Ingredients 1/2 whole Small Seedless Watermelon, Diced 1/2 whole Red Onion, Diced 1 whole Red Bell Pepper, Seeded And Diced 1 whole Green Bell Pepper, Seeded And Finely Diced 1 whole Yellow Bell Pepper, Seeded And Finely Diced 2 whole Jalapeņos, Seeded And Finely Diced 1 whole Bunch Cilantro, Chopped 2 whole Juice Of 1 To 2 Limes 1/2 teaspoon Salt
Preparation Instructions Throw all the ingredients into a large bowl and toss it together. Taste with a chip and adjust ingredients as needed.
Serve with chips or on top of grilled chicken or fish...or as a side salad!
My husband and I love stew, and I've found a quick way to make some with veggies on hand and the frozen meatballs we keep on standby.
12 small meatballs 1 potato, cut in chunks 1 can beef broth (reduced sodium) 1/2 small cooking onion, chopped coarsely 8-12 baby carrots or one large chopped 1 stalk celery, cut in 1" pieces 1 bay leaf 1 package gravy mix (brown or onion) 1 Tb flour other seasonings as desired (garlic, basil, thyme, pepper, salt)
Cook vegetables and bay leaf in beef broth until just tender. Add meatballs to vegetable mixture and heat for a few minutes to thaw meatballs.
Mix gravy mix and flour in a measuring cup. Spoon some of the broth from the vegetables into this to make a paste and then add more broth gradually, stirring to keep smooth.
Add the rest of the broth in the pan to the gravy mix, stir, and pour back into the pan. Bring back to a boil, and adjust seasonings if needed.
Note; other vegetables may be added as well -- peas, green beans, mushrooms, tomatoes, etc., but more beef flavoring may be needed as they add liquid. I sometimes add a teaspoon of 'Better than Bouillon' to the gravy for more flavor.
On one of my Spark People emails, there was a motivational quote about how this guy would snack on Greek yogurt with a handful of granola thrown in. I often make that a meal--lately I have been doing that daily. Either for lunch or dinner, I get a single serving of Chobani or Oikos plain Greek yogurt. I add 1 serving of granola (my favorite being Back to Nature brand--Cranberry Pecan or plain). Then I add 1/2 cup of frozen blueberries and sprinkle with sweetener. It's like having a dessert for a meal. In place of the granola I sometimes use 1 biscuit of Weetabix. I had never heard of Weetabix until I ran across it in the grocery store near the granola.
I love my turkey burgers and keep a supply of them in the freezer for an easy dinner entree.
2 pkgs ground turkey (about 2-1/2 lbs total) 1 small cooking onion, chopped 1/4 green bell pepper, chopped 1 egg or 1 small Eggbeaters container 1/2 C salsa or spaghetti sauce 1/2 C seasoned bread crumbs
Make into patties of desired portion size and freeze on cookie sheet. Transfer to a large Ziploc freezer bag and enjoy with your favorite topping after cooking like you would a hamburger. We like spaghetti sauce with a side of pasta, or barbecue sauce with oven-roasted potato slices or wedges, or best yet, with brown gravy and mashed potatoes.

Salsa Chicken 8 chicken thighs (or chicken of your choice) 1 jar of salsa
Place chicken in a glass baking dish, pour about 3/4 jar of salsa over the chicken spread out with a spoon and bake in the oven uncovered at 375 for about 45 minutes to an hour. Check the internal temp before serving.
