
1/4 cup flax meal.
1 tbsp melted ghee.
1/4 cup coconut milk.
1 tsp baking soda.
1/2 tsp salt.
6 egg whites (don't throw away the yolks, save them for Paleo Mayo, shakes, or scramble them up and eat them like a champion.)

PROCESS:

Combine the dry ingredients into a bowl while your oven heats up to 350.
Combine the ghee, coconut milk and egg whites in a blender until frothy.
Incorporate the wet and dry and add seasonings of choice (I poured mine into the muffin tins then topped with seasonings so I could make 3 different kinds.)
Grease 6 muffin tins, 3 larger ones with coconut oil and scoop your batter in filling them halfway.
Bake at 350 degrees for about 18 min (large biscuits, 15 for small), keep an eye on em.

paleo crackers:

1/3 cup almond meal (not flour)
1 egg white
2tbsp sesame seeds
1 tblsp chopped rosemary
1 tblsp chopped thyme
1 tblsp olive oil
1/2 tblspn sesame oil
1/2 tsp shallot
Preheat oven to 350 degrees

Mix all ingredients (whisk egg white first)
Place on to parchement paper-
roll to 1/8 inch slice into squares
You can add sea salt at this point if you like.

bake for 10 minutes- shut oven off remove after 10 more minutes ( or to desired crunchiness)

Pizza Crust
2 eggs
1/2 C Coconut Milk
1/3 C Coconut Flour
1/4 C Almond Flour
1/4 C Arrowroot Powder
1 tsp baking soda
1 tsp onion powder
1/2 tsp salt

Preheat oven to 350. Prepare a pan by fitting with parchment paper and lightly greasing with extra virgin olive oil. In separate bowls, combine wet and dry ingredients. Stir wet into dry. The crust will be more of a batter consistency than a dough consistency.
Pour onto prepared parchment paper and form into the shape desired with a spatula.
Place in oven for 20 minutes till firm.
Remove from oven and top with desired toppings. Return to oven till toppings are heated through, or cheese is melted.

Paleo Bread

1 ½ cups blanched almond flour
2 tablespoons coconut flour
¼ cup flax meal
¼ teaspoon celtic sea salt
1 ½ teaspoons baking soda
5 eggs
¼ cup coconut oil
1 tablespoon honey
1 tablespoon apple cider vinegar

Place almond flour, coconut flour, flax, salt and baking soda in a food processor
Pulse ingredients together
Pulse in eggs, oil, honey and vinegar
Pour batter into a greased 7.5 Inch x 3.5 Inch Magic Line Loaf Pan
Bake at 350° for 30 minutes
Cool and serve

From EatingWell: September/October 2009

Why not use cooler-weather vegetables like broccoli and arugula as an unconventional pizza topping? The arugula adds a slightly bitter, peppery taste—for a milder flavor, use spinach instead. Serve with wedges of fresh tomato tossed with vinegar, olive oil, basil and freshly ground pepper.

6 servings | Active Time: 20 minutes | Total Time: 30 minutes
Ingredients

* 1 pound prepared pizza dough, whole-wheat
* 2 cups chopped broccoli florets
* 1/4 cup water
* 5 ounces arugula ,any tough stems removed, chopped (about 6 cups)
* Pinch of salt
* Freshly ground pepper to taste
* 1/2 cup prepared pesto
* 1 cup shredded part-skim mozzarella cheese

Preparation

1. Position oven rack in the lowest position; preheat to 450°F. Coat a large baking sheet with cooking spray.
2. Roll out dough on a lightly floured surface to about the size of the baking sheet. Transfer to the baking sheet. Bake until puffed and lightly crisped on the bottom, 8 to 10 minutes.
3. Meanwhile, cook broccoli and water in a large skillet over medium heat, covered, until the broccoli is crisp-tender, about 3 minutes. Stir in arugula and cook, stirring, until wilted, 1 to 2 minutes more. Season with salt and pepper.
4. Spread pesto evenly over the crust, top with the broccoli mixture and sprinkle with cheese. Bake until crispy and golden and the cheese is melted, 8 to 10 minutes.

Here's an easy, new take on pizza: pita rounds that hold a fennel and chicken saute and that are then baked until the cheesy topping melts. Although great warm, they're just like pizza: a fabulous lunch out of the fridge the next day.

4 servings | Active Time: 25 minutes | Total Time: 35 minutes
Ingredients

* 2 teaspoons extra-virgin olive oil
* 1 bulb fennel, quartered, cored and thinly sliced, plus 1 tablespoon chopped feathery tops for garnish
* 1 red bell pepper, thinly sliced
* 8 ounces boneless, skinless chicken breast, very thinly sliced crosswise
* 4 6-1/2-inch whole-wheat pitas, or eight 4-inch whole-wheat pitas
* 1 cup shredded provolone cheese
* Freshly ground pepper, to taste

Preparation

1. Preheat oven to 500°F.
2. Heat oil in a large nonstick skillet over medium heat. Add fennel and bell pepper and cook, stirring often, until the vegetables begin to soften, about 5 minutes. Add chicken and cook another 5 minutes, stirring often, until the vegetables are tender and the chicken is cooked through.
3. Place pitas on a baking sheet and top each with an equal portion of the chicken and vegetable mixture; sprinkle with cheese and pepper. Bake until the cheese melts and turns golden, 10 to 15 minutes. Sprinkle with chopped fennel tops and serve warm.

Zucchini Bread with Agave

3 large eggs, well beaten
1/2 cup vegetable oil
1 1/3 cups agave
2 cups raw zucchini, peeled and grated
3 teaspoons vanilla extract
3 cups whole wheat pastry flour
1 tablespoons cinnamon
1 teaspoon salt
1/4 teaspoon baking powder
1 teaspoon baking soda
1/2 cup chopped walnuts

Preheat oven to 325 degrees F. Spray a 9×5x4 inch loaf pan with cooking spray.

Combine eggs, oil, agave, zucchini, and vanilla; mix well. Mix the flour, cinnamon, salt, baking powder and baking soda together in a second bowl. Add dry flour mixture to zucchini mixture and stir until blended. Stir in the nuts.

Pour batter into pan and bake for 45 to 50 minutes or until toothpick inserted comes out clean.

Whole Wheat Banana Berry Loaf/Muffins
(its just as good with all applesauce in place of oil)

Ingredients

2 eggs
1/2 cup unsweetened applesauce
1/4 cup vegetable or canola oil
1/4 cup packed brown sugar and 1/4 cup Splenda OR 1/2 cup unpacked Splenda Brown Sugar Blend
1 teaspoon vanilla extract
3 bananas, mashed
2 cups whole wheat flour
1.5 teaspoon baking soda
1 tablespoon ground cinnamon
1 cup frozen mixed berries



Directions
1. Preheat the oven to 375 degrees F (190 degrees C)
2. Grease loaf pan
3. Partially defrost berries (about 30 seconds in the microwave) and set aside; cut any very large berries (I use kitchen scissors in the bowl...tidy)
4. In a large bowl, whisk together the eggs, applesauce, oil, sugar/Splenda, vanilla and bananas
5. Combine the flour, baking soda and cinnamon
6. Stir flour mixture into the banana mixture until moistened
7. Stir in the berries until evenly distributed
8. Pour batter into pan
9. Bake for approximately 50 minutes for a loaf, less time for muffins, in the preheated oven, or until the top springs back when pressed lightly. A cake tester should come out clean when inserted in the center if the fruit is avoided.
10. Cover the pan with tin foil immediately after removing from the oven and let the loaf cool while covered. This is the secret to a moist whole wheat loaf.

Oopsie Buns

3 eggs
1/8 t. cream of tartar
3oz. cold cream cheese

Beat the egg whites and tartar super stiff. Beat the yolks and cheese together. Slowly add together, blending using 'S' shapes through the whites. Scoop into 6 piles on well greased cookie sheets. Bake at 300 for 30 minutes. These are SO good!! For cheeseburgers, I'll add onion to the yolks. For breakfast sandwiches, I add a little maple and Splenda.

Friday Night Pizza from Family Magazine.com Dec 2007 (I have not made this, but it sounds fun!) P2-3
4 large whole-grain or whole wheat tortillas
1 cup tomato sauce
3/4 cup nonfat ricotta cheese (me I likely would omit this)
1 cup chopped sun-dried tomatoes (or your favorite pizza toppings would probably work as well!)
3/4 cup shredded nonfat mozzarella cheese
Preheat oven 375 deg F. Place tortillas on a baking sheet and bake for 2 minutes.Spoon half of the tomato sauce over the tortillas and spread with ricotta cheese. Spoon on the remaining tomato sauce and sprinkle with sun-dried tomatoes and shredded mozzarella. Bake until cheese is melted. Serves 2 ???? Per serving: 584 calories; 16g fat (3g sat.); 40g protein; 79g carbohydrate; 15g fiber; 2,161mg sodium; 15mg cholesterol

Grilled Roasted Pepper, Red Onion, and Mozzarella Pizzas (Phases 2 & 3)

Makes 4 servings

Description
Buying tomato sauce and roasted peppers at the supermarket makes easy work of these crispy pizzas. Make sure you slice the onion very thin, allowing it to impart its flavor without overwhelming the other toppings. If you like, add a sprinkling of any fresh herbs you have on hand just before serving, and be sure to break out the red pepper flakes for those who prefer some heat.

Prep time: 10 minutes
Cook time: 5 minutes

Ingredients
4 (8-inch) whole-wheat tortillas
1⁄4 cup canned tomato sauce
4 ounces shredded part-skim mozzarella cheese (1 cup)
1⁄2 cup roasted red pepper (from a jar), cut into 1⁄4-inch-wide strips
1⁄2 small red onion, very thinly sliced
1⁄8 teaspoon salt
Freshly ground black pepper

Instructions
Lightly coat a grill or grill pan with cooking spray and heat to medium-high. Grill tortillas until lightly puffed and browned on the bottom, about 1 minute. Transfer to a cutting board, grilled side up. Spread tortillas evenly with tomato sauce and top with equal portions of cheese, red pepper, and onion.

Return pizzas to the grill, topping side up. Cover and cook until cheese is melted, about 1 minute. Transfer pizzas to 4 plates, sprinkle with salt, and season with black pepper to taste. Serve hot.

Whole Wheat Banana Nut Bread
Yields: 12 servings


INGREDIENTS:
1/3 cup vegetable oil
1/2 cup honey
1 teaspoon vanilla extract
2 eggs
1 cup mashed bananas

1 3/4 cups whole wheat flour
1/2 teaspoon salt
1 teaspoon baking soda
1/4 cup hot water
1/2 cup chopped walnuts
DIRECTIONS:
1. Preheat oven to 325 degrees F (165 degrees C).
2. In a large bowl, beat oil and honey together. Add eggs, and mix well. Stir in bananas and vanilla. Stir in flour and salt. Add baking soda to hot water, stir to mix, and then add to batter. Blend in chopped nuts. Spread batter into a greased 9x5 inch loaf pan.
3. Bake for 55 to 60 minutes. Cool on wire rack for 1/2 hour before slicing.

Whole Wheat Banana Strawberry Loaf

INGREDIENTS:
2 cups whole wheat flour
1 teaspoon baking soda
2 eggs
5/8 cup vegetable oil, divided
1 1/2 cups white sugar (sub w/ Splenda)
3 bananas, mashed
1 cup chopped strawberries
1 pinch ground cinnamon

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Lightly grease and flour loaf pan.
In a large bowl combine flour, baking soda and cinnamon. Set aside.
In a medium bowl blend together with an electric mixer the oil, sugar, eggs and banana until well combined.
Add banana mix to the flour mix. Add the strawberries. Mix with a spoon until combined. Do not overmix.
Pour the mix into the loaf pan and bake at 350 degrees F (175 degrees C) for 1 hour and 15 minutes or until a toothpick inserted in the center comes out clean and the loaf is well browned. Note: Blueberries or chocolate chips are great in place of the strawberries.[/quote]

I tried this tonight, except that I made it into muffins. I added 1/4 cup water, to make the batter more 'muffin'y (ie, to make it runnier when I pured it) could probably have added another 1/4 cup water. Baked them at 350 for 30 mins.
For me, it made 11 muffins, but I filled my tins a little too full. Would definately make 12 smaller ones.

It was sooo yummy I had to have two :oops: , and had to have DH try one, and he said they were good, too!!

Here are bread recipes with no white flour. Of course they all have sugar, honey or molasses so the yeast may rise; I'll have to experiment to find out how little is enough. I think 1 tablespoon should be just right. I have never made any of these, but all are rated.

Irish Soda Bread

Ingredients:
1 cup all-purpose flour (sub in a white whole wheat or soy flour)
1 cup whole-wheat flour
1 teaspoon baking soda

White Whole Wheat and Oatmeal Irish Soda Bread
(Makes 2-3 servings bread, double the recipe for a standard size loaf. Recipe slightly adapted from More Bread and Cheese, Please.

1 2/3 cup white whole wheat flour
3 T oatmeal (rolled oats) grind in food processor
1/2 tsp. baking soda
1/2 tsp. salt
3/4 cup plus 1 T buttermilk

Preheat oven to 425 F. Grease or spray a small baking sheet with nonstick spray or oil.

In plastic bowl, combine flour, ground oatmeal baking soda, and salt. With large plastic spoon, mix in buttermilk until mixture is well combined. Dust hands with flour, and form a doughy ball. (I made mine into a slightly oblong shape to fit my little baking sheet.)

Bake until bread is golden on top, about 35-40 minutes. Serve hot. Bread is best eaten shortly after it's baked.

I thought this was deliciously rustic tasting, but possibly I'm not too critical since freshly baked bread is a rarity at my house! Next time I might try more oatmeal and a tiny bit more baking soda. Any other suggestions from experienced bakers will be gratefully received.

Kalamata Olive and Feta Cheese Muffins

3 cups of ww flour
1/2 teaspoon of sea salt
3 1/2 teaspoons of baking powder
1/2 teaspoon of baking soda
1 teaspoon of paprika
1 tablespoon of fresh thyme, chopped
3 eggs, beaten
3 sun-dried tomatoes
1 cup of Kalamata olives, pitted and chopped into smallish bits
1 cup of crumbled feta cheese
1/4 cup of grated Parmesan cheese
1 medium-large onion, diced
1/4 of olive oil
1 1 /2 cups of ff milk

For the topping:

1/2 cup of extra-old cheddar cheese, grated
3 tablespoons of Parmesan cheese, finely grated
1/4 cup of Kalamata olives, pitted and chopped into smallish bits

Butter 18 regular sized muffins cups. Soak the sun-dried tomatoes in a small bowl with enough hot water to cover for 15 minutes. Squeeze out any excess liquid and chop into small pieces. Set aside.

In a large bowl, combine the flour, salt, baking soda, baking powder, paprika and thyme.

In another bowl, beat the eggs with a wire whisk. Add the olives, sun-dried tomatoes, feta, Parmesan, onion, olive oil, and milk and stir well to combine.

Pour the wet ingredients into the dry ingredients and stir until just combined. Spoon the batter evenly into the prepared muffin cups. Sprinkle each muffin with some of the topping and bake in a preheated 400 degree oven for 20 - 25 minutes, or until golden brown. Let the baked muffins sit in the pan for a minute or two, and transfer to a wire rack. Serve warm or at room temperature.

Yields 18 muffins.

Honey Spelt Bread
Total 4 hours
8 servings

4 1/2 cups ww spelt flour,plus more for dusting
2 tsp fine sea salt
2 tsp active dry yeast
1 3/4 cup cool (70degrees) water
2 tbsp honey

In a standing mixer fitted with a dough hoook, combine the flour, salt and yeast. Turn the machine to medium low, add the water and honey andmix until the flour is moistened, about 2 minutes, scraping down the side of the bowl wiht a rubber spatula as needed. Increase the speed to medium and knead until a stiff dough forms, about 2 minutes longer.

Transer the dough to a lightly floured work surface and shape into a ball. Set the dough in a well floured bowl, cover with plastic wrap and let rise in a warm place until doubled in bulk, about 1 1/2 hours.

Preheat the oven to 450 and spray a 9-by-5 inch loaf pan with vegetable cooking spray. Invert the dough onto a lightly floured work surface and gently punch it down. Fold the dough into a loaf, tucking in the sides and pinching the seams. Transfer the dough to a loaf pan, seam side down. Cover with plastic wrap and let stand until doubled in bulk, about 1 hour.

Remove the plastic wrap and lightly dust the dough with flour. Using a sharp knife, make a shallow lengthwise gash down the center of the loaf. Bake for about 35 minutes, until the loaf is risen, golden on top and an thermometer inserted into the center of the loaf reads 180. Let the bread cool in the pan for 10 minutes, then tip it out onto a rack to cool completely before serving.

One serving: 289 cal, 2.3 gm fat, 0 sat fat, 54 gm carb, 9 gm fiber

Savory Muffins with Sun Dried Tomatoes and Cottage Cheese.

Ingredients
2 cup ww flour (or flour of your choice)
1 1/4th cup milk
1 cup cottage cheese - crumbled or shredded
1/2 cup mozzarella and parmesan - shredded (optional)
1 1/2 cup sun-dried tomatoes (oiled ones, finely chopped)
1/2 cup spring onions - chopped (white and greens separate)
8-10 cloves of garlic - minced
2 tbsp olive oil
2 eggs - beaten
2 tsp baking powder
1 tsp baking soda
salt and black pepper - to taste
4 tbsp basil flakes (adjust amount to suit your taste)
2 tbsp crushed red pepper flakes

Method
Sift the flour, baking powder and baking soda through a sieve. Add the salt, black pepper, herbs, and red pepper flakes. In a pan, add the olive oil, then saute the white aof the onions and garlic till it starts giving out an aroma. Allow to cool a bit.

In another bowl, beat the eggs to make them fluffy, then add to the sauteed onions/garlic mixture. Combine this with the flour mixture. Slowly add the cottage cheese, mozzarella and parmesan, then keep mixing/folding gently as you add milk little by little. Do not overbeat, just mix to combine the ingredients.

Grease 12-muffin pans with non-stick spray. Preheat oven to 350 deg F, then fill the mixture in the muffin pans up to the brim. Bake for 20-25 mins, and not more. Insert a tooth-pick in the center to make sure they are cooked. If the muffin tops look white, tun to broil setting and bake for 15 seconds, not more, or the muffins will get browned (the mistake I did!!)

Once done, allow them to cool on the wire rack. Gently remove from the pan and serve immediately.

Extra Light Baking Mix (From American Whole Foods Cuisine)


YIELDS: 7 Cups MIX

4 c whole wheat pastry flour
1 c nonfat dry milk powder
2 1/2 T baking powder
1 1/2 t salt
1/2 c oil (canola)

Mix all dry ingredients together in a food processor. Drizzle in oil while blades are running Mix completely.

Store in a Freezer Bag in the Freezer, or in an airtight container in the refrigerator.

Use as you would BISQUICK

Cook until bottom is lightly browned. Flip and cook until ‘done’.

Flax Muffin

3 tablespoons flax meal
1 egg
1/2 teaspoon baking powder
2 tablespoons butter (SB approved)
1 teaspoon splenda
2 teaspoons cinnamon


Melt the butter in a microwave safe bowl for about 10 seconds. Use one that will be large enough for your ingredients to fill it about 1/3. Stir in the flax meal, then the egg, then the baking powder, cinnamon and splenda until it is well blended. Scrape the sides. Microwave about one minute or until the center is set. The muffin will rise above the edges of the bowl and settle when you turn the microwave off. Let it sit a minute, remove from container, let cool a little and eat it.

I made the dough in my bread machine, which I highly recommend, if you have one. You can even shape the rolls ahead of time, put them in the pan and refrigerate up to one day ahead. Just let them come to room temperature before baking.

Whole Grain Dinner Rolls with 3 Seeds
Makes 16 rolls

1/2 cup bulgur wheat
1 cup ff milk
2 large eggs, lightly beaten
1/3 cup honey
2 tablespoons olive oil
1 1/2 cups whole wheat flour
2 1/2 -3 cups all-purpose flour
1/2 cup quick-cooking oats
1 tablespoon kosher salt
2 teaspoons active-dry yeast
1 tablespoon EACH sesame, flax, and poppy seeds
1 tablespoon flaked sea salt

Cook the bulgur in 2 cups boiling water in a medium saucepan until water is absorbed, about 15 minutes. Cool.

Place the milk, eggs, honey, oil, whole wheat flour, 2 1/2 cups all purpose flour, oats, cooled bulgur, salt and yeast in a bread machine in the order given. Process on the "dough" mode, adding more flour if needed.

Remove dough from bread machine pan and from into 16 balls. Arrange in two 8-inch round oiled cake pans. Brush tops with oil, cover and let rise 20 -25 minutes.

Heat oven to 375 degrees. Sprinkle roll tops with the seeds and salt; bake until dark golden brown on top, about 25 minutes. Transfer to a rack and cool in the pan 10 minutes before unmolding. Serve warm.

Ingredients:
4 eggs -- room temp
1/4 cup ricotta cheese
1/4 teaspoon cream of

Seperate CAREFULLY your

peaks form, add cream of

Whole Wheat Pizza Dough - South Beach Diet Recipe (Phase 2)

WHOLE WHEAT PIZZA DOUGH
Prep time: 5 minutes
Start to finish: 15 minutes
To make ahead: The dough will keep, in a plastic bag coated with cooking spray, in the refrigerator for up to 2 days.
Degree of difficulty: moderate

Ingredients
1 3/4 cup whole-wheat flour
1 package quick-rising yeast, such as Fleischmann's RapidRise
3/4 teaspoon salt
1/4 teaspoon sugar
1/2-2/3 cup hot water (120-130°F)
2 teaspoons olive oil To make:
1. Combine whole-wheat flour, yeast, salt and sugar in a food processor; pulse to mix. Combine hot water and oil in a measuring cup. With the motor running, gradually pour in enough of the hot liquid until the mixture forms a sticky ball. The dough should be quite soft. If it seems dry, add 1 to 2 tablespoons warm water; if too sticky, add 1 to 2 tablespoons flour. Process until the dough forms a ball, then process for 1 minute to knead.
2. Transfer the dough to a lightly floured surface. Spray a sheet of plastic wrap with cooking spray and place it, sprayed-side down, over the dough. Let the dough rest for 10 to 20 minutes before rolling.

Whole Wheat Pita Bread

66 Minutes to Prepare and Cook

Ingredients

1 cup warm water
1 (.25 ounce) package active dry yeast
1 tablespoon molasses
1 teaspoon salt
1 1/2 cups whole wheat flour
1 1/2 cups soy flour
cooking spray
cornmeal for dusting

Directions
1. In a bowl mix the water, yeast, molasses. Let sit 5 to 10 minutes, then gradually mix in the whole wheat flour, soy flour and salt mixture. Turn out onto a floured surface, and knead until smooth. Place in a large bowl lightly coated with cooking spray. Cover with a towel, and let rise in a warm place for 1 hour.
2. Punch down the dough, and knead for 5 to 10 minutes. Divide into 6 pieces. On a lightly floured surface, flatten each piece to about 1/8 inch thick with a rolling pin. Cover with a towel, and let rise 30 minutes.
3. Preheat oven to 450 degrees F (230 degrees C). Warm a baking sheet in the preheating oven for about 2 minutes, then remove from heat and sprinkle with cornmeal.
4. Arrange the dough rounds on the prepared baking sheet, and bake 6 minutes in the preheated oven. Remove from heat and cover the bread with a moist towel to soften. When cooled, slice in half and use a knife to cut pockets in the bread.

Savory Chedder Cheese Biscuits
Prep time: 15 min

2 1/2 cups whole grain pastry flour
1 tbsp baking powder
1/4 tsp baking soda
1 1/2 tsp dried thyme

1/4 cup plus 2 tbsp chilled trans fat free margarine, cut into bits
12 ounces reduced fat chedder cheese, shredded (3 cups)
1 1/3 cup fat free milk

Heat oven to 400F. Lightly coat 2 baking sheets with cooking spray.
Whisk together flour, baking powder, baking soda, thyme, pepper, and salt in a large bowl. Add margarine and using a pastry cutter or 2 knives, blend until mixture resembles coarse meal. Add cheese and toss to coat. Slowly stir in milk and mix to just combine.
Drop dough by 1/4 cupfuls onto baking sheet, about 2 inches apart. Bake until edges and tops are golden, 14-16 minutes. Serve warm or at room temperature.

Makes 20 biscuits

Heidi's High Fiber Bread

In bottom of bread machine, place:

2 cups of water
4 tbsp olive oil

Combine these dry ingredients in a separate bowl:

1.5 tsp baking powder
1 tbsp Splenda
1 c wheat gluten flour
1/2 c oat flour
1 c soy flour
1/2 c flax seed meal
4 tbsp skim milk powder
3 tbsp red bran
1/4 c oat bran
1/4 c white bran (sub in regular wheat bran if can't find white)
1/2 c whole wheat flour

Pour the dry ingredients into the pan on top of the liquid.

Put 1 tsp sugar and 1 tsp salt around edge of pan.

Put 1 tbsp dry yeast into a 'well' in the middle of the dry ingredients.

I used the Whole Wheat Rapid cycle set at a 2 pound loaf. The crust was a bit dark, yet the insides were moist. I would try to set it at a lighter crust next time.

This is a very filling bread. The counts are as follows:

Based on a 16 slice loaf:
Fat 6.97 g / Carbs 20.38 g / Fibre 6.28 g / Net Carbs 14.09 g / Protein 6g / Cals 150

Whole Wheat Baking Mix


8 c. flour (whole wheat or whole wheat pastry) (I used Bob's Red Mill Pastry Flour)
5 T. baking powder
1 T. salt
1 to 2 c. dry powder milk (nonfat dry milk)
1 1/2 c. oil
Optional: 1/2 c. nutritional yeast (I did not include this)

Combine dry ingredients well in a large bowl. Cut in oil with fingers to make fine crumbs. Store in a tightly covered container in the refrigerator. Makes 11 cups.

Hi-protein: In place of 8 c. flour, use 5 1/2 c. ww flour, 1 c. soy flour and 1 1/2 c. wheat germ.
Whole grain: In place of 8 c. flour, use 5 c. ww flour, 1 c. bran, 1 c. wheat germ and 1 c. oatmeal or oat flour, rye flour, or other whole grain flour.

To make biscuits:
3 c. baking mix (from above recipe)
2/3 c. milk or water
Optional: grated cheese, herbs or spices

Stir milk into mix just until moistened. Knead briefly on floured surface; roll or pat out to 1/2" thick and cut into biscuits. Bake at 450 for 10 minutes.

2/3's recipe:

I thought I should add the flax meal base that I've been using to make my pizza. I've tried it twice now and it's worked well both times.

2 1/2 tbsp flax meal
1/4 tsp baking powder
Onion powder to taste
Garlic powder to taste
1 large egg
1 tbsp water

Mix the flax, baking powder, with the onion and garlic powder in a bowl. Beat in the egg and the water, until the mixture has the consistency of batter. Pour into 8" microwavable flat plate that has been very lightly oiled with olive oil, or pam, and spread (till it covers entire bottom). Cook uncovered for 3 minutes in the microwave on high.

Crusty WW/Rye Bread

1 lb ww flour
0.5 lbs rye flour
16 ozs cold water
1 packet of dry yeast
1.25 tsp salt
1 tsp coarse ground black pepper opt
1 tsp ground cumin opt

Mix the ww flour ,rye,yeast together. Slowly add the cold water until you get a kneadable dough . The amount of water may vary according to weather conditions so don't be afraid to add more or less . If you do add too much you can add more flour .This recipe is pretty forgiving with amounts of flour the yeast will raise.Knead the dough for three minutes ,then add the salt and the other spices . Knead for a further 7 mins.

Then set dough on an oiled baking tray to rise over night (covered with a cotton cloth ) Don't use foil to cover it as the gases need to escape. Leave the dough over night at ambient temperature for about 7 hours .If you want to leave it for longer make it with ice water and leave it to proof in the fridge for10-12 hours.

Transfer to a new oiled baking pan or tray ,shape the loaf if necessary but do not knead anymore and bake in a preheated oven at 465 F for 10 mins and then turn down the oven to 400 and bake for another 50-60 mins .

To know if the bread is done open the oven and thump the top of the bread with your fist .If you get a hollow sound the bread is done. They also say that the crust is greatly improved if you pour a cup of cold water on the bottom of the oven during the first 10 mins of baking . Don't do this though if you have a gas oven . I put a baking tray filled with water on the oven bottom. It does not give the same steam as the other methods but it stops the bread from drying out too much .

This bread is best enjoyed the day after baking as the rye needs time to devekop its flavour . Baked this way it has a longer shelf life than other breads .Oh and let the bread cool out completely before transferring it to any container . It keeps the crust crispy and stops the bread from going mouldy before its time

Whole Wheat Biscuits

The important thing is not to overwork the dough or they become too too tough. Here is a good recipie:

Ingredients:
1 3/4 c. whole wheat flour
1/4 c. rye flour, or barley flour, or wheat germ (can omit and use whole wheat flour instead)
1/2 tsp. salt
2 tsp. baking powder
1 tsp. baking soda
2 tsp. sugar
1/3 c. butter (can use oil or l/fat butter)
1/2 c. lowfat buttermilk
1/3 cup water

1. preheat oven to 450 and grease a baking sheet
2. mix the dry ingredients together
3. Add butter or oil and work in w/ fingers until mixture resembles coarse meal
4. Add buttermilk and water. Knead a few times
5. Roll our 1/2 inch thick on floured board, cut out w/ rim of glass or cookie cutter
6. bake for 8-10 minutes and serve hot.



**You can use a substitution for the sugar. You can also add something savory instead of sugar or artificial sweetener, such as, rosemary and l/f cheese or garlic (powder or fresh).

Whole Wheat Bread Machine Loaf

Note: I use organic ingredients and remember the trick is not in the recipe but in knowing what to look for in the dough when it is working in the bread machine. Not too wet, not too dry. Dough should walk around the breadmachine and be slightly tacky after mixing is complete.

One Cup water (warm)
1 egg, room temp
2 Tblspn Oil (canola or olive)
2-3 Tblspn honey
1.5 tsp salt
2 1/4 cups stone ground whole wheat flour
1 cups whole oat flour
1/4 cup Vital wheat gluten
2 tsp active dry yeast

Whole wheat program with light crust.

100% Whole Wheat Bread (Bread Machine Recipe)
From King Arthur Flour:

1 1/4 cups water
2 tablespoons olive oil or veg oil
1/4 cup honey or maple syrup
3 1/2 cups 100% whole wheat flour
1/4 cup sunflower, sesame or flax seeds or a combination (optional)
1 tablespoon vital wheat gluten
1 1/2 teaspoons salt
1 1/2 teaspoons yeast.
Put all ingredients in bread pan in the order listed. Program for basic white and start.

WHOLE GRAIN WHEAT PIZZA CRUST (8 slices and each slice counts as one bread serving.

Makes one 12 to 14 inch pizza crust. Phase 2 & 3

1 package Rapid Rise Yeast
1 1/2 cup of Gold medal Whole Grain Wheat Flour or other brand.
1 t garlic salt
1 t sugar
1 Tbs Olive Oil
2/3 cup of warm water

Mix dry ingredients well together in a medium bowl. Add the olive oil and cut into the flour mix.....Add water to make a nice dough and knead a few times. Oil spray a small bowl and place the dough in it and cover tightly with plastic wrap....Set aside for about 20 minutes....I put mine in the microwave (No Heat)....Oil spray a pizza pan and dump the dough onto it...Spray your hands and spread and stretch the dough to fit the pan with a slight turned up rim.....You can use a food processor or your bread Machine on manual to make the dough, but it is so easy I just use my hands.

At this point you can either bake the crust at @ 450 degrees for about 10 minutes and save until later, or top with your favorite topping and bake on lowest rack of the oven for 15 minutes or until cheese is melted and rim of crust is brown.

Use any veggies as desired...be sure they are dry.

NOTE: All Wheat flour is not Whole Grain...check your package as some contain processed flour....Bob's Red Mill and Hodgkin's Mill are others that do make a whole grain wheat flour and are found at the Health Food Store.

Let Them Eat Pie!

Did you know that some of your favorite holiday pie recipes can be made Phase-2-friendly with a few simple modifications? Here are the guidelines:

For the crust: Replace refined white flour with whole-wheat flour, nut flour (almond, pecan, etc.), or fresh ground nuts. You can find these in specialty and health food stores.

Here's a recipe to get you started:

SBD Pie Crust

Ingredients:

* 2-3 cups ground pecans
* 1/2 cup trans-fat-free margarine spread (Smart Balance, Fleishman's Olive Oil, Brummel & Brown)
* Artificial sweetener to taste

Directions:
Preheat oven to 450°F. Mix ground pecans, margarine spread, and artificial sweetener until combined. Press mixture into a pie plate and bake for 10 minutes. Remove and let cool completely before adding filling.

Note: Because nuts can be a diet buster in large amounts, use this recipe as an occasional treat.
