If you want some great novel ideas for health foods I recommend checking out Dr. Gillian McKeith (had a great show in the UK: "You are what you eat") her make overs mealtime fare are very creative especially a breakfast of lettuce soup worth a look at her shows too

So, today I was cleaning out my fridge for the "Official Healthy Cooking Challenge Team" Week 1 task. While some things needed to be thrown out emoticon , others were destined for pita bread breakfast and lunch. I've taken pictures, entered the recipes, and written about them on my blog.

I enjoyed both entrees, and I WAS using up bits and pieces. The AA pizza recipe calls for artichokes, but I had to omit them because they were destined for the compost bin.

I always rely on a stir-fry. I marinate the meat that has been slice very thin(whatever you want you use) in 2 tbsp. canola oil, a few pinches of crushed chilli, a teaspoon of garlic powder, and about 1/2 teaspoon of ground ginger and about 3 tbsp of low sodium soya sauce. I marinate it at room temperature for 1 hour and then stir-fry until almost done and add frozen stir-fry vegetables. I also add extra red and orange peppers(also frozen). I use frozen because it is very hard to find good fresh vegetables where I live.

Thanks, I've tried making them with regular cocoa ex. Hershey's, and I just don't like the taste. But I bet the coffe helps.

I make a mocha drink that is half coffee (=water) and half 1% fat milk. I put in 2 teaspoons of cocoa and sweeten it with stevia. I expect you could use all milk and another teaspoon of cocoa?

I was looking for a low cal, easy chicken recipe that could be served at cool to room temperature for a picnic. I used a jerk marinade for pork tenderloin and adapted it to a poached chicken. I used only skinned boneless Chicken breasts. When I got home, I took the poaching liquid, reduced it, thickened a bit with cornstarch and added curry seasonings. Put it in the freezer. Had out of town guests--thawed and served over a brown rice, barley and wild rice pilaf. My guests were impressed and Oh so easy. You can find the recipe on the Spark Recipes: Quick Jerk Chicken, and I also have put my Turkey/Pork meatballs--filled with vegetables and oatmeal on the site--freeze well.

RE: the request for a low-cal quiche.

There is this crustless quiche on the spark recipes. The crust adds much of the fat and calories to a quiche. This one forms a bit of a crust, like a Bisquick impossible pie. I think the calories on this one aren't bad, but you could use an egg replacer and a smaller amount of cheese to make it even lower.

I am a huge fan of oatmeal cookies with chocolate chips and pecans, yum! Thanks for sharing your recipe.

We thank the squirrel gods for the pecans "planted" in our yard. Last Fall, we had a small harvest - maybe a pound. It took forever to crack the darned nuts! What does your mom use?

Here's a recipe for Oatmeal, Chocolate Chip, Pecan Cookies that I love. My mom has several pecan trees so I always have them in my freezer.

Ingredients
1 1/4 cups all-purpose flour (about 5 1/2 ounces)
1 cup regular oats
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup granulated sugar
1/2 cup packed brown sugar
1/3 cup butter, softened
1 1/2 teaspoons vanilla extract
1 large egg
1/4 cup chopped pecans, toasted
1/4 cup semisweet chocolate minichips


Preparation
Preheat oven to 350.
Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 4 ingredients (through salt), stirring with a whisk; set aside.

Place sugars and butter in a large bowl; beat with a mixer at medium speed until well blended. Add vanilla and egg; beat until blended. Gradually add flour mixture, beating at low speed just until combined. Stir in pecans and minichips. Drop dough by tablespoonfuls 2 inches apart onto baking sheets lined with parchment paper. Bake at 350 for 12 minutes or until edges of cookies are lightly browned. Cool on pans 2 minutes. Remove cookies from pans; cool on wire racks.

3 dozen (serving size: 1 cookie)

Yum, frittata! I love omelettes, and this Italian style is certainly very filling. Made with egg substitute or egg whites, you should have a nice, low cholesterol frittata.

My omelettes are made with 1 whole egg, so mine come out more like an egg-y crepe, lol!

A really good comfort food recipe is the chicken chili bean stew....loads of fiber, low in fat and super quick and easy if you're in a hurry. A dozen ways to add or remove something you don't like without changing the flavor. Check the spark recipes. Add some low fat cheese, fat free crackers or splurge with cornbread...yummmy!

About the tea and cookies.....If you don't have time for cookies, nabisco created a new fig newton. It's a crisp and has like a 100 cal per pack and is about three inches long. Not the crumbly cookie you're used to....very ,very good! I'm a tea lover too....do you splenda and skim milk your tea???

Foil packet "grilling"

Wrap your favorite veggies in foil with just a little lemon juice, olive oil and fresh herbs. The foil packets take about 5 minutes (or so) over coals and they're done.

Hobo potatoes: make deep cuts about every 1/2" along the potato, not cutting all the way through. Stuff the cuts with thinly sliced sweet onion, like Vidalia. Season with salt, pepper, a mixture of dried herbs - whatever you want. Close up the foil and set on the back and sides of the grill while everything else is cooking. They might take 30-45 mins (or so), depending upon how thick the potato and how hot the grill.

Corn in the husk - soak in water about 10 minutes (so the husks aren't totally dry); drain and grill as is for 30 mins or so, or until tender.

Tilapia, salmon, and just about any seafood is wonderful in foil packets.

You can even assemble a whole individual meal-in-a-packet: thin filet of tilapia, sliced squashes and tomato, sliced boiled baby potatoes or ready-to-serve brown and wild rice (Success or other), fresh herbs and a little olive oil.

My darling groom is the master of the grill. He does salmon on the plank - to die for!

We also have an "industrial strength" humongous steel wok - great for cooking on the grill.

It's grilling time! I need some new ideas for the grill. I did try something this weekend that amazed me. I marinated thick sliced zucchini in lemon juice, fresh thyme and rosemary and garlic. Then I scewered them like kabobs and grilled. They were delicious.

I make mine using organic eggs, fresh chopped spinach and onion, grated Asiago, low-fat cottage cheese and some low-fat baking mix. The baking mix added to the filling mixture makes its own crust as a variation of the Bisquick box recipe. One of these days, I'll have to write down the recipe, hahaha!

Sweet potato "fries" are great, too! One of my favorite cooking styles is tempura and I love tempura sweet potatoes. If there was a way to do them in the oven, that would be heavenly!

I like the sound of the butternut squash fries. Hubby claims he does not like butternut squash, but I have a feeling he would eat these. He does not like sweet potatoes, but he will eat them when I make them into oven fries.

I absolutely love zucchini cakes (and onion cakes, and sweet potato cakes, and potato pancakes, lol)!

The butternut squash fries sound good, will have to try them. Thanks for posting the recipe!

I went to the Sparkrecipe.com board yesterday to look up Zucchini Pancakes and found the exact receipe I had made from a cookbook. The reason I went there was to find out what the nutritional value of the recipe was.

You can find the recipe there. I also made a recipe that I found on Weight Watchers board.

Butternut squash fries.

You peel the butternut squash with a potato peeler
cut in lenghtways and take out the seeds.

Cut it into fries. Make them a little larger than
regular fries, because the smaller ones become mushy
if cooked too long.

Preheat the oven to 425 degrees.

Put the fries into a ziplock bag with 1 tbsp of oil
and salt and pepper, I also used chili powder, because I like spicy ones. When they are all coated
pour them out onto a cookie sheet.

Bake for 30 minutes, turning once after 15 minutes.
If you cook for longer than 30 minutes they will become mushy.

They were delicious.
