I have another suggestion for brownies that are gluten-free and low-glycemic. Take a standard brownie recipe (from scratch), use normal amounts of everything except buckwheat flour for wheat flour and Xylitol for sugar. Add lots of nuts. Works great for me. Xylitol is expensive but that way brownies are a rare and truly special treat. Birgit
