Going There, I'm knocking myself on the head! You're right: There must be tons of recipes out there for yolk substitutes. I wish I could try your tofu idea, but I just hate the stuff. I know it's good for you and supposed to absorb the taste of the other ingredients, but try as I may, I just can't get into it. I will try your other ideas, though. Thank you!

Eggless egg salad is also surprisingly good. :)
I've yet to figure out how to make mayo without chicken eggs, though. It's hard enough trying to avoid humid days to make it. hmmm...

There are several recipes on the net for eggless "deviled eggs" that are good. I got some made with Tofu from Trader Joe's, very good. It seems if you put in the dry or wet mustard, green onions or chives (whatever your preference), a little vinegar...and the fofu or even cottage cheese....you get a tasty fill for your eggs. Almost forgot...could also add light mayo (canola mayo good) or even yogurt...all kinds of ways!

People with high cholesterol have to carefully think before they eat. I love eggs, do you? With more holidays coming, I started to think about ways to enjoy Deviled Eggs without the yolk. How about this...
Hard boil eggs.
Remove the yolks.
Make a healthful guacamole -- Some mashed avocado, a bit of squeezed fresh lemon or lime works great on its own. If you want to make it more fancy, add some jalapeņo and -- only if you must -- a dab of non-fat mayo. If you like cilantro toss a little on top. Whatever strikes your palate as healthful and tasty will do.
