I made a really tasty spaghetti sauce with lean ground beef (chicken or turkey would work too) lots of veggies, and I cooked it in the slow cooker all day. I serve it over whole wheat pasta and sometimes just eat it on toast. I find this to be a very satisfying meal served with a salad.

I tried Ferber's spaghetti sauce and turkey meatballs. I'm not really a turkey eater so I used extra lean ground beef. It was really good.

Ferbers is the person's last name I think, because the screen name of the person who submitted it was Gferber, I think it said.

I'm assuming Ferbers is the brand of tortilla? We don't have those here but we have X-Treme, very low in fat and cals and we have La Tortilla Factory, again, low in fat and cals.

This isn't a recipe but a tip that helps me: every morning when I get up I have a large glass of water while waiting for my coffee to brew. I also slice up an apple to munch on while drinking my coffee and on the computer in the morning. It starts my day off healthy and takes care of the "I'm STARVING" feeling I wake up with almost everyday!

Thanks Pam, when I put in Ferbers it came back no match, a lot less cals in this one, although the other wasn't bad for a main meal so may have to try them both

I found a great recipe on SP for Ferbers baked chicken chimis. My family loves them even the kids except for my youngest and he won't eat very many things.

I have made cabbage like that a number of times. It is delicious! I have never added carrots to it though. I think I will try that the next time.

Another of our favorites...shredded cabbage and carrots sauted with olive oil. A little onion sometimes and garlic. I add turkey kielbasa or chicken kielbasa then thicken with a little chicken broth and flour. Served over brown rice..yum! I usually get 2 meals out of a head of cabbage and plan on trying Bubble and Squeak one of these days!

I agree about the beans. I can eat them quite easily now with very little side effects.

I am enjoying seeing the recipe ideas here. Thanks everybody for sharing. Can I come to each of your houses to feast with you?

Yesterday, I boiled a ham bone with some ham on it for about 2 hours. Then I took the ham off of the bone and set it aside. Then I added a bunch of long grain brown rice and let it cook for an hour. The last half hour, I added frozen mixed veggies. At the end of that, I added the ham, and enjoyed. I ended up with a very nice ham, rice, and vegetable soup. I left it up to whoever eats it to add salt to their preferred taste. I added too much salt, but otherwise, it was a very healthy and delicious dinner.

Wouldn't that be fun!?!

And now since we're speaking of beans, I'm going to ask a delicate question. Since eating so many more legumes over the last year, I seem to have developed a better ability to digest them without the nasty "side affects". Has anyone else noticed this as well? It's amazing to me!

Last night I made white chili. I used leftover turkey instead of the chicken breasts it called for. Cannelini beans, navy beans, chicken broth, onion, garlic and seasoning. YUMMMY! And it makes a big pot full so we both have a bowl for dinner tonight since I'll be running late.

One of my favorites is a pan of roasted vegetables. I put in whatever I have. It's especially wonderful during the summer when the garden is producing.
I use slivered carrots, onion, broccoli, spinach, leeks...anything goes. I put them in a pan with some olive oil, roast them at 425 for 1/2 hour. I love them in a wrap with a bit of feta...oh, so good!!

I have adapted cottage pie, by using extra lean minced beef, dry fried with chopped onion and seasoning to taste, a dash of Worcestershire sauce as well, add a stock cube and water and cook through. Save the cooking liquor to use as gravy, put the mince and onion in an oven proof dish and top with mashed potatoes and carrots(cook together and mash together) spread on top and bake in the oven until the top is golden brown and a little crispy. Serve with extra veggies and the gravy
