From the garden:
3 big ears of corn
1 lg. yellow squash
1 med. onion
1 1/2 cups chopped New Mexico Hatch green chile (from the Farmer's Market)
1 1/2 cups pinto beans (cooked)
1 lb ground beef (from a local ranch grass fed cow we bought)
Brown the meat in a dutch oven, add the rest of the ingredients plus some garlic, salt & pepper, add about 2 cups of organic chicken broth & simmer for about 30 minutes. Thicken with some corn starch if you like.
Delicious, healthy and easy! Every ingredient was grown locally (except the green chile) and most of it came from the garden!
