My dinner tonight:
Ingredients:

- 2 apples, cored and cut
- 100 grams of peeled butternut squash
- 1/2 orange, peeled
- 2 tablespoons of lemon juice
- 1/2 red onion
- 1 cup almond milk
- 3 tablespoons of pumpkin seeds
- 2 tablespoons of chopped parsley
- 1 tablespoon of sun-dried tarragon
- salt and pepper to taste

Preparation:

Blend all ingredients except the parsley until you have obtained a smooth and creamy soup. You may need to add up to a glass of fresh water to obtain the desired consistency. Serve with sprinkled parsley and season with salt and pepper to taste.

Raspberry Sorbet

1 large avocado
1 lime, juiced (or more)
2 cups of frozen raspberries
1 teaspoon vanilla extract
5-15 drops of NuNaturals stevia (add more as desired – I like lots). You can use vanilla stevia if you prefer.

Optional extras for toppings: fresh or frozen whole raspberries, freeze dried berries or other fruits, high quality 70% plus dark or raw chocolate chopped into pieces

Put all ingredients together in a food processor fitted with the “S” blade or into a high speed blender like a Vitamix or Blendtec. Add the berries into the processor straight from the freezer so they add the icy effect.

Process until the mixture is only just well combined as you don’t want to lose the ice cream consistency and turn it into a liquid.

Serve with toppings of choice, and enjoy each and every bite. Guilt-free!

Sprouted Corn Chips

Makes 4-5 trays

1 c golden flax soaked 10-12 hours
1 c almonds soaked 10-12 hours
3 c fresh corn kernels shucked off cob
1 c yellow bell pepper, seeded and chopped
2 T onion powder
2 T dried oregano
1 ½ T Celtic sea salt
1 T cumin seed ground

In food processor, process all ingredients in batches for optimum texture.

First blend the soaked flax until as smooth as possible, place in mixing bowl and set aside.

Proceed by processing the soaked seeds or nuts until finely pulsed consistency. Continue by also blending the corn and peppers until finely minced along with dried herbs, spices and salt.

Hand mix all ingredients well thoroughly.

On dehydrator teflex sheets, spread cracker batter evenly about ¼ inch thick. Score with rubber spatula to desired size and dehydrate at 110 degrees for 12-14 hours. Half way through I recommend flipping the crackers for a more thorough drying process.

Store in sealed container for storage.

Raw Vanilla Ice Cream

1/2 C cashews, soaked 1-2 hours or more
1 1/2 C water
3 T honey
1/2 T vanilla
1/8 t salt
1 T light cold pressed olive oil

In a blender, blend all the ingredients until smooth.

In an ice cream maker - place ice cream bowl in the maker, place the "beater" in the center (large circle on top in cuisinart ice cream maker.)

While the ice cream maker is turned on, slowly pour in the mixture.

Ice cream will be done in 20-30 minutes.

Note: Basically ice cream has a fat ingredient and a sugar ingredient and flavoring. For your fat, you can use coconut meat, almonds, or cashews. For the sweetener, you can use honey, maple syrup or dates. You can add any flavoring you like by way of fruit, cacoa etc. Your imagination and likes are your only limits.

Here's something that I've been eating for ages and just love it! I simply cut up some fresh fruit (grapes, strawberries, apples, etc) and top them with raw oatmeal.

Zucchini Almond Hummus

Makes about 4-5 servings

1 cup almonds, soaked (I chose to peel mine for easier digestion, but feel free to keep the skin on, it’s loaded with nutrients)
2 small zucchini, chopped (about 2 1/2 cups)

1 clove garlic (I used just a tiny sliver of garlic, but adjust to your own tastes)

2 tsps cumin powder

1 tsp salt (or more, to taste)

Black pepper to taste

*Optional: a pinch of cayenne pepper, I find it adds a nice little kick
Juice of 1 large lemon (2-3 tbsp)

Place all ingredients in a Vitamix or other high speed blender, blend on high until very smooth.

I combined a few recipes last night with what I had on hand:

Handful of baby bellas
Handful of spinach
Handful of cherry tomatoes
Handful of chopped celery
1 cup warm water

Blended

Added chopped walnuts, zuchinni, mushrooms and onions.

Beth's Mango Breakfast Energy Pudding

1 mango, peeled, pitted, chopped
1 large banana
1/2 cup coconut water (can use filtered water if desired)
2 tsp green powder (spirulina, chlorella, etc.)
1 LARGE handful of parsley

Blend all in blender until smooth, should be a thick, pudding consistency. Can eat as is or put in the refrigerator in a covered glass jar and allowed to firm up, approx. 20-30 min.

Hmmm....haven't had this for awhile, this sounds good. I'll have to make up a batch!

I just made this last week (mini-flax pizza bites) to take to my in-law's house for Easter....we did not end up going due to very sick dog, but they were good!

Mini Flax Pizza Bites by Russell James

Flax Cracker Base
Either use your own flax cracker recipe, flax crackers you already have, or use this recipe.
1/2 cup flax seeds
1/2 cup flax meal
6 medium tomatoes
1 cup sun-dried tomatoes, soaked 2 hours or more
1 tablespoon lemon juice
1/4 cup fresh basil
3 tablespoons dried Italian herb mix
3 medium onions
1 clove garlic
- Grind all ingredients in a food processor
- Spread evenly and thinly over 2 nonstick dehydrator trays, right to the edges and then use a knife or spatula to score into individual squares .
- Dehydrate at 105 degrees for 3 hours then invert onto another mesh dehydrator tray to finish drying in the dehydrator for a further 10 – 18 hours.

Pine Nut Cheese Spread
1/2 cup pine nuts
1/2 cup macadamias
2 teaspoons lemon juice
1/4 teaspoon salt
2 teaspoons nutritional yeast
1/4 cup water
- Grind all ingredients in a food processor.

Tomato Sauce
4 medium tomatoes, de-seeded
1/4 cup sun-dried tomatoes, soaked 2 hours or more
1 soft date
1 clove garlic
2 teaspoons olive oil
1 tablespoon fresh basil
1 tablespoon dried oregano
2 teaspoons lemon juice
- Blend all ingredients in a high-speed blender until smooth.

Pesto
2 cups basil, tightly packed
1 tablespoon minced rosemary
1/4c pine nuts
1T olive oil
1/4t salt
2t lemon juice
- Pulse all ingredients in a food processor until broken down, but leaving some texture to the finished pesto.

Assembly
- Start with the flax cracker as a base to which you’ll add a layer of the nut cheese spread.
- Next comes the tomato sauce and then top off with some pesto.
- Garnish with olives, capers and a sprinkle of Italian seasoning.
Variation: This recipe works great using marinated whole mushrooms as a base instead of flax crackers.
- Marinate 12 mushrooms in 1/4c tamari and 1/4c olive oil for 2 hours or more.
- Fill the mushroom caps with the nut cheese, tomato sauce and pesto. Going heavier on the amount of pesto works really nicely with mushrooms.
- Once the mushrooms are stuffed, place in the dehydrator at 105 degrees F to warm through for 1 – 2 hours.

Quick Parmesan Cheese

1/4 cup macadamias
2 tablespoons nutritional yeast
1/4 teaspoon salt

Use a Microplane to grate the macadamias into a bowl.

Add the nutritional yeast and salt, and then mix thoroughly.

EASY CHEESY BROCCOLO

1 head of broccolil
Olive Oil
sea salt

Prepare broccoli by cutting broccoli florets into bite-sized pieces. Massage a tiny amount of olive oil and sea salt into the broccoli and let stand for 10 minutes or more to soften.

Cheese Sauce:

1/2 cup macadamia nuts
1/2 cup cashews
1/4 cup coconut aminos
1 1/2 TBS lemon juice
2 garlic cloves
1/2 red pepper
1/2 tsp sea salt

Blend all the ingredients in a blender until smooth. If not cheesy enough for you, add a little more red pepper.

Asian Style Jicama Salad

1 cup JICAMA (cut into 1 inch sticks)
1 cup SNOW PEAS (cut into ¼ inch widths)
1 cup NAPA CABBAGE (torn into salad-size pieces)
2 CARROTS
1 BUNCH SCALLIONS (cut on the bias)
¼ SESAME SEEDS
2 Tbsp APPLE CIDER VINEGAR
2 Tbsp NAMA SHOYU
4 tsp HONEY (or 2 tsp agave)
1 tsp SESAME OIL
1-2 Tbsp WATER

Peel JICAMA root and cut into matchstick shapes. Tear or shred CABBAGE into salad-sized pieces (substitute romaine lettuce if preferred, but I find the cabbage holds up better in the dressing). Slice SNOW PEAS into ¼ inch widths. Shred CARROTS. Cut the Scallions on a diagonal slice. Combine all in a bowl and mix.

In a smaller bowl, add VINEGAR , NAMA SHOYU, HONEY, SESAME OIL, and WATER (start with 1 Tbsp of water and add another if desired). Mix ingredients.

Combine dressing and vegetables and toss thoroughly.

Come back and post at least one Raw Recipe per week for a total of 4 and you will be rewarded with a Team goodie for sharing. It can be your own concoction or a recipe you found in a Raw Cook Book or online. It would be really great for us to incorporate some new Green Smoothie, Raw Soup, a different type of salad than the standard lettuce, tomato, cucumber versions, entrée, Raw Cracker, Raw Bread, or snack recipes.
