Thank you for all the delicious recipes and suggestions!! Hmmmmm!! I like to cut it into strips and stir-fry in a little olive oil, along with lots of vegetables and a little teriyaki sauce, AND I GET MY PROTEIN AND VEGETABLES TOO!!

Giada DiLaurentiis has a very good balsamic marinade for chicken.
* 1/4 cup balsamic vinegar * 2 tablespoons Dijon mustard * 2 tablespoons fresh lemon juice * 2 garlic cloves, chopped * 2 tablespoons olive oil * Salt and freshly ground black pepper * 1 (4-pound) whole chicken, cut into pieces (giblets, neck and backbone reserved for another use) * 1/2 cup low-salt chicken broth * 1 teaspoon lemon zest * 1 tablespoon chopped fresh parsley leaves

I used to hate to cook chicken because I could never get it moist and flavorful. It was always dry and bland. Buuut, my mom found these great cooking magazines - Cook's illustrated - and I have made some great chicken using their recipes. My kids really love the stovetop roast chicken. I like the Roast Lemon Chicken, myself. But, I've made easy Chicken Tikka Masala and Chicken Tandoori that were pretty good. The recipes are not geared toward being calorie conscious. But, with portion control, they have not been too bad.
I'm not real big on chicken, but I do like to slice cooked chicken breast into a salad of mixed greens, dried cranberries, walnuts and feta.

grilled with a mango salsa 1 ripe mango peeled and diced tiny, 1/4 c tiny diced red onion, 1/4 c tiny diced red bell pepper, 1 jalpeno - very tiny diced, 1/2 c chopped cilanto, combine and squeeze 1/2 a lime over it. serve chicken with a spoonful of the salsa on top.
