Oh yummy. Frozen articoke hearts, huh? Have to see if I can find them. Artichokes have always been something I only eat out never thought of looking for frozen ones.

Chances are you get your rice from Texas or California, anyway, since these states are the major exporters.

I will have to look for the success rice.

We had a big family discussion about rice last night. We tend to eat rice several days a week. We can switch to other foods so with the food shortages/ riots we talked about giving up rice until the world supply stabilizes. But the discussion turned more practical and it was decided that this would be a pointless gesture and the more positive thing we could do was increase our charitable giving to help in a more direct way.

I love the Success brown rice that reheats in the microwave in 90 seconds. M/W the rice as directed, then toss the contents into your handy dandy non-stick pan and add:

1/2 cup diced baby carrot (around 1 snack packet)
1/2 cup frozen baby peas
1 cup frozen artichoke hearts (I'll cut them even smaller)
1/4 cup thinly sliced onion
scant bit of olive oil

Heat all the ingredients through, tossing gently. Season to taste.

The packaged rice is for 2 servings, so this makes up enough for a couple of lunches or a side dish for 2-3.

You can add other ingredients, like boiled shrimp, diced cooked chicken breast, whatever.
