There are alot of superfoods that we have during the holidays, but I guess it really is what you how you prepare them such as loading with sugar, fat laden gravy ect. I always make a great sausage stuffing but it is loaded with butter, sodium so this year going to use low sodium chicken broth, turkey sausage and whole grain breads versus the white bread.

Sweet Potato something or other is always a given at our Thanksgiving Table....well and so are cranberries in a cranberry relish....with a little bit of orange in there YUM! emoticon and I guess turkey is a superfood as well...never really thought about how many superfoods hit the table at Thanksgiving

Sounds good! I have never tried pumpkin pudding, but I would like to try this as I love pumpkin pie! emoticon

I will start.Pumpkin rich in high in alpha and beta carotenes, fiber high in nutrients that pack a punch for disease fighting and increasing the immune system. It is high in a, c, e, pottassium, maganesium and pantothenic acid. I found this recipe when searching for an alternative for pumpkin pie.

Pumpkin Pudding

- 1/4 to 1/2 cup sugar
- 2 to 4 teaspoons cinnamon
- 1/4 teaspoon ground ginger, optional
- 1/4 teaspoons ground cloves, optional
- 2 large eggs (use eggs with omega-3 content, as noted on label
- One 15 ounce can Libby's 100% pure pumpkin
- One 12-ounce can Carnation evaporated nonfat milk (or evaporated 2% milk)

Mix all the ingredients together and pour into an 8 by 8 inch casserole and bake in a preheated 350 F oven for about 30 minutes. Don't overbake; the center should be slightly wiggly. Cool and refrigerate for later use.

To be in the spirit of the Thanksgiving Holiday I wanted to create a fun challenge for everyone.
Everybody can participate at any time. I want you to think of what foods you can add to your thanks giving table using the super foods. So let give thanks for the good health we have and give our families healthy foods that will keep them healthy for years to come. As an added bonus anyone that would like to share a recipe please do so we can share with all our families.
