We have a winner! (does that look like a "Happy Dance"?) I added a little salt and DH doesn't want me to put any pepper in ("You can add it to your bowl, Lora.") but we had a really tasty, satisfying dinner!

I have a recipe for a stew that I call Pork & bean stew (it's actually a BHG recipe called Slow Cooker Holiday Pork Stew) that DH and I absolutely love. Realistically, it isn't too unhealthy for a main dish that uses pork shoulder and kielbasa as its main ingredients. It is, however, a great format to use to create new flavors. Two years ago I played aound with the idea of changing the sausage for pancetta and adding escarole. While I haven't tasted it yet, it will be dinner for tomorrow night and I'll let you all know what I think and if it needs and tweaking.
ETA: calories 243, fat 4.5g, cholesterol 25 mg, sodium 502 mg and if you get gluten-free chicken broth, the recipe is clear for my gluten sensitive friends.
