People with high cholesterol have to carefully think before they eat. I love eggs, do you? With more holidays coming, I started to think about ways to enjoy Deviled Eggs without the yolk. How about this...
Hard boil eggs.
Remove the yolks.
Make a healthful guacamole -- Some mashed avocado, a bit of squeezed fresh lemon or lime works great on its own. If you want to make it more fancy, add some jalapeño and -- only if you must -- a dab of non-fat mayo. If you like cilantro toss a little on top. Whatever strikes your palate as healthful and tasty will do.
