I am trying to add more veggies and fruit! Even though I'm vegan I can fall short on my servings. I need to limit the carbs more it's nice to read I'm not the only one that loves veggies and fruits but for some reason do not eat nearly enough of them!! : )

I have been adding veggies in more since I started.
I love them I just don't eat them like I should it's odd.

I have greatly increased my vegetable intake in the past couple months. I love eggs, so I have eggbeaters every morning for breakfast. I add vegetables, such as onion, mushrooms, tomatoes, salsa and I like to add a sprinkling of black beans for fiber. I love this breakfast. I usually have a light vegetarian lunch of salad or cooked vegetables and at least 1 vegetable at dinner, usually more.

I have cut way back on starchy carbs such as sweets, bread, pasta, rice. I am scheduled to have my lipids checked at the end of June and hope to see improvement. Walking also helps to lower lipids.

I still watch my sat fat and make sure I get good fats like those from fish and nuts.

I only wish I had done this years ago instead of letting myself end up with heart disease.

Amy, have you had your throat checked out? It sounds like you have either GERD or a Hiatal Hernia. They both can cause difficulty swallowing, even water. I am sorry to hear that you are having this problem. I hope you can find relief.

hank you for your support and suggestions when this first started out I felt like I had a mucus blockage in my throat it was even hard to get water down. I was like ok this is only going to be a temporary thing. The mucus blockage is gone and I am still having a hard time swallowing and I can't continue on the path that I am on nutrition wise. I will try what you 2 have suggested.

Or, Amy, just throw the veggies in a blender with some fruit juice and strain it if it come out to fibrous for you. But it you can manage it unstrained, that's better. I know some people who have a hard time swallowing eat baby food which is a little thicker than liquid, but not much.

amy sorry to hear you are having trouble maybe you could try one of the green drinks that are made of vegetables to get your vegetables in. or one of the fruit fusion drinks, they are pretty good.

Right now I am having a hard time swallowing so I am on liquids. I have even had to get my meds in liquid form.

that oatmeal. well this is the way I look at carbs. there are good ones and there are ones not so good. I make sure and pasta I use is whole grain, making it a better choice and keep portion small, potatoes, I don't have a lot anyway but when I do I bake it so its only 128 calories and use a spray o calorie butter on it not lots of things to add the calories. you can watch on your chart to make sure you are not using too many but then it doesn't tell weather they are good ones you are having or bad ones. only you know that. the bad ones are sugar foods, ggodies we shouldn't have stay away from them and the others aren't so bad. just watch sugar and make them whole grain. good luck.

I don't eat veggies for breakfast, but I make up for it the rest of the day. I've cut way down on the bread and potatoes, especially since they've started saying its the high carb intake rather than the saturated fat intake that causes heart disease. I'm wondering where that leaves the morning bowl of oatmeal.

yes I have had vegetables every meal everyday since I started my healthy eating habit on jan. 1 I have pepper/ onion stirfry and broccoli, cauliflower and or spinach in my eggbeater omelet every day. I have lettuce, carrrots, celery with tuna or chicken salad at lunch( usually no bread, and dinner I make sure I have at least one vegetable if not two. come on you can do this. just try its for your well being. good luck your HEART deserves it.
