Summer Yellow Squash Soup With a Twist

3 medium yellow squash (approx. 4 cups)
1 medium tomato
1 medium carrot
2 medium scallions
1/2 to 1 cayenne chili pepper* (seeded)
1 tsp. Raw tahini or favorite nut butter
1 tsp. unpasteurized white/light miso
1 Tbsp. nama shoyu or soy sauce
1/2 fresh lemon or lime juiced
2 cups water

* depends on how much heat you like

Blend all of the items in a blender (I used my Kitchenaide) or food processor.

Serving Size: 4-10 oz. bowls

Creamy Raw Salad Dressing

1/4 cup almonds
1/2 cup water
1/2 small garlic clove
1 tsp unpasteurized white miso or
1 tsp fresh lemon juice
1 sprinkle of cayenne
1 T nutritional yeast sauce

Optional add ins:
fresh ginger
curry
tumeric


Soak your almonds in water to plump them up and make them creamier. Drain water before adding to your Processor. I use my Magic Bullet.

Throw all of the ingredients into your small Food Processor except for the Nutritional Yeast. Blend well.

Stir in the 1 Tbsp. Nutritional Yeast into your blended mixture. Let sit on the counter for 1/2 to 1 hour so the "sauce" thickens.

I couldn't eat it all. I have enough for another meal. I am sure the longer it marinates in the lemon juice in the fridge the better it will taste.

OMG I just made this for lunch today and I am eating as I write. This was my adaption of the Raw Demo of the Day on the Cauliflower Tabouli. It is emoticon I tried to make myself just a portion for myself but it made so much I know I will have leftovers.

I tweaked the recipe:

1/2 bunch of the most gorgeous huge bunch of parsley I ever saw. It made 1 cup packed parsley and I mean packed. I am saving the stems for a smoothie.

1/2 head of cauliflower
2 large plum tomatoes
2 thick slices of a sweet onion diced (probably 1/4 cup) didn't have scallions
2 kirby cucumbers diced up
1/2 fresh lemon squeezed
1 Tbsp olive oil
sea salt/ pepper to taste
garlic powder- couldn't find my garlic press

Wash/dry the parsley. Cut off the stems and save for future use. Cut the parsley up pretty well.

Put your cauliflower in a food processor and pulse it till it breaks down into grain like particles (also good to make your veggie sushi with)

Season with olive oil, fresh lemon juice, sea salt, pepper and garlic powder. Mix well and let it while you chop/dice the tomatoes, onion, and cucumber.

Throw your cukes, tomatoes, and onion into the salad and mix well again.

emoticon I think I have a new favorite here and it is a great way to eat Raw cauliflower. Man I love to uncook!

Didn't know what I wanted for lunch today because I wasn't that hungry and I thought of this recipe I had in Raw Cookbook. I used a mixture of gala and stayman apples I had in the fridge because I didn't have green apples.

So simple so good! As a Diabetic cinnamon is so good for me. Sounds like a strange combination of ingredients but it really works. It made so much. I had huge bowl for lunch and I have plenty of leftovers in my fridge for some great snacks.

Apple-Carrot Salad (like a super-vitamin apple pie!)

Number of Servings: 10

Ingredients

5 large carrots, grated
6 granny smith apples, grated
1 tsp cinnamon
juice from 4 lemons


Directions

Grate apples and carrots, mix in the lemon juice and cinnamon, and you're good to go!

Fennel Salad - been using the tops for my Green Smoothies

1 bulb of fennel
1 orange
1/2 small onion
sea salt and pepper to taste
lemon juice
splash of extra virgin olive oil


Wash and then core the fennel bulb

Slice the fennel bulb on a mandoline on thin setting and add to a big salad bowl.

Slice the onion also on the mandoline and add to bowl.

Peel orange and cut it widthwise into 4 slices

Take each slice and pull apart the segments apart over the veggies in your salad bowl, you want the juice so don't do this on a cutting board.

Squeeze 1/2 fresh lemon over salad, add a splash of extra virgin olive oil, season with sea salt and pepper.

Mix and serve.

Having no store bought salad dressings in the house has forced me to be creative. I thought my concoction of the other day was good, but the raw garlic made it too spicey for my palate. I made a new recipe today and simply love it!

I call it Karen's Salad Sauce:
1 avocado
1 heirloom tomatoe - medium size
juice of 1 lemon
1/2 sweet pepper of your choice. I used red
1/8 tsp garlic powder
1/8 tsp basil
1/2 cup water

Blend together. Made about 2 cups total. I use 1/4 cup of this on a very large salad. Out of this world!

For 2012 I gave up my store bought "healthy" dressing: Brianna's Poppyseed. I love the stuff and used it sparingly but it isn't organic and it isn't raw.

For 2012 I am making at least 1 new raw organic vegan recipe that I will eat myself each and every week.

Here's my first:Avocado-lemon-garlic Salad Dressing.

The Ingredients:


1 whole avocado

Juice of 1 medium lemon

1 large clove fresh minced raw garlic

1/8 tsp of celery seed

1/4 tsp of himalayan sea salt

1/2 C water

Put into blender and turn on. Water may be added if you want a thinner dressing. You can truly taste the garlic in this one. If you are a garlic lover like me it is YummmMe!

Makes 1 1/2 cups. Store unused portion in refrigerator. Keeps for 5 - 7 days.

This has got to be one of my favorite Raw recipes. It is so easy to make and I usually have it a couple of times a week, even during the Fall and Winter.

If you don't like crushed red pepper then leave it out. (I usually make mine without it because it is a fresher and sweeter soup without it) In the winter it is great because it adds extra heat to the soup to help warm your body because after all the soup is Raw and thereby cold. You can also add some onion to the soup if you like.

We have tons of great raw recipes provided to us by our lovely TRAVELNISTA. Most of us have acquired raw un-cook books and have lots of un-cook websites that we peruse. How many of us actually MAKE the recipes we are provided with? It's time to put the pudding to the test and get off our duffs and JUST DO IT!

This forum is for us to not only share the raw recipe, but tell the team how you like it, etc. I challenge us all to do just this at least once a week. It has to be from a recipe and you need to put the link in with your post so others can have it for their bookmarks.

Let's do 2012 in the best raw way we can!
