One of my favorite raw recipes: soak walnuts, drain, and puree with fresh herbs and garlic of your choice. Thinly slice zucchini (I use a mandolin). Spread a generous helping of your walnut puree on each zucchini slice, roll each up like a pinwheel, securing with a toothpick if necessary. Dehydrate at 95 degrees for at least 60 minutes, up to 2-3 hours depending on how firm you want them. YUM!
