Do you put the herbs inside the cavity or on the surface? I have always put them on the surface but I hear that some people prefer them inside, I wonder how much to use inside vs outside.

I prefer to slow roast mine with fresh herbs, sea salt, fresh cracked pepper,and some olive oil...

Makes for incredible leftovers!!

Thank you for all the delicious recipes and suggestions!! Hmmmmm!! I like to cut it into strips and stir-fry in a little olive oil, along with lots of vegetables and a little teriyaki sauce, AND I GET MY PROTEIN AND VEGETABLES TOO!!

Giada DiLaurentiis has a very good balsamic marinade for chicken.

* 1/4 cup balsamic vinegar
* 2 tablespoons Dijon mustard
* 2 tablespoons fresh lemon juice
* 2 garlic cloves, chopped
* 2 tablespoons olive oil
* Salt and freshly ground black pepper
* 1 (4-pound) whole chicken, cut into pieces (giblets, neck and backbone reserved for another use)
* 1/2 cup low-salt chicken broth
* 1 teaspoon lemon zest
* 1 tablespoon chopped fresh parsley leaves

i steam mine,brush a chicken portion with some lemon juice and olive oil, i use lemon infused olive oil, wrap in foil place above a pan of boiling veggies, there you go a whole meal in one pan emoticon

I used to hate to cook chicken because I could never get it moist and flavorful. It was always dry and bland. Buuut, my mom found these great cooking magazines - Cook's illustrated - and I have made some great chicken using their recipes. My kids really love the stovetop roast chicken. I like the Roast Lemon Chicken, myself. But, I've made easy Chicken Tikka Masala and Chicken Tandoori that were pretty good.
The recipes are not geared toward being calorie conscious. But, with portion control, they have not been too bad.

I like to marinate it in Italian dressing then grill it. I use regular or fat-free dressing. What ever I have on hand at the time.

I prefer a whole bird spatchcocked (backbone removed and flattened)and roasted. Seasoning varies.

Breasts I like in cutlets and quickly sauteed. Seasoning varies.

Thighs I like skinless, stewed Spanish style.

I'm not real big on chicken, but I do like to slice cooked chicken breast into a salad of mixed greens, dried cranberries, walnuts and feta.

grilled with a mango salsa
1 ripe mango peeled and diced tiny, 1/4 c tiny diced red onion, 1/4 c tiny diced red bell pepper, 1 jalpeno - very tiny diced, 1/2 c chopped cilanto, combine and squeeze 1/2 a lime over it. serve chicken with a spoonful of the salsa on top.

Teriyaki: 1/2 cup low salt soy, garlic (my taste is 1/4 tsp minced from jar), ginger (1/2 tsp ground, or less fresh, minced) Marinate an hour or more, broil, grill or stir fry.

Sometimes I dip the breast in egg white and then roll it in toasted sesame seeds- brown it quickly in a little canola oil and then bake until done...MJ

We usually rub it with a little olive oil and sprinkle on some herbs, basil, a little garlic and roast in the oven until done
