I like to make tabbuleh with quinoa in place of bulgar wheat. I don't really follow a recipe, but I'll estimate the proportions. I like a lot of flavor so feel free to add or subtract.

2 cups cooked quinoa (for extra flavor, cook in low-sodium vegetable broth or add herbs to water)
1 cucumber, diced
1 large tomato, diced
1/2 red onion, diced
1-3 garlic cloves, finely minced
juice of 2-3 lemons plus a little zest
olive oil (optional)
handful of chopped flat leaf parsley
handful of chopped mint
salt
black pepper

Toss all ingredients together. If it can sit overnight, the quinoa really absorbs the flavor (but wait to add the tomatoes as they will get gross if left overnight).

 Pounds lost: 7.0

BAKED OATMEAL 35O DEGREES F. 30-35 minutes

2 cups rolled oats
1/3 cup of brown sugar
1 1/2 teaspoons baking soda
1 teaspoon salt

1 cup of skim milk
2 egg whites
2 T olive oil
1 teaspoon vanilla

1/2 cup of dried fruit (your choice)

combine dry ingredients in bowl, stir
add wet ingredients in another bowl, stir

Add dried fruit to either bowl

Add wet to dry stir well and pour into greased baking dish. I used a 9X9 pyrex
bake until toothpick poked into center comes out clean

Cut in half, then slice in opposite direction about 1 1/4 "so you have two rolls of seven=14 servings

I live in the EST, posted for need of challenge leaders.
