OMG I just made this for lunch today and I am eating as I write. This was my adaption of the Raw Demo of the Day on the Cauliflower Tabouli. It is
I tried to make myself just a portion for myself but it made so much I know I will have leftovers.
I tweaked the recipe:
1/2 bunch of the most gorgeous huge bunch of parsley I ever saw. It made 1 cup packed parsley and I mean packed. I am saving the stems for a smoothie.
1/2 head of cauliflower
2 large plum tomatoes
2 thick slices of a sweet onion diced (probably 1/4 cup) didn't have scallions
2 kirby cucumbers diced up
1/2 fresh lemon squeezed
1 Tbsp olive oil
sea salt/ pepper to taste
garlic powder- couldn't find my garlic press
Wash/dry the parsley. Cut off the stems and save for future use. Cut the parsley up pretty well.
Put your cauliflower in a food processor and pulse it till it breaks down into grain like particles (also good to make your veggie sushi with)
Season with olive oil, fresh lemon juice, sea salt, pepper and garlic powder. Mix well and let it while you chop/dice the tomatoes, onion, and cucumber.
Throw your cukes, tomatoes, and onion into the salad and mix well again.
I think I have a new favorite here and it is a great way to eat Raw cauliflower. Man I love to uncook!
