I love this recipe, add your own nuts. Make substitutions as you see fit.
1 3/4 cup whole wheat flour
2/3 cup sugar
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1cup ripe banana ...2-3 medium mashed bananas (I always use 3, I like lots of them)
1/3cup oil
2T milk
2 eggs
In a large mixer bowl combine 1Cup of the flour, sugar, baking powder, soda and salt. Add mashed banana, oil, and milk. Beat with an electric mixer on low till blended then on high for 2 minutes (many times I just beat it by hand). Add eggs and remaining flour and beat until blended.
Pour batter into a greased and floured loaf pan. Bake in a 350 oven for 55-60 minutes or until a toothpick inserted near the center comes out clean. There is a characteristic split in the top of the loaf. Cool for 10 minutes on a wire rack. Remover from the pan. The recipe says to cool thoroughly on a wire rack, but warm banana bread is too irresistible!!!
