roasted veggies are so yummy, some prep but throw it in the frig and snack for days...

That sounds awesome, thanks for sharing!

My boyfriend and I made a HUGE pot of soup to have for the week for lunch. We put ALL kinds of veggies in it! We fill up a pot with water, then we add some diced beef. Let it cook, then add all kinds of chopped veggies. We put string beans, carrots, onions, leeks, parsnips, turnips, potatoes, squash, corn, and then also threw in some dill and cilantro. Mmmm mmm mmm!! And then what we do when its time to serve the soup, cut some limes up, dice some more onions, chop up a little bit of jalepenos and grab a handful of cilantro and we just set it out so we can add what we want to the soup. Fresh lime juice in soup is amazing!!

This soup is so easy to make, so good, and has so many veggies in it that it fills you up but is super healthy! What we also do is make a pot of rice, I like eating the soup as is, put my boyfriend likes adding some rice to his soup too. Yum!

I've reading about detox again...not a big fan of extreme detox but, it reminded me of my Clean Soup recipe for an easy detox:

Clean Soup

32 oz carton of Trader Joe's Vegetable Broth (a very simple broth, not too high in sodium)
1-2 cups of water
1 large carrot, sliced
1 large celery stalk, sliced
1 leek stalk (with some of the green too), sliced and diced
approx 2 cups ea. broccoli and cauliflower pieces (small)
1 glove of garlic, chopped
sea salt,dried parsley,thyme, curry....to taste
1 tsp green curry paste
1/2 to 1 Tbsp ea, of butter and olive oil
a couple of handfuls of roughly chopped kale

Heat broth and water with carrot slices till boiling. Add all the other veggies except the kale. Add the spices, curry paste, oil and butter. Simmer until veggies are just tender, then add kale. Simmer another minute and serve. Makes at least four to five servings (bowls)

It's DE-licious!

I saute fresh veggies till tender crisp in a little olive oil and garlic then add that to spaghetti sauce, heat thoroughly. Pour over a multi grain or half whole wheat pasta (Barilla Plus or 50% whole wheat). Sprinkle a little feta cheese on top....delish!

I totally agree that peppers rock! I try to have peppers, onions and zucchini in the frig for the week and try to make stir frys and add them like Yami below to other things.. good thread!

I love red and green peppers. My boyfriend and I always get a big bag of them when we go fruit and veggie shopping! emoticon

I think peppers are one of the easiest veggies to prepare and put into anything! I make peppers with omelets, I dice them up and put them in a pot of beans, i've sliced and sauteed them and put them ontop of pork chops or steak. I also like slicing them and adding them to salads.Stuffed peppers are also really good! You can prepare that for dinner, spark recipes has a good stuffed pepper recipe that I use.

Lets see what else do I do with them... I also like dicing them up along with onions and pototoes, put them all in a pot together, and cook them with salt, pepper, paprika and a little bit of olive oil. Mmmm mmmm mmmm!!! And of course when making stir fry adding peppers and onions is a must! lol

Sometimes people think the only way to get in there fruits or veggies is if they eat a salad, or just eat the fruit as is, which is not bad at all! But sometimes it can get a little boring. Share with the team different ways we can prepare and enjoy our fruits and veggies! Anything from snacks to dishes!
